What have you eaten today? (Low carb forum)

Late breakfast of cheese crusted omelette. Filled with more cheese.
Early dinner - the usual family roast, today it was leg of lamb. I just had the meat but made veg for the others and absentmindedly ate a few raw cauli florets as I was preparing it. Lots of soda water to drink.
@maglil55 it was cost which made me ask about your testing regime. Irritatingly I can’t wear a Libre any more. I became allergic to them, each one became progressively more itchy and left a bigger and bigger red swollen lump. In the end my arm actually pushed the sensor out! I was left with a big red swelling and a big hole in the middle. I mentioned it to Abbot wondering if they’d changed the glue, they hadn’t but sent me a free one. I gave it to my daughter and haven’t dared try again.
 
How long ago have you last tried?
I have seen very few posts on Facebook lately complaining about reactions, where there were a lot in the past, so they may have changed the glue to something agreeeing with you.
 
Lovely weather but I plan my main meals ahead and today's dinner was planned when it was chillier !
Black coffee and black tea until
1.30
Small salad with kimchi and vintage cheddar( a few lettuce leaves and tomatoes from my garden followed by a few garden berries ( five) in yoghurt

Dinner slow cooked brisket of beef with sprouts and one small hm roast potato cooked in beef dripping also drink of glass of red wine followed by a few blackberries picked in forest this afternoon and more yoghurt. Also just had my usual evening treat of decaffeinated coffee with cream. OH also tempted me with one of his birthday chocolates I had a very dark looking one but it did taste way too sweet so won't be tempted again thankfully as he's got quite a lot!
@DJC3 're testing sorry to hear about your libre sensitivity I only use one every three months or so to monitor but otherwise I daily always test my fbg as although they can be off I've been doing it and recording it for 6 years and can see some trends otherwise I only test if trying out new food or feeling not 100%. I've really reduced my spend this way and very rarely stray from very low carb but would test if I did.

Oh that’s interesting! It was months ago, a year perhaps. Maybe I should try again, thanks.
 
Evening all

Today's meal plans included a late lunch at an outdoor party. We took corn cobs and a Greek salad to share.

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, garnished with flat-leaf parsley and seasoned with black pepper.
Water to swallow tablets
Espresso.

L: BBQ'd sesame tofu kebabs in a lettuce wrap.
Corn cobs with butter.
Greek salad made with red, yellow and green peppers, feta, vine tomatoes, lettuce, cucumber, Kalamata olives and oregano dressed with vinaigrette.
Water to drink.
Coffee with cream.

D: Salad using anchovy fillets, eggs, avocado, Padrón chillies, Welsh onions, thyme leaves and a touch of lemon juice, with a dollop of aioli for dipping, topped with pecan halves.
Water to swallow tablets.
 
I had a very tasty evening meal of amazing green beans bought at the roadside.
I flavoured them with a bit of fried onion, bell pepper, garlic, some black beans in chilli oil and a little black bean and garlic paste for saltiness.
Had oven baked pork belly pieces and mushroom slices marinated in more of the black bean and garlic stuff to go on top, plus a perfectly fried duck egg with the yolk just slightly runny.

No picture, because while it tasted amazing, this dark brown black bean paste doesn't improve the looks of bright green veggies at all, especially not if you serve them on a dark brown plate for some unknown reason.

I'm also looking for ideas on low carb cookbooks for beginners for a birthday present. So if you have any favourites that are useful and look good enough for a present, by all means let me know here, as to not derail this thread: https://www.diabetes.co.uk/forum/th...mendation-for-birthday-present-new-t2.199021/

It's certainly costly, but the sensor works out less expensive for me than buying the strips. That's a horrid reaction to have. The way I react to meds, I'm surprised I don't have issues. I have to say that the Libre2 is brilliant. It Bluetooths the readings to the App. You have to remember to scan it every so often to get readings into the log though. I just budget for them now.
 
Sunday 3 September - bed 6.6 FBG 7.3 Swimming lesson day. I'm none the worse for wear after walking yesterday.

B. TAG and LC granola with sugar-free coconut milk and raspberries. Benecol dairy free.

L. After swimming, a sandwich with SRSLY toast, deli roast pork,and egg mayo.

D. Usual campari and soda. Pork loin with green beans, 4 san marzano tomatoes, celeriac dauphinois. CC little chocolate pot with raspberries.

Really enjoyed the dauphinois. I even made a separate potato dauphinois for Hubby.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake.
 
Yesterday I needed straight cup hooks, so had to venture to Arkwright's (actually called The tool Box, but reminds us of the Ronnie Barker character on TV).

Passing the butcher I spied this massive boneless rib. Of course, I took a photo to send to GG, but we know that's not possible, so you guys are getting it instead. .

Whilst we enjoy forerib, we don't do it justice, unless we have the tribe here, but next to it was a whole leg of lamb, and it was on offer. £25. It weighed in over 2kg, so the butcher was tasked with cutting it in two.

Today's dinner was not the piece of beef I had bought on Thusday. It was bansihed to the freezer, in favour of the chubby end of the leg of lamb. Boy, was it good!

4 hours, in foil, at 90c, then about 45 minutes, naked, at 110c, just to give it a bit of extra cover.

Sorry no pics of the cooked meat. Waiting for it had been torture enoug!

Thinly sliced celeriac, salt and pepper mills, double cream, and grated gruyere. Prep takes the most time, slicing the celeriac and grating the cheese.

In a dish deep enough to take however many layers, start with a layer of celeriac on a drizzle of cream. Grind salt and black pepper on the celeriac layer. Add grated gruyere on top, then a drizzle of cream. Repeat the layers - celeriac slices, salt & pepper, gruyere, and cream until you've got to the desired size (or the dish is full). It takes 45 mins to 1 hr in the oven. I don't cover it as I like the top to brown. I cook at 200C.

The time depends on the thickness of your slices. A jab with a knife will tell you if it is cooked or not. Don't let it cook too long as the cheese will separate and you spend time trying to leave oil behind. It should still look quite creamy.
 
Just waiting for the pork belly that I didn't have yesterday after all to be cooked. That will be breakfast. Nothing with it. So no carbs and about 640 calories.

2nd meal, which I fully expect to need today, will be home made square sliced sausage with some onions and tomato. Very few carbs and not very much in the way of calories either - maybe about 350.

Might manage to hit the 1000 calorie mark today - not that it really bothers me but I agreed to write it all down so that the nurse could see it next week.
 
Brunch of cold chicken and cucumber. Dinner will be omelette and sald, preceded by a few walnuts and unripe hazelnuts, accompanied by a small glass of red wine (yippee - this is a wine week!).
 
Coffee and cream x 2
Coffee and unsweetened almond milk
Smoked salmon.... different brand and still not nice.
Ham and tomato
Mini Meat balls with tomato passata, green pepper, onion and cheese on top
 
10.30 one slice of bacon one egg and a couple of fried home grown tomatoes
1ish a few garden berries and blackberries with yoghurt followed by a couple of squares of 90% chocolate
5ish duck leg confit shredded after cooking, served with salad and LC wrap with glass of soda water pudding LC chocolate brownie with decaffeinated coffee

L: Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears with butter and a medley of baked broccoli, leeks, and sweet red peppers with garlic.
Water to drink.
Raspberries and Greek full-fat yoghurt.

D: Seafood salad made with mussels, brown shrimps, lettuce, cherry toms, celery, Kalamata olives and Welsh onions dressed with olive oil and a squeeze of lemon juice, parsley and garlic, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
B- bacon and eggs.
We were intending to go out for lunch but we weren’t hungry after that so didn’t bother.
My box of Awfully Posh pork puffs arrived so I had a pack of those instead. Very nice and a lot kinder to my teeth than the scratchings.
D- Cold pork, Halloumi chips and best of all I found a recipe for butter mayo that doesn’t go hard in the fridge. It’s delicious and I think I’ll stick to it even after my carnivore month is over. @AndBreathe like you with your leg of lamb, the first thing I thought when I discovered this mayo recipe was ‘I must tell GG’ it still gives me a jolt.
Boring photo - a bit of salad or sauerkraut would have livened it up a bit.

I know exactly what you mean.
I did a decent piece of machine embroidery at the weekend, and had taken the photos before it hit. She was so good for my ego. She wasn't a maker (more a doer), but marveled at anything "handy".

I always think of GG when I prepare, mushrooms, she hated them!

Dinner: liver in onion gravy with runner beans, cauliflower and carrots.
