What have you eaten today? (Low carb forum)

Only mint tea until lunchtime. Exercise class.

L: small piece quiche with salsa Verde and coleslaw. Cheeses. Few pecans. Cwc

Very frustrating afternoon trying to deal with utility companies

D: lettuce and cucumber topped with garlic mayo, salsa Verde and 2 rashers crispy good bacon. Few pecans (must put the packet away, too easy when left o the side). Cc choclate pot with 2 teaspoons cream
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with a grinding or two of black pepper.
Water to swallow tablets, followed by espresso.

L: Tuna steaks rolled in chopped celery and oregano, baked with sweet peppers and aubergines, moistened with cream and topped with grated Cheddar cheese. Salad made with watercress, cherry tomatoes, sweet cicely, garlic, radishes, salad onions and black olives, dressed with an olive oil, mint and balsamic vinaigrette.
Skipped pudding,
Water to drink.

D Seafood salad made with king prawns and mussels, lettuce, celery, Romano peppers and salad onions dressed with olive oil plus a touch of lemon juice, lemon verbena and garlic, topped with toasted pumpkin seeds.
Water to swallow tablets.
 
Sunday 11 June bed 7.8 FBG 7.9. No swimming today as the youngest still has a bad cough. Let me get on with some much needed cleaning. My much improved vision has me noticing things that I didn't before. When should I inform Hubby that the house WILL be decorated?

B. 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free and usual TAG.

L. Nothing - Cleaning disturbed as grandson needed to go to the pet store for Guinea supplies.

D. Campari and soda. A new recipe. Tuscan chicken. I've added it to my CMT. There's a slow cooked and an IP version. I used chicken breasts. I thought I'd photographed it but couldn't find it. Took a copy of their photo. Very nice.. served with a mix of mushroom, green beans, and sprouts.

Monday 12 June bed 7.3 FBG 7.8. Great results @Annb. Well done. Another Aquafit class this morning. Very energetic too! The day just flew by.

B. TAG and a slice of SRSLY bread with a cheese triangle. Benecol dairy free. I was a bit pushed for time between school runs and getting to Aqua.

L. A bit of crustless quiche.

D. A M&S wagu burger with mustard and jarlsburg. Lettuce, tomatoes, cucumber, coleslaw, mayo, all on a SRSLY seeded roll. Moretti Zero. CC Little chocolate pot with raspberries. 20230612_185713.jpg
 
Morning all. My day didn't go as planned! A very mixed up day with me eating anything I fancied in spite of being good at Pensioners lunch. So my readings were up and my mood went down. But it was my own fault. So today will be as near carb free as possible. I have turkey, ham, salad, mackerel pate and coleslaw. Just need to find some will power. Have a great day folks. Enjoy the sunshine. :joyful:
 
B-cheese omelette with kimchi.
L- h/m scotch egg, airfried. The crumb was made from blitzed pork scratchings and flaxseed. A DGF cookie to follow.
D- the liver from Sunday’s chicken, fried in butter, on Livlife toast. Then a couple of tuna nuggets. I saw this recipe on one of those annoying reels that pop up on fB. The whole thing took less than 5 mins to put together. Mix 1 tin tuna with an egg, grated cheese ( couple of handfuls) and some chilli. Shape into nuggets and airfry about 10 mins. So quick and easy. Another scorcher in prospect here, so made ceviche to avoid unwanted heat in my kitchen.

B: Two poached eggs topped with a knob of butter, slices of avocado and Caerphilly, seasoned with a grinding or two of black pepper.
Water to swallow tablets, followed by espresso.

L: Ceviche made in advance using haddock fillets cured with lime juice, zest and salad onions, then combined with tomatoes, green chillies, cucumber, black and green olives, chopped coriander and olive oil. Salad made with watercress, lettuce, cherry tomatoes, radishes, Romano peppers, salad onions and black olives, topped with toasted almonds and dressed with an olive oil, oregano, garlic and balsamic vinaigrette.
Raspberries with Greek-style full fat yoghurt.
Water to drink.

D: Seafood salad made with brown shrimps, king prawns, lettuce, fennel fronds, celery, cherry tomatoes and mustard cress, topped with toasted pumpkin seeds, with a dollop of homemade aioli sauce for dipping.
Water to swallow tablets.

D: out with friends at Indian. 1 poppadom, mixed grill of lamb chops, chicken and paneer. 1 glass white wine and soda.

When home Montezumas Black cherry chocolate, only 4 sqs, must resist the rest
 
Morning all. I was very good yesterday and my readings proved it! I had fried egg, tomtoes, mushrooms and 2 slices of ham and pork fried in butter. For tea, 3 small crackers with Red Leicester cheese on plus1 tomato. Today I have Better Naked sausages (very low carb) with broccoli and cauli. Plus bone broth gravy. My kitchen is cool so it doesn't bother me when the weather is so hot. Maybe some salad for tea. Have a god day folks. :joyful:
 
Problems getting shopping this week - the car is still in the garage (no news on that yet), Alistair is using his at present and Neil is suffering the effects of this chesty cold, so doesn't feel like going on the bus to town and lugging back a load of shopping. A taxi would cost about £50 for the round trip, so that isn't on. Tried to get a delivery slot from Tesco - thought I had one, in fact, but got that wrong. The first I can get is for next Saturday so I've gone for that. We've run out of yoghurt and are going to run out of milk by Saturday. I have some eggs, so will have to make them last - not even sure that Tesco will deliver eggs anyway, they didn't last time. I'm surprised these days by the amount of fresh food that Tesco doesn't have available. Every 2nd request, it seems is "currently not available".

In any case, breakfast is going to be eggs - scrambled, I think.

2nd meal is going to be lamb tagine.

There's loads of stuff in the freezer anyway, so I won't go short of food - just maybe not what I wanted.
 
Hey Ann that is magnificent. I am already in awe of how you manage your aches and :) pains but this is really fab. So happy for you.

Brekkie ususal slice LC toast good butter& copious tea.
Lunch was egg mayo on little gem leaves.
Supper was bbq meat, 2 sausages, 1 beef burger and thin slice of chicken with side salad & Stokes tom ketchup (not much) on the burger. Discovered on hols on Suffolk and love the ketchup & mayo.

Late lunch excellent roast at a pub who were brilliant with swaps for roasties & Yorkie into extra veg and kindly added a side portion of cauli cheese.
Is " Good Butter " the same as " Best Butter " that was a term used when I was growing up :)
 
Breakfast kefir and hemp seeds before heading off to pick up youngest son's dog as we are sharing dog care while they are on their three weeks honeymoon. Went early to beat traffic and heat. Lovely to have him here for a bit. He's a very sweet tempered poodle.
Lunch one LC roll with ham, boiled egg and mustard followed by my quick frozen raspberry yoghurt and a few squares of 100% chocolate

Cooked a roast chicken yesterday so ate some cold with half a sausage, small beetroot, salad with mixed leaves, radish and cucumber and some marinated artichokes with glass of red wine followed by LC cake and decaffeinated coffee.
I've tried kefir but can't get to grips with it .I was hoping that I could use it instead of sauerkraut as a probiotic .
