What have you eaten today? (Low carb forum)

Not the best day all round.
Went out for usual Omlette and only managed 1/3
Tea and coffee and cream
Coffee and cream
Chicken slices and cherry tomatoes
 
Hope all of you enduring medical stuff today have had an ok day. @Antje77 you're having a real run of medical stuff hope scan is fine. I found it quite a challenge before my first ever scan as I'm claustrophobic but mentioned it to them and they fitted a mirror that gave me a view so could forget in the machine and this helped me to relax. At least an early appointment will mean it's over quicker.
Mid am kefir and supplements
1 o clock kimchi and cheeses with LC seeded crackers followed by two squares of 90% chocolate
5 hm chilli con carne with LC garlic bread and small glass of red ( I try generally not to drink on weekdays but felt the need today!) Pudding berries and yoghurt
 
Gosh it seems to be the season for scary medical appointments. Thanks for all the kind wishes. I do hope the results are good for us all. I can well understand the ‘white coat syndrome’ @Antje77
Breakfast today at the hotel - 2 small hard rashers of bacon and a spoonful of dry scrambled eggs. Won’t bother again even if it is included in the room price. Nothing to eat then, just water until scan at 2pm. Lots of water afterwards to flush out the contrast dye. The good thing about this is that they have to check my kidney function before injecting it, which is reassuring as I’ve only the one kidney left.
Dinner at GKB was brilliant: naked ( bunless ) burgers are served with house slaw and a green salad with seeds instead of the bun. I had a double burger with bacon and cheese and a glass of red ( figured I’d had enough water by now)
Back in the hotel this evening, trying to relax and get a good sleep before consultant appointment tomorrow. IMG_1706122362.222344.jpg

Evening all

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom stroganoff made with chestnut mushrooms, dried porcini mushrooms, onions, vegetable stock, tomato purée, paprika, garlic, olive oil, butter, rosemary and soured cream.
Cauliflower rice with toasted cashews and peas.
Braised cavolo nero with garlic and toasted almonds.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Aldi protein bar.
Dinner: creamy garlic prawns with sliced sautéed courgette.

Positive thoughts to all undergoing medical visits this week. x

Made some sourdough bread today, using my normal recipe of 460g of flour (Einkorn and Rye), but this time I've added 80g vital wheat gluten, 25g oat fibre, 75g sunflower flour, 25g milled flaxseed, 80g bamboo flour to bulk up the loaf making it lower carb, of course extra water was added. Was going to add seeds to make it even bulkier, but I don't think the sourdough starter could do any more 'heavy lifting' :oops: . It's in the oven as I type.

Breakfast was a sad slice of the last of the sourdough bread made several days ago toasted and heavily buttered.

Dinner was mixed salad dressed with salad cream and my quick version of coronation chicken. Stick of cheese followed, think it's called Cornish Crunch.

Happy to report that my endo visit today was absolutely lovely, as always. And as always, I'm wondering what I was worried about afterwards. :banghead:
I had prepared a complete defense to explain that my 30 mmol/mol hba1c didn't mean I had hypos all the time, only to have her first remark be: "What a wonderful hba1c! I trust I can assume it's not due to lots of hypos in your case, well done!"

Still, I expect my next one to be around my usual 35/36, I had some basal issues in the weeks right before the blood draw, all resolved now.

The trip there was chaotic: My car didn't start, thankfully a neighbour was just coming home when I wanted to leave and promptly handed over her car keys when I told her I had a hospital appointment in 45 minutes.
When I entered the hospital parking (paid, with a barrier) I realised my wallet was still in my own car. :hilarious:
Endo saved me with a card to open the gate. :)

After that I spent some time checking every fuse in my car (I'd never seen a car fuse before), and then finding out how to deconstruct the ceiling light to see if there was something wrong there preventing my car from starting (complicated story) but I didn't find anything. I'm not a mechanic and I absulotely hate fiddling with all those small parts in hard to reach nooks. Next step is having a professional solve the problem or pronounce the car at the end of its life. Worries for later.

To my surprise, I did make a very tasty broccoli and cheese soup afterwards, of which I tasted quite a lot but I haven't gotten around to properly eating it as well. The plan was to have it with some halloumi fries Lidl suddenly stocks (not something you can buy in the Netherlands usually), but it looks like it will be chicory and hummus, and pork scratchings in bed again.
MRI tomorrow, hopefully back to normal after that.

Packed chicken crackling, Cheesies, a nut bar and water. And tissues and migraine meds (the lights normally trigger a bad one) a bottle of port as a present for the neighbour kindly driving me there. Feeling chuffed with myself until I got there and found I'd left my phone behind. :banghead:

2 hour wait, had only tea.

Appt was bad news, something with a long name (atrophic something) has "popped" in my eye and its not repairable nor operable . Back again in 2 months just to make sure it's just a one off and nothing more sinister. But my sight won't ever improve. I forgot to ask if it will get worse. So, dear readers, just get used to all the typos I can't see - they will probably increase

Back home had ff greek with chopped hazelnuts and chopped 85% chocolate, 2 bowl full.

Long sleep in a dark room as my dikating eyes drops and resultant headache wore off.

D: a small filo cheese tart and veg with gravy. 2 portions coffee icecream. A glass red.

2 small glasses prosecco as friends gathered to mourn a lovely lady who passed away last week. Beautiful poems, sentiments and lots of hugs. Sad but just what was needed. Still awaiting full funeral details.

So sorry to hear that your eye is not repairable. That must be difficult for you to take. I'm sure that with your resilience you will cope, but you didn't really need anything extra. Sorry too for the distress caused by the stressful email and the passing of the lady that you knew. You sound remarkably cheerful considering all the events of the day, but it must have taken its toll.

We had a problem with starting the Scenic for pretty well all of last year. Neil bought a new battery but it didn't make any difference, it kept on draining between startups. Every time he started it, he had to use a second battery that he kept in the boot, to have sufficient charge to start the car. It went in for its MOT and one of the "Advisories" was that the hangers holding the exhaust in place needed attention, so he ran it in to a garage nearby that only does tyres, batteries and exhausts. They fixed it and he mentioned to them about the battery draining problem. They checked it and told him that the (fairly expensive) battery he had bought was rubbish. They put a new one in, and there has been no trouble starting, even through this cold weather. Wondering it that might be something like what is happening to your car. Or the alternator maybe? Does it start with a kick start from someone else's car?

2nd meal: I am going to try to make a low carb version of haggis - if I can get lamb's liver in town today. Haven't tried my altered version of a full carb one yet, so another experiment. I shan't boil it, but will bake it in a pudding basin - boiling takes too long and I can't start until I get back from having my bandaging done. If that fails, I have a chicken sitting in some brine so that I can roast it off this afternoon ready for cold chicken tomorrow.

was sorry to hear your news yesterday and hope eyes settle after your check yesterday Im a real wimp with eye checks and drops and lights so really feel for you.

Well, the haggis wasn't great - edible but not very like haggis. I should have put more pepper in and coconut flour really overwhelms the flavour and gives the wrong texture. There's lots of it as well so I'll have to think of ways to use it. It's supposed to be half liver to mince but it could have done with more liver as well - I had more but stuck to the quantities in the original recipe. I'll use the remaining liver tomorrow in something. There's roasted swede left as well, and the chicken that I roasted alongside it. Might just put the chicken in the fridge for Saturday.

Weighed myself this morning and I've put on a tiny bit more. That must be all the messing about with carbs and BGs. So, no more of that. Very low carb from now on. BG has been OK today and that's with the slight reduction in basal insulin.

L: Nut roast made with toasted whole hazelnuts, walnut pieces and ground almonds, chestnuts, cranberries, mushrooms, parsnip purée, eggs, sage, garlic and onion with a touch of mixed spice (strictly no breadcrumbs).
Steamed Brussels sprouts with toasted pistachios smothered with butter.
Carrots, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with calamari and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, lemon verbena and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts..
Water to swallow tablet.
