What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: the second half of yesterday‘s LC pizza with coleslaw.

I do like cauliflower, tho to date I’ve generally eaten it as cauli cheese. Not sure about having it as rice but I’ll give it a go.
There's all sorts of permutations with cauliflower. I use it to make mash, I have turned it into suppli ( otherwise known as arancini) before. These are Italian stuffed rice balls, but I use cauliflower rice. Mozzarella always goes in, and then it varies. Pancetta? Mushroom? They are coated and deep-fried.

This site has loads of variations on cauliflower rice. Pilau goes great with curries. This week, I've used cauliflower rice to make a risotto, and tonight, I made a Thai sticky rice. I find with the spicing, etc, it takes on the flavours and doesn't taste like cauliflower. I would add that when you have liquid going in, cauliflower rice needs a lot less than cooking with actual rice.


@Antje77 has dared me to try a rice pudding with cauliflower rice, and I will give it a go soon.

@ravensmitten , sometimes life gets in the way, please don't beat yourself up about it.
Just return to a more sensible way of eating but don't see it as a failure if it doesn't always work out.

Losing people is hard, and more so if they are young. And sometimes things like this don't leave enough room to stay on track with our own choices for a bit, which is fine.

And wonderful to hear that the CPAP improves things so much, what a wonderful result!

Def not spiralled too far out of control and harming myself in the process is never the answer to these things.

Horrible having to wear the mask at night by my goodness, I am not feeling wretched all the time and seem to have some focus back. (was stopping breathing 130 times an hour every night so never actually having any restorative sleep.) so I'll take it.

No picture because it didn't last that long but 2 chicken breasts in paprika/tomato sauce with some cucumber for dinner.
couple of seasoned boiled eggs earlier and lots of spinach.
only just had a coffee which probably wasn't the wisest at 8pm, but hey... living on the edge! rock on!

I often eat cauliflower mash, my recipe is:

Boil cauliflower until soft.
Drain and leave for a minute to lose more moisture.
Add knob of butter and generous scoop of cream cheese or crème fraîche (whichever you happen to have in the fridge and needs to be used).
Spice it up. I'm lazy and usually use a herbs stock cube, which salts as well as spices it. Sometimes I add nutmeg or mace.
Use stick mixer and mix until very smooth.

When making mash I put a couple of garlic cloves in while it cooks. Then when mashing I add plenty of butter, salt pepper and I also add a bit of horseradish.

Today we said goodbye to Goonergal with tears and smiles. Breakfast out with a couple of forum friends was a mushroom and cheese omelette.
Lunch at the funeral reception fully catered for keto - so very thoughtful. Salad with ham cheese egg and coleslaw.
Dinner in a pub - steak, coleslaw and red wine, then shared some goodies from https://ketokitchenlytham.co.uk bought along by one of the group. Millionaires shortbread and chocolate brownies. Both delicious I preferred them to the DGF cakes. IMG_2366.jpg

That sounds like a perfect goodbye for a friend who left way too early.
I'm thankful I was able to follow the official part through livestream, and very glad to hear about the other parts. Meeting up with friends is an important part of saying goodbye.

I had the same as yesterday, burger on almond meal bun and a side salad.
Today I made the bun with a duck egg, yesterday it was a turkey egg, both taste well. :)
One of the turkeys and one of the ducks are sharing eggs (duck, turkey and chicken eggs): the duck sits on them in the morning, the turkey in the afternoon.
Should this work out in any way (which I don't expect), I think we'll have a bunch of very confused little birds!
 
Breakfast: RyVita and cream cheese again. Couldn't be bothered even to cook eggs.

2nd meal should be Kerelan chicken with cauliflower rice. Trying to motivate myself right now but feeling very lazy. Maybe because I had to take extra pain killers today and it is making me a bit lethargic and a bit "hungover" (if hungover feels like this).
 
Friday 28 April - bed & FBG both 7.1. Last full day before DIL'S parents return to the USA, so it was very hectic. Son & I had to get to Costco first to pick up youngest's early birthday cake, plus a few other odds & sods. I've never tackled Costco that quickly before, and they'd moved everything!! We'll have to go back on Monday. They were all going to the cinema, so I had to negotiate road works/closures, get stuff dropped off, then get everyone back to the cinema. Did it with 2 mins to spare. Like @Antje77 , I thankfully got home in time to watch the live stream of Goonergal's service. I'd passed Hotel Chocolat on the way back, and they had an advert for that whip she so enjoyed outside. It was a lovely service.

B. TAG and another DD Croque madam. Benecol dairy free.

L. 8 almonds and a CC little chocolate pot (the sight of the HC whip drove me to it!)

D. Thai Red curry duck breast with coconut sticky rice made with cauliflower. I used a BBC Good Food recipe, which I adapted to lower the carb count.

The major change was substituting cauliflower rice. I also only used about 1/2 a pineapple ring, which I cut into tiny pieces.

Just back from a few days away attending the sad event of a wonderful special friends funeral she will be so missed but found comfort with other friends and some lovely meals together reminiscing and preserving those lovely memories. Just a few highlight of my meals over last few days

On my journey on Thursday
lunch was an appropriate Five Guys cheese burger in a lettuce wrap

Dinner was a wonderful kebab with mixed meat - lamb, steak, chicken and chorizo at Ego - very impressed with their help in making sure it was all low carb and excellent food.

Friday at the funeral was a first with a keto buffet especially for us low carbers it was wonderful and a fitting tribute too it could not have been improved.

today now home about to cook salmon in lemon butter and some local asparagus to serve with it - there may also be a glass of chilled dry white wine involved.
Will read through replies this evening and catch up later and be back to normal posting tommorow.
