What have you eaten today? (Low carb forum)

I want to make something like a shepherd's pie this weekend.

I've never seen a shepherd's pie in my life, but it sounds very tasty.
You lot being mainly from the UK, you've all eaten and cooked hundreds of shepherd's pies of course. So any tips or favourite recipes are welcome. :)

I don't have lamb mince so I thought to use beef and some chopped chicken livers for extra flavour.
If you are using beef it will be a cottage pie, not shepherds pie.
The recipe you are using would be a bit carb heavy for me with the beetroot. Also grating it would mean I would have ‘pink freckles’ and purple / pink stained hands for a few days.
I would increase the chopped celery, and maybe chuck in some chopped kale or other green veg, And some garlic. For flavouring I substitute the wine for Marmite, or Worcester sauce. This is because I think it such a shame to have less wine to drink if I waste it in a cooked recipe that evaporates all the alcohol. :bag:;).

If I were doing the recipe think I'd leave out the beetroot (never heard of that in a shepherds pie), the garlic, rosemary, oregano, wine and maybe leave out one of the carrots and possibly replace with swede. I have tried using cauli as a topping but it didn't work for me. Traditionally it's a potato topping which soaks up the juices, cauli didn't do that for me, maybe it was the way I cooked it. Think maybe a swede topping would be better as it's more absorbent but it'll have more carbs. I'd still add the cheddar on the top. I'm a bit of a traditionalist cooking wise as I like to have a shepherds pie taste like a shepherds pie.... that's just my quirky nature. BTW if you exchange the lamb for beef mince it becomes a 'Cottage Pie'.

I've never used beetroot in a cottage or shepherd's pie either. Celery and carrot would be usual. I really like the idea of added chicken livers for flavour though. I would also agree that 2 large carrots might be a bit much for 400 g mince and would reduce it to one. I think beetroot might make it a bit too sweet - it should be a really strong,savoury flavour. Marmite or beef extract would do the job. You alreadfy know my feelings about cauliflower mash, so I shouldn't comment on the topping. Traditionally the pie wouldn't have cheese in or on it, but if you like cheese with your beef, why not?

I'll also share them with a friend who wants to make it with vegetarian mince so it suits both her vegetarian husband and their T2 friend who's coming over for dinner. And now we're wondering what the name changes to when using non-meat mince. :hilarious:

Sheperdess pie! we make this at the food charity I volunteer for, very versatile cos you can add all sorts of veg.
 
10:30 3 scrambled eggs with a little chopped ham
13:00 180 g ( weight) sliced edam cheese
16:00 full fat greek yoghurt with 3 chopped walnut halves
19:00 1 chicken thigh with nice crispy skin, boiled cauliflower and courgette slowly fried in butter and olive oil.
1 cc coconut chocolate pot with 2 teaspoons cream.
1 small brandy

A little late to the party.

Along with the traditional carrot, onion and celery, mushrooms make a tasty addition to a vegetarian shepherd's pie. I'd be inclined to omit the beetroot, as others have said.

I have in the past made such a pie with vegetarian mince. With seasonings it was tasty enough.

I also admit , in the days when we were truly poor, to substituting porrige oats for mince. Used all the same ingredients, apart from the minced meat. The kids loved it and often asked for porrige pie for dinner.
Not recommended low carb fare. :hilarious::bag:

Evening all

Our planned fungus foray was cancelled due to the inclement weather but, after a late start, we managed to forage a few wild blackberries to round off our lunch.

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Harbourne Blue goat's milk cheese.
Water to swallow tablet.
Espresso.

L: Packed lunch made with leftover walnut and mushroom nut roast, lettuce, Romano peppers, celery sticks and cherry tomatoes with a dollop of homemade mayonnaise.
Almonds, hazelnuts.
Wild blackberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, salad onions and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
We are settled into our holiday lodge this evening yay!
Breakfast was a glass of kefir then a few black coffees en route. Bag of biltong mid morning.
Mid afternoon after check in, small pack of salami & prosciutto
We hired bicycles, I assumed I could ride one as I used to as a child. It turns out you do forget how!! Grandchildren thought my efforts hilarious. I’m just glad no one had hands free to film it.
We Intended to get a take away but too tired and hungry so had sausages and bacon and cheese Wed brought along with us. And a couple of glasses red wine to steady my nerves after the bike ride.
 
Following the discussion about what a vegetarian cottage/shepherd’s pie should be called, I found this:
I like Gardener’s Pie but also I thought Allotment Pie!
I'll stick to @sueh21 's sheperdess pie, love that name, although your proposals sound very good as well.

Not late at all, I haven't even done my shopping yet (for a meaty pie), and my friend plans her vegetarian version next friday. :)

So very hard to choose between the funny (because I agree with your grandchildren), hug (for them for not having footage of the event) and winner (for being on holiday and having lots of fun by the sound of it!) emojis!

Dinner will be third day of the same soup. It's a nice soup but three days is a bit much so now I'm hungry but still not motivated to heat up my soup. Also, I have two dogs and a cat with me under a blanket on my couch so I cannot reasonably get up.
We'll see what happens, foodwise.
