I've not started our low carb KC Christmas pudding good reminder will get it out of freezer for New year's day. Have you tried dousing the remaining pudding in brandy? It may soften it and taste good too?2 black coffees this morning
Lunch- H/m sardine fish cakes, did these in the airfryer rather than frying and was very pleased with the result.
D- rolled shoulder of lamb, Cooked at low temp on roast setting. It still cooked a lot quicker than I expected and was a bit dry, it’s a learning curve to be sure. Butter cooked cabbage with it. Decaf coffee with KC Christmas pud and cream. I’m only halfway through it, I wish they’d done individual portions. It’s a bit hard now and I don’t think it’ll last any longer. View attachment 65220

I don't know about the KC Christmas pudding but ordinary Christmas pud can be fried in your favourite fat (or air fried, I imagine) and eaten with bacon and egg. That way it can be "refreshed".

My food today: usual goat milk kefir and black coffee all morning.

Mid aft - 30g almonds
Dinner - liver ( carefully weighed 100g, I’ve come a cropper in the past not realising liver is a lot higher carb than other meat) bacon ( not weighed, had lots) mushrooms and broccoli. Followed by red wine and vintage cheddar.
@Annb I hope you enjoy the fishy fritters. Also that the problems the weather is causing you with food supplies, are easing up.
Just as well we don't tend to suffer from flooding. There is only one road from here to town. If we can't get through that for some reason (occasional car crashes) we are stuck on this little part of the Island. It's the same from where my friend lives. The only way to town is via a causeway, which is closed if the wind and sea combine to make crossing it difficult. People often get caught out on the wrong side so either can't get to work or shops, or can't get home. Such are the joys of living in remote parts.@DJC3 hadn't realised that about liver being higher carb although only eat it occasionally as pate.
@PenguinMum welcome back you've been missed - hope your eye injury is recovering.
@Annb hope ferries get back to full strength soon so that your fresh food supplies return - it must be really difficult. Our weather is causing issues with flooding locally but it's just causing us to drive further round to avoid flooded roads.

Black coffee while out and about . @Antje77 my cheese supplies are now replenished ready for New year's eve must remember to take photo tomorrow before friends arrive.
Late lunch a few nuts and cheese and two hotel chocolat 70% truffles - more left from Christmas still - will be better once all eaten as finding it hard to ration them!
Dinner hm chilli with black olives cooked in rather than kidney beans and one slice of LC cheesy garlic bread

My diabetic nurse says look for 5g or less in a 100g if buying in store . But she doesnt say what is a good yardstick for a day or a month?
