There's all sorts of permutations with cauliflower. I use it to make mash, I have turned it into suppli ( otherwise known as arancini) before. These are Italian stuffed rice balls, but I use cauliflower rice. Mozzarella always goes in, and then it varies. Pancetta? Mushroom? They are coated and deep-fried.
This site has loads of variations on cauliflower rice. Pilau goes great with curries. This week, I've used cauliflower rice to make a risotto, and tonight, I made a Thai sticky rice. I find with the spicing, etc, it takes on the flavours and doesn't taste like cauliflower. I would add that when you have liquid going in, cauliflower rice needs a lot less than cooking with actual rice.
