I don't have lamb mince so I thought to use beef and some chopped chicken livers for extra flavour.
If I were doing the recipe think I'd leave out the beetroot (never heard of that in a shepherds pie), the garlic, rosemary, oregano, wine and maybe leave out one of the carrots and possibly replace with swede. I have tried using cauli as a topping but it didn't work for me. Traditionally it's a potato topping which soaks up the juices, cauli didn't do that for me, maybe it was the way I cooked it. Think maybe a swede topping would be better as it's more absorbent but it'll have more carbs. I'd still add the cheddar on the top. I'm a bit of a traditionalist cooking wise as I like to have a shepherds pie taste like a shepherds pie.... that's just my quirky nature. BTW if you exchange the lamb for beef mince it becomes a 'Cottage Pie'.I want to make something like a shepherd's pie this weekend.

I've never used beetroot in a cottage or shepherd's pie either. Celery and carrot would be usual. I really like the idea of added chicken livers for flavour though. I would also agree that 2 large carrots might be a bit much for 400 g mince and would reduce it to one. I think beetroot might make it a bit too sweet - it should be a really strong,savoury flavour. Marmite or beef extract would do the job. You alreadfy know my feelings about cauliflower mash, so I shouldn't comment on the topping. Sheperdess pie! we make this at the food charity I volunteer for, very versatile cos you can add all sorts of veg.I stand corrected, and will make notes of all your tips.
I'll also share them with a friend who wants to make it with vegetarian mince so it suits both her vegetarian husband and their T2 friend who's coming over for dinner. And now we're wondering what the name changes to when using non-meat mince.

I have in the past made such a pie with vegetarian mince. With seasonings it was tasty enough.I stand corrected, and will make notes of all your tips.

Not late at all, I haven't even done my shopping yet (for a meaty pie), and my friend plans her vegetarian version next friday.A little late to the party.
Along with the traditional carrot, onion and celery, mushrooms make a tasty addition to a vegetarian shepherd's pie. I'd be inclined to omit the beetroot, as others have said.
So very hard to choose between the funny (because I agree with your grandchildren), hug (for them for not having footage of the event) and winner (for being on holiday and having lots of fun by the sound of it!) emojis!We hired bicycles, I assumed I could ride one as I used to as a child. It turns out you do forget how!! Grandchildren thought my efforts hilarious. I’m just glad no one had hands free to film it.
