What have you eaten today? (Low carb forum)

@shelley262 seeing your grated cheese crisps reminded me of a pizza crisp idea I saw online - it’s the same little piles of cheese with a slice of salami/chorizo on top and all microwaved together.
Todays food:
B- v decadent scrambled eggs, smoked salmon and asparagus.
L- tin of mackerel in olive oil with salad and ACV dressing @PenguinMum I’m out of the ACV with mother too, can only get the Aspall one locally and it’s really sharp in comparison. Good to hear about your decreasing waistline. @Annb well done on your weight loss too. DGF brownie to follow.
D- granddaughters round but I hadn’t any tea for them so they had my portion of meatballs between them with pasta, and while I was trying to figure out what I could have I nibbled on so much stuff. Mostly Nuts & cheese, finished with Edam toast and pate so I didn’t really need a ‘dinner’. I’m annoyed with myself for such undisciplined eating though. I shall forgo my evening glass of wine in forfeit.
 
Tuesday 13 June bed 7.8 FBG 7.7. I was absolutely crippled today. A very energetic Aqua class combined with deep cleaning led to my legs deciding enough was enough. I couldn't even work on them the pins & needles were so bad. Hubby had to take over.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. A few almonds

D. A salad of prawn cocktail, lettuce, mini santini, cucumber, and avocado. CC Little chocolate pot.

Wednesday 14 June bed 7.7 FBG 7.8 & Thursday 15 June bed 7.5 FBG 7.7. I can do both together as the food was identical.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. A bit of crustless quiche

D. A salad of cooked chicken with lettuce, mini santini, cucumber, spring onion, boiled egg, mozzarella balls, coleslaw. CC little chocolate pot with raspberries.
I had a Moretti Zero on Wednesday but not Thursday.

Hubby was not happy, but I dragged myself to Aqua on Thursday. I could walk again, and, as I suspected, the easier class plus legs in the spa loosened the muscles!

Friday 16 June bed 6.8 FBG 7.1. Legs are a bit off again, but I'm managing. Boiler service today, so I still have cleaning to do. It was instilled from an early age that if someone was going to be entering your home, everything had to be spotless. Hubby doesn't get it. The heat, my legs, and 2 grizzling boys were not helping matters.

B. TAG and a bit of crustless quiche. Benecol dairy free.

L. 2 slices of ox tongue.

D. Bacon & tomato omelette. Moretti Zero. Not had it yet, but I will have a CC little chocolate pot later.

@Annb - enjoy the weight loss. I find that you don't "see" your own weight loss. I certainly don't. You tend to visualise yourself at the weight you were. I wasn't really conscious of my weight loss until my fellow Aqua bods started commenting on it. I also notice clothes becoming more loose.

I bought something today I noticed it on the past few weeks on our instructors neck. I thought they were headphones. They're not. It's a rechargeable neck fan, and it's great. I've been dripping sweat trying to clean and this kept me nice and cool. I can safely do my ironing without melting now!20230616_200349.jpg
 
Awake early - thanks dawn chorus!
B1: 2 hard boiled eggs, butter and salt. Cwc
B2: 2 proper biscuits leftover from yesterday. Chunk of cheese to stop the craving/hunting for unneeded food.
L: most of a tin of tuna wrapped in lettuce leaves with mayo. I hm lc ice lolly made last week from leftovers, very creamy and satisfying

D: 3 90% sausages, green beans and courgette.

Currently sipping a large Baileys (well lidls equivalent!l) not sure of carbs and don't currently care as had a really busy day and didn't want to open a bottle of wine (how's that for an excuse huh? ;)
 
Back home now so back to normal routine,
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and carb killa bar.
Dinner: chicken salad.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablets
Espresso.

L: Packed lunch made with leftover crustless quiche, lettuce, Romano peppers, celery and tomatoes dressed with an olive oil and balsamic vinaigrette. plus almonds and walnuts.
Strawberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, fennel fronds, celery, mustard cress and cherry tomatoes, dressed with olive oil and a touch of lemon juice, topped with toasted pumpkin seeds.
Water to swallow tablets.
 
Breakfast kefir with shelled hemp seeds
Lunch tried making more cheese crisps using Comte cheese but using @Antje77 s recommendation of grating cheese and worked really well.

Just had two as OH was keen to have some as well. Also had a couple of slices of Coppa ham followed by two strawberries from garden with yoghurt and 100% chocolate
Mid pm LC ginger cookie
Dinner ACV in water before meal of salmon in lemon butter with roasted asparagus and a few hm Pre Cooked and frozen new potato 'chip's and glass of dry white wine Also LC cake and decaffeinated coffee
Cooper still improving and I'm hoping sun drops soon to allow some fun outdoor time with him . Looking forward hopefully to some rain for the garden.
Comte cheese and garden fresh strawberries sounds like a great treat to me. Glad to hear Cooper is improving.
 
Cake picture, because I ordered it before my birthday (tomorrow) and I now have this cake and can't inhale half of it like I planned

Breakfast: 3 slices of bacon in a mini wrap with cup of milk
Lunch: ham and cheese roll with extra cheese and Chorizo to snack on.
Dinner: tomato pasta bake with chicken and cheese.

Ok, so I know that would be classed as a high carb day as I had it with every meal. Usually I would have had two wraps for breakfast and two rolls for lunch so I dropped one and just ate what I would have filled them with. I haven't got a diagnosis yet but my sugars have average at 14.5 for the last week and I'm just waiting on the results. Assumption is I'm type 2 but I obviously need to speak to a GP once I have the diagnosis before I drastically change my diet.

Todays food was kefir than Greek yoghurt with pomegranate seeds for brekkers. Ginagerous salad for lunch, the air fried chicken with salad and a few c. h. i. p. s for dinner.

This year, since going to Thailand at new year, I have been eating much more fruit. I always do well on it in Thailand (perhaps because it is all local, so no air miles, or walking an extra 10k a day), but the habit has lingered on return home. For reasons we know, it has been a period with emotional challenges, but it is what it is.

Anyway, yesterday I had some monitoring bloods, to check if my sodium levels have come back up. When I got there the HCP had added in my A1c, as it was due shortly. Hmmmm. Oh well. It is what it is, and I never prepare for A1cs anyway, but you know.

Anyway, the result is in today. 32. I’ll take that!

I'd be fibbing if I didn’t express relief!!

And let me be the first to wish you a happy birthday, I'm an hour ahead of the UK so it's your birthday already here at 5 past midnight!

Breakfast will be some cold meats and cheese with a couple of RyVita. Too hot for anything else. I made some chicken and mushroom soup yesterday but will just put it in the freezer.

2nd meal will be some more of the blitzed vegetables with a steak. It is close to getting too old and should have been used before this. Unfortunately when I looked for it, I couldn't find it and supposed I had put it in the freezer. I hadn't and found it yesterday in a stack of things in the fridge. Should still be OK though.
 
Morning all. Happy Birthday @lilxamz, have a great day. I didn't post yesterday but had a piece of fish from the chip shop (didn't eat ALL the batter but just a bit) for lunch. I went to a friend's funeral and after to the carb-laden wake. Absolutely nothing for me, the only salad items were thinly-sliced soggy tomato in a sandwich and some sort of limp greenery. I was hungry so I just tucked in and hoped for the best. Readings today... normal!! How come? Wait and see what happens today. Going out for lunch with my granddaughter and collecting my new Ipad and the other book from the Glucose Goddess. Hope it's not so hot today. Have a great weekend folks. :joyful:

I'd never seen anything like it either. I wore it when I was ironing today, and it was heaven! They're not that expensive. The one I got was £22.99 on Amazon. It's rechargeable and lasts 9 hours on a full charge. I was out with son this morning (in search of tomahawk steaks that were supposed to be in Lidl) and he thought they were headphones (I'd forgotten to take them off). Even he could see the logic to them.
 
Yoga first thing
11:00 found myself tucking into too many pecans so had a cold sausage and 3 slices hm lc soda bread with marmite and called it lunch.

3pm a few spoons of a coconut milk, cocoa powder and milled seed pudding thing I'd put together to use up the coconut milk

Off out to a quiz tonight. The meal is ploughman's so I'll eat the cheese and pate and rink the wine. Bread and other bits not for me will go into hubby and son
 
@maglil55 hope your legs are improving and thank you for asking about Cooper - latest news for you, and others here who have kindly sent best wishes, is that he seems very much improved he's got a couple for days of his tablets which are anti bacterial and anti inflammatory to go yet but he's full of bounce and now enjoying his food and walks.

Breakfast my usual kefir and shelled hemp seeds
Lunchtime two boiled eggs with half a new keto roll sliced and buttered. I was sent it free with a LC cake delivery as Deliciously Guilt Free are now baking rolls. Unlike others out there these are gluten free. They taste more rustic and home made than others I've bought but as I don't react to gluten I'm not sure I'd move to just these - but would probably add a pack if ordering cakes and rotis. They are being sold in packs of 6 for £6.75, are 0.6 g of carbs per roll and main ingredients are seeds,. Psyllium husk, bamboo fibre and ACV plus yoghurt and water.

Also had a couple of my garden strawberries and yoghurt plus square of 100% chocolate

Before dinner ACV in water and a handful of mixed nuts then lamb curry with LC roti. Also had a gin and soda. Just had a LC cake and decaffeinated coffee.

B: Two poached eggs and scallops topped with chopped, flat-leaf parsley and asparagus spears with a generous knob of butter, all seasoned with one or two grindings of black pepper.
Water to swallow tablets.
Espresso.

L: Tuna steaks rolled in chopped celery and oregano, baked with red peppers and aubergines, moistened with cream and topped with grated Cheddar cheese. Salad made with watercress, chicory, avocado, radishes, salad onions and black olives, dressed with an olive oil, garlic and balsamic vinaigrette and topped with macaadamia nuts roasted in butter.
Skipped pudding.
Water to drink.

D Seafood salad made with tiger prawns and mussels, lettuce, fennel, Romano peppers, celery, cherry tomatoes and salad onions, dressed with aioli for dipping and topped with toasted pumpkin seeds.
Water to swallow tablets.
