Congratulations on the HbA1c! Your omelette has reminded me of an omelette version I haven't made in years - a souffle omelette. I must store that thought as they were quite delicious.

It was the exterior of @Rachox omelette that made me think about it. Crisp outside and light as a feather interior. I made both savoury and sweet. Since I have SRSLY LC jam, sweet could be a possibility! I can just about taste it. I'm feeling very retro.Soufflé omelette! I haven’t made it for years either. I keep forgetting about the LC fruit loaf at the bottom of my freezer - thanks for reminding meKefir before heading out for yoga
Lunchtime one egg and large mushroom fried in olive oil served with LC toast followed by 20g of mixed nuts and hm rhubarb and spoon of yoghurt
Mid pm slice of LC toasted fruit loaf
Dinner salmon in lemon butter and local asparagus with glass of dry white wine followed by LC coffee and walnut cake.
I’m the same with repeating meals, so every now and then I go back to DD. They have so many good recipes I just forget about.
I also love that SLC fruit loaf but daren’t buy it again, it lasted all of 2 days before. Even with freezing, it toasts so quickly I can’t be trusted.
OK, what is a soufflé omelette? Do I want it?
No food to share so far today, very odd day where everything went different than planned.
Had two bites of an apple to prevent a hypo duriring swimming this morning, and a couple of winegums tonight because I completely misjudged the amount of insulin for my beer.
And now it's so late that I don't feel like cooking anymore so I guess It'll be a lot of midnight snacks consisting of nuts, chicory leaves with hummus, and pork scratchings with aioli. Perhaps a piece of 85% chocolate as well.
An optimist could call it OMAD, so that's what I'll do!
Where can I get this magical loaf pls? Is it just online?
I'll definitely give making an omelette this way a try!Are you ok Antje? It does sound like an odd day, and odd days are so much more difficult when insulin is in the mix.
Soufflé omelette is just where you separate the eggs first, then whisk the whites until they are fluffy, then fold them back into the yolks. Cook it like a regular omelette but don’t stir, so it stays light and puffy.
Hope the midnight snacks are kicking in.

And yes, I'm fine, just puzzled by the reduced amount of insulin I seem to need, this has been going on for two weeks or so. Usually I'm completely fine with eating whenever I fancy, my basal keeps me steady.
Today I've been wondering if the reduced need for insulin may have something to do with my starting to (erratically) taking ibuprofen for my back. It helps a lot with my back, which suggests it is indeed some form of inflammation, and if it is, the ibuprofen reducing inflammation could be reducing my insulin needs (I've been reducing my basal as well). I'll do some note taking to see if I can find a pattern between ibuprofen and insulin use.
By now I've eaten pistachios (a lot, yum!), and the other planned OMAD type midnight snacks will follow shortly, but I've also dropped to 4.2 again so I won't inject for the hummus or cashews, and I'll keep a pot of honey (courtesy of my cousin's bees) next to my bed and all will be well!
