This sounds good. Thank you for the tip.I find it's all in the way you prep it. I hate cauli rice if it's cooked plain in the microwave. I fry it with a bit of butter and make sure I add seasoning that goes with the meal. Then it's lovely.

These are Italian stuffed rice balls, but I use cauliflower rice. Mozzarella always goes in, and then it varies. Pancetta? Mushroom? They are coated and deep-fried.I do like cauliflower, tho to date I’ve generally eaten it as cauli cheese. Not sure about having it as rice but I’ll give it a go.

This site has loads of variations on cauliflower rice. Pilau goes great with curries. This week, I've used cauliflower rice to make a risotto, and tonight, I made a Thai sticky rice. I find with the spicing, etc, it takes on the flavours and doesn't taste like cauliflower. I would add that when you have liquid going in, cauliflower rice needs a lot less than cooking with actual rice.

@ravensmitten , sometimes life gets in the way, please don't beat yourself up about it.
Just return to a more sensible way of eating but don't see it as a failure if it doesn't always work out.
Losing people is hard, and more so if they are young. And sometimes things like this don't leave enough room to stay on track with our own choices for a bit, which is fine.
And wonderful to hear that the CPAP improves things so much, what a wonderful result!

Boil cauliflower until soft.
Drain and leave for a minute to lose more moisture.
Add knob of butter and generous scoop of cream cheese or crème fraîche (whichever you happen to have in the fridge and needs to be used).
Spice it up. I'm lazy and usually use a herbs stock cube, which salts as well as spices it. Sometimes I add nutmeg or mace.
Use stick mixer and mix until very smooth.

This is the one I use. I must confess I do use more butter and cream than the recipe says, but it's a matter of taste. After the first 6 mins of microwaving, I give it a whizz with a stick blender. You won't get it smooth until after the second blast.I need to try this, any tips?
