What have you eaten today? (Low carb forum)

Hi everyone. I do hope you have all had a great Christmas and I wish you all a Very Happy and Healthy 2023. I've had a chest infection again, got over that and went down with Bronchitis so have had to spend Christmas alone because of being infectious. Hey ho! It can only get better. Have not been testing but will have to get my act together and sort myself out. Take care all
What a shame, Rosemary. Hope you are feeling better soon.

Roadways food -
B: smoked salmon and scrambled eggs. 1 slice schneiderbrot
L/D : the usual Turkey. ( crown this year as I’m cooking in an aga and not really used to it) cauli cheese, bacon roll ups and mixed greens.
Just had a DGF mince pie & cream.
Plenty of booze all day.
 
Today had been a very back end loaded day, to the extent I may not need anything much tomorrow.

brekkers: Greek yoghurt with a few frozen strawberries. There is a reason they had been gathering “dust“ in the freezer. Memo to self, only consider these edible if eaten frozen, coated in extra thick double cream.

Aperitif: Fine sherry from aforementioned champagne flute

No lunch, but dinner around 4pm: Magnificent roast beef, swede with white pepper and soured cream, carrots and a very crispy roast potato. No dessert.

Nothing thereafter, except a modest Cognac nightcap.
 
Bacon and a two egg and cheese omelette, fried tomatoes and mushrooms for breakfast.
Baked King Island Crayfish with thin slices of lemon on it, garlic prawns all done in alfoil on the bbq, mixed salad of various lettuce leafs, tomato, hard boiled eggs, beetroot, tinned asparagus, red and green capsicum, Varous stone fruits amd some L/L sorbet for lunch.
Leftover salad with sandcrab meat and fresh prawns for supper at six.

Had a fair few single malts through the day, I got a couple of bottles from Santa which I will save for later.
 
I hope everyone has had a lovely day, I started the day with my usual breakfast, then Xmas lunch out.
I ate all the low carb stuff and half of the portions provided of Yorkshire pudding, roast potatoes and cauliflower cheese followed by half a portion of Xmas pud and custard (I’d forgotten to take my DGF Xmas pud :wideyed:)
First Xmas wearing a libre and I was happy with the results considering I ate more carbs in one meal than I‘ve had since diagnosis.
Then had a small low carb tea of cold meat salad and a DGF mince pie :)
So the Libre graph shows my usual small blip at breakfast, followed by a spike for the ‘more carb than ever’ lunch, then a levelling off during the evening while my carb intake was minimal.

No breakfast
About 11:30 ate a keto bar I had been given in my stocking
About 2 p.m. roast turkey, couple pigs in blankets, various veg. Worst carb wise was the bread sauce. Didn't have potatoes or stuffing.
About 6 pm. 2 small mouthfuls Xmas pudding with cream
About 8 small cheeses and 3 seedy crackers

Did have About 4 sweets throughout the day
1 watered down wine and 1 brandy with soda

Stuffed all day, and no exercise. Could have been a lot worse. Enjoyed the family, which is the main point
 
Have fun and enjoy the meal but more, enjoy the company.
Good luck for the drive, it sounds like the destination will be well worth it with good company and good food.
I didn't like the drive one bit, but it was very much worth it!
So nice to finally have christmas with family again after two covid years. :joyful:
Very odd to see my cousins youngest suddenly grown into a very nice teenager, deep voice and all.
Their oldest has changed into a grown up at almost 18 years old, and just as nice as his younger brother.
I’ll be interested to hear what your uncle cooks.

I have no idea how my 80 year old uncle manages to do this every year, I think it's absolutely amazing!
Completely relaxed in the open kitchen too, chatting away with everyone while getting all dishes ready at the right time.

First starter: Very traditional christmas thing, real hot in the seventies and still a part of our christmas dinner every year.
Puff pastry filled with a ragoût, chicken this year.
Filling plus a bite from the pastry for me, rest of the pastry for my dogs.
Family completely fine with this, they've seen me struggle with my diabetes before. :)

Second starter (made by cousin) we had to assemble ourselves to accomodate personal preference.
Very thinly sliced stewed pears, a variation on another christmas classic. I don't know if this is a thing in the UK, but you stew special stewing pears with portwine. Usually they are served whole with the main dish but somethimes they're used in desserts.

This pear 'carpaccio' was perfect for me, the thin slices meant not too many carbs. :)
Came with a balsamic dressing, arugola, blue cheese and walnuts.

OK, here goes:
- Broccoli.
- Peas.
- Green beans.
- White wine sauce to go with the veggies.
- Salad with egg, salmon, cherry tomatoes, avocado, feta, arugola, assembled by yours truly under direction of my uncle.
- A Thai diced potato and peas dish, very nice, had a single dice and some peas.
- Thinly sliced potatoes, had a single slice.
- A sauerkraut dish. Very tasty, and the dish I blame for going slightly higher than expected. Who would expect dates and cranberries in their sauerkraut!
- Pumpkin purée. Yuck! I tried it because my cousin called out how good it tasted. Confirmed I really dislike pumpkins so strongly that I involuntarily made a rather rude face upon tasting, which everyone thought was hilarious. :hilarious:
- Red onions, yum!
- More pears, some cooked with portwine and some with water, giving them a very pretty red and white look. Didn't have them.
- Snow peas.
- Chicory and cheese casserole, had a lot of that! :hungry:
- Leg of lamb.
- Rollade. (A rolled up cut of pork. In this case the pork was local wild boar.)
- Red wine sauce to go with the meat.
- Celeriac and potato mash.
- Stewed mushrooms

Everything (except for the pumpkin :stop:) was delicious, and it was very easy to keep the carbs down to a sensible amount (except for the sauerkraut surprise.) :joyful:

Dessert:
A white chocolate pudding with a layer of raspberry jelly in the middle, sprayed with golden glitter spray and sprinkled with pink sugar.
This one made by my cousin again.
I had two raspberries and two small bites, very good pudding! :hungry:

I've been keeping a food diary since I was diagnosed but didn't even attempt to record what I ate yesterday (I'm in the southern hemisphere so yesterday was Christmas day for me).

For breakfast I had all-bran and strawberries, so nothing unusual really except the strawberries
We had a simple, for my family, lunch yesterday. From recollection I had lots of ham, chicken, potato salad, a salad with tomato, lemon juice, avocado and mango in it (I think it was the mango that spiked my BGL slightly), a few different cheeses, 6 cherries and a plum for dessert and that's about it. It was simple but nice.
Dinner was the same as lunch but without the avo/mango salad and I didn't get the BGL spike which is why I think it was that which caused the lunch spike. Lunch for me normally hardly makes a bump on my graph
 
Ended up with just the one meal yesterday - the frittata. By the time the pork was ready, I had gone beyond the point of wanting to eat. I did have a small piece of the very good crackling but that was enough to make my stomach shut down and refuse anything more. Just as well I hadn't bothered to do any vegetables.

Went to bed at 9.30 pm so, of course, I had to get up again about 12.30. Pain relief eventually allowed me to go back to bed about 3 am until 6.30. Not sure if I will eat anything today - stomach says it had enough yesterday to do for 2 days at least. BG started high and rose to 14.2. Took insulin to try to bring it down to 7.9 so far.

I didn't like the drive one bit, but it was very much worth it!

What a wonderful spread your uncle and cousin put before you, Antje. So good that you could all get together again after the long break.
 
Happy Boxing Day everyone! Todays menu .... roughly the same as yesterday cos it's the leftovers minus the roasties. Not sure about teatime. I'm not doing anything so hopefully won't want to eat. I have to take myself in hand and stop feeling sorry for myself!! Hope you all had a great Christmas Day.

Fillet Steak, Butter, Mushrooms and 1 big shallot. Pan Fried.
 
@Antje77 what a feast! And what a super chap your uncle is. I’m going to have to try a version of the pear/ walnut/blue cheese and rocket salad. It’s exactly the sort of meal I love.

Today started well food wise, scrambled eggs on schneiderbrot toast.
Midday-ish some cold turkey and M&S crackers and cheese
All went downhill after a lovely afternoon dog walk and meeting up with Paul in the local pub. Too many gin&sodas so now trying to create a cold buffet for everyone while I actually just want to snooze on the sofa. I have cold turkey, ham and a pork leg roasting. Along with various salad and pickles. Baked potatoes for the others. Paul has opened the bubbly so there’s no hope for me now. Today will probably be a write off!
 
Large hotel breakfast again - omelette with ham, onion and cheese, with a side of bacon and sausage followed by smoked salmon and cream cheese. Set me up nicely for a canal walk in the sun.

Walk was followed by an 85% hot chocolate (with whip) at Hotel Chocolat.

Dinner was an anti-pasto selection of Parma ham and 2 types of salami.

Major fail today.
My son had asked for a carrot cake for his birthday and it's so long since I last made one that I used the wrong recipe and wasn't sure it had worked, so I cooked 2/3 in one tin and a 1/3 in another so I could try it before icing.
So I tried it, and tasted it, and tried a bit more. Cooked it a bit longer then tasted and tested again, and again, and again.
I'm not going to say how much disappeared but I'm still feeling bloated and sick 8 hours later.
Drawing a veil over today, and just hoping Santa brings my low carb motivation and habits back soon.

No meals today to report.

Been lazy all day. 2 or 3 small jobs done, but other than that, I've been dozing in my chair and seeing if there's anything worth watching on TV. I did slice up the cold pork from yesterday and put most of it in little plastic boxes of one serving with some of the gravy. Also made some pastry for mince pies (in case anyone calls and needs a cup of tea) and made some more mincemeat - lots more cranberries in this batch and some stem ginger amongst other fruits. I didn't go as far as making the mince pies. I'll leave that for tomorrow when I might have a bit more get-up-and-go. For today, it's got-up-and-went.

Em and Alistair just popped in to say thankyou for their presents. Em seems to like her necklace and, if I know Alistair, his cash will disappear into the maw of household finances. That's OK if that's his choice.
 
Thursday 22 December bed 7.8 FBG 8.1. We're still not great but at least I've improved enough to do things. It's just this cough, it's exhausting. Most of today was taken up at the dentist and I have my new bridge. 1 hr in the chair and 1.75hrs round trip. Multiple visits for Hubby and myself plus new bridge & treatment £500. I thought it was pretty good (and I had budgeted for more so it was a pleasant surprise.

B. TAG and 2 slices of SLC toast with ox tongue and whipped cheese

L. Nothing

D. Stuck with the SLC sandwich rare roast brisket, shredded lettuce and mustard. CC little chocolate pot and a DGF Christmas pie.

Friday 23 December bed 6.8 FBG 7.3. The day of my large Christmas supermarket delivery. Spent the day tidying the fridge and freezer and cleaning. It was to try to get almost everything done that I'd tried and failed to do earlier this week. BGs have dropped so I must be getting better

B TAG and a bit crustless quiche

L. Nothing

D. Spicy rack of ribs. DGF Christmas pie with a dash of cream.

Deliveries at this time of year can be amusing but I had some classics this year.

Cranberry sauce or cranberries? Nope, Redcurrants!

GF pretzels? Nope, Not GF onion flatbreads

Carrots? Nope, frozen cauliflower cheese!

Turkey gravy? Wait for it - Turkey gravy flavoured crisps!! Even I couldn't make gravy from that.

There were others but they were reasonably sensible and I thought the Turkey Gravy crisps were the funniest, until I unpacked my Christmas Pudding. Yes, that us my hand it is sitting on. suitable for maybe 2 tiny people!

Early afternoon a slice of low carb bread with ham.
Feeling pretty much like a wet dishcloth (Dutch idiom, you'll get the gist) so I thought to do a self test because I was going for my annual bloods tomorrow.

Looks like I can sleep in tomorrow and the days after. :grumpy:

Not hungry so I told myself to at least eat two crackers for my evening meal, one with Turkish sausage, one with two different cheeses, which I managed but they're not sitting too well.
Will try some chicory with hummus or chocolate in bed.
