What have you eaten today? (Low carb forum)

Thursday 20 April bed 7.4 FBG 7.4. Have a wonderful holiday, @PenguinMum. Early start today, as son &DIL were off on a coach trip with her parents. Boys were at mine for 7.20am, so I was up and about very early to get showered, dressed, coffee, etc, before the tsunami hit! At least we got a bit more of eldest's homework done before school.

B. Eventually! TAG and 2 slices of Ayrshire Middle, 1 fried egg, 4 santini tomatoes, 1 slices of SRSLY toast with butter, and a Benecol dairy free.

L. Nothing

D. We all had the braised featherblade, turned into a steak pie this time for the boys/hubby. Served with broccoli/peas. For the rest of them, puff pastry (GF for eldest) and mashed potatoes.

CC little chocolate pot and raspberries - 6 of them.

This featherblade recipe works every time.
 
Coffee and cream
Coffee and unsweetened almond milk
Veal liver x 2 and tomatoes
Nuts 40g

Congratulations on the HbA1c! Your omelette has reminded me of an omelette version I haven't made in years - a souffle omelette. I must store that thought as they were quite delicious.

Soufflé omelette! I haven’t made it for years either. I’m also going to bank that thought for a ‘what shall I have?’ Type of day
 
Kefir before heading out for yoga
Lunchtime one egg and large mushroom fried in olive oil served with LC toast followed by 20g of mixed nuts and hm rhubarb and spoon of yoghurt
Mid pm slice of LC toasted fruit loaf
Dinner salmon in lemon butter and local asparagus with glass of dry white wine followed by LC coffee and walnut cake.
 
@RosemaryJackson goodness that month has shot by, your evening reading was pretty good I reckon.
@Rachox congratulations! How many years in remission now?

Todays food:
B- cheesy scrambled eggs with spinach.
L-Tuna salad, mixed leaves, h/b egg, avocado, sunflower seeds and oo/ACV dressing. Followed by DGF cake.
D- local hake, landed this morning. It was superb. I thought I’d cracked the crispy skin but it was only crispy round the edges. @maglil55 please remind me again how you do it. Served with lemon butter and parsley sauce on purple sprouting broccoli. Couple of glasses dry white wine, feeling very holidayish. Which reminds me- happy hols @PenguinMum - looking forward to hearing about the lovely Spanish food. IMG_2317.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: a LC roll with salmon and cream cheese, coleslaw and baby yellow tomatoes followed by DGF crimbo crumble with cream.

It was the exterior of @Rachox omelette that made me think about it. Crisp outside and light as a feather interior. I made both savoury and sweet. Since I have SRSLY LC jam, sweet could be a possibility! I can just about taste it. I'm feeling very retro.

My mum used to make a fabulous sweet soufflé omelette back in the 70s. It was filled with banana and rum sauce. Not very low carb so I won’t mention it.
 
OK, what is a soufflé omelette? Do I want it?

No food to share so far today, very odd day where everything went different than planned.
Had two bites of an apple to prevent a hypo duriring swimming this morning, and a couple of winegums tonight because I completely misjudged the amount of insulin for my beer.
And now it's so late that I don't feel like cooking anymore so I guess It'll be a lot of midnight snacks consisting of nuts, chicory leaves with hummus, and pork scratchings with aioli. Perhaps a piece of 85% chocolate as well.

An optimist could call it OMAD, so that's what I'll do!

Greek yoghurt with blueberries

Lunch
Tuna and mayo stuffed inside a wholewheat pitta bread

Dinner
Red Thai curry with salmon, mushrooms, baby sweetcorn and mange tout (with a little coconut rice)

Snacks
Fish sticks and nuts

I keep forgetting about the LC fruit loaf at the bottom of my freezer - thanks for reminding me :happy: I must have some soon - I really prefer it to the buns
 
I’m the same with repeating meals, so every now and then I go back to DD. They have so many good recipes I just forget about.
I also love that SLC fruit loaf but daren’t buy it again, it lasted all of 2 days before. Even with freezing, it toasts so quickly I can’t be trusted.

Where can I get this magical loaf pls? Is it just online?

Are you ok Antje? It does sound like an odd day, and odd days are so much more difficult when insulin is in the mix.
Soufflé omelette is just where you separate the eggs first, then whisk the whites until they are fluffy, then fold them back into the yolks. Cook it like a regular omelette but don’t stir, so it stays light and puffy.
Hope the midnight snacks are kicking in.

I'll definitely give making an omelette this way a try!

And yes, I'm fine, just puzzled by the reduced amount of insulin I seem to need, this has been going on for two weeks or so. Usually I'm completely fine with eating whenever I fancy, my basal keeps me steady.
Today I've been wondering if the reduced need for insulin may have something to do with my starting to (erratically) taking ibuprofen for my back. It helps a lot with my back, which suggests it is indeed some form of inflammation, and if it is, the ibuprofen reducing inflammation could be reducing my insulin needs (I've been reducing my basal as well). I'll do some note taking to see if I can find a pattern between ibuprofen and insulin use.

By now I've eaten pistachios (a lot, yum!), and the other planned OMAD type midnight snacks will follow shortly, but I've also dropped to 4.2 again so I won't inject for the hummus or cashews, and I'll keep a pot of honey (courtesy of my cousin's bees) next to my bed and all will be well! :joyful:

Glad you’re ok. Honey from your cousins bees! What a wonderful way to counteract a hypo. I hope you won’t need it though.
The ibruprofen theory is interesting and makes a lot of sense. What’s caused the back pain? ( I should look on the parallel chat thread probably you’ve talked about it more there?)
 
Afternoon all. Not yet back on track. Had a really bad night and am really tired and weepy. Just feel like picking today. Still havent made the soup! Havent the inclination to do anything atm. Note to self....pull your silly self together. To keep to the thread, have had a cheese sandwich and a few Cadburys buttons. And a coffee with cream.
