What have you eaten today? (Low carb forum)

Two meals again today
Brunch kefir then two boiled eggs and LC roll
Dinner roast chicken with cauliflower mash and two low carb high percentage pork sausages plus two glasses of dry white wine
@coby thank you for describing how you do cauliflower mash on another thread. I usually just use a fork to mash but got out the blender today in your advice and what a difference it makes - I agree it is closer to potato mash because of smooth texture delicious.
Pudding lc chocolate brownie.
 
Today's meals-

Skipped breakfast

Lunch- 2 slices of heylo bread with one heck sausage and some Stilton

Dinner- Inspired by all the lovely mushroom pics on the thread recently we had sirloin and mushrooms and and ,and I made a keto peppercorn sauce , which I am way too proud of. It was lovely.

B/ bacon roll in SRSLY bread.
L- H/m yoghurt with blueberries and seeds
D- Local farm pork leg roast, cauli cheese, buttered greens. Couple of glasses of wine and a few Cornish cheeses to finish.
@PenguinMum I agree with you about the ethos of buying local good quality food. I’d rather have less often but be happy with the quality and provenance. I’m lucky I’m able to buy beef, pork, lamb & cheese all locally produced from small farms I’m stuck with f/r chicken since our butcher closed though and have to resort to the M&S yellow sticker trawl periodically.

Aww so glad you tried it and it can be spiced up with garlic if and when you desire too :)

I've had a day of doing very little, after all those wonderful adventures yesterday. I'm slowly learning that it's ok to build in recovery days after too much social stuff going on. So instead of going all depressed and feeling like a complete failure the day(s) after, I can now simply see it as a trade-off and plan for it, most of the time. :joyful:

In line with that, my planned evening meal was half a 'rookworst' (Dutch smoked sausage) on a slice of LC bread with sauerkraut. Found out I didn't have any sauerkraut left after putting the sausage on the stove to heat up. No problem, tasted very good without the sauerkraut as well, and even less work! :hilarious:

When you eat out here there are usually options on the menu for a range of steak sauces including peppercorn. It was always my favourite and I was missing it. It’s an acquired texture! I don’t like the slimy mouthfeel of xanthan gum but I find a lot of lc recipes use it for thickening. I never liked sauces thickened with cornflour either though, so maybe it’s just me.
I'm not a fan of xanthan gum either. It doesn't alter flavours, but I don't care for the texture (mouthfeel is a good word @DJC3).

It's an additive that's widely used by the food industry, of course; crops up in yoghurt, ice cream, cheesecake, you name it!
 
Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, cauliflower, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, quail's eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.

Lunch, cheddar on h/m seed crackers with a bit of pico de gallo.
Dinner will be a treat of chicken breast fried in box mix of keto breading with broccoli, feta and red onion salad while watching the Super Bowl.
Had a terrible low yesterday; I didn’t time pre bolus breakfast insulin with breakfast very well and ended up on the kitchen floor. I felt very jittery and awkward all day. Does anyone else find these long ( all day), lasting effects after a hypo?

What type of peppercorns did you use? I have a bag of dried black peppercorns to use in my grinder, but I suppose those arent the right ones?

I'm sure they would be fine. I opened our black pepper grinder (bought as a tub of peppercorns with a plastic grinder on top) tipped out some peppercorns then put them in a bag and bashed them with a rolling pin. it worked just fine.

Yes, I do. Feel cold, a bit of a tremor and very tired after a full blown hypo. It lasts for most of the rest of the day. Now that I have a Libre I get a warning that I need to take action to avoid a hypo. I did have one about 2 weeks ago, when my Libre sensor was faulty so I was depending on finger prick testing so no warning.

Breakfast was Spanish omelette made with frozen and defrosted potatoes and some chopped onion. No harm done to BG.

2nd meal (which I almost forgot to have) was more of the Moussaka. There's still some left and it seems to be OK so I'll probably use it tomorrow.
 
Morning all. I had my chicken leg with red cabbage (with apple, onion ,stockcube made up, splash of balsamic vinegar and sweetener to taste), broccoli, cauli and one small carrot. Made the gravy with xanthan gum and was pleasantly surprised. @MommaE, too late! I had to whisk it furiously lol. That was actually the best meal I've cooked for a long time and I have enough for today too. I bought some Heck chicken sausages but am not very keen. Have an appointment with the Osteopath today. He's gradually straightening my body out and I don't need my walking stick so often. Have a wonderful week everyone. :happy:

I went to the seaside with friends for a long weekend. I wasn't entirely successful in carb dodging, but no chips, pasta, rice or bread were eaten. I gave the biscuits and sweets away which were left in my room by the guest house. Had some lovely salmon in dill sauce, and a nice roast beef and pork dinner. There may have been the odd Yorkshire pudding and well-buttered baked potato along the way. For the breakfast at the guest house I forewent the fried bread and hash browns, and just had the bacon, eggs and sausage instead. But I did have a fair few pints of beer. No pictures of food, but here's one of the coast.

@IanBish looks amazing where you spent the weekend - especially on a lovely day like today I'd definitely love walking down that beach. Well done too for managing to keep your carbs lower by dodging some of the temptations.
The lovely day here tempted me out into the garden for weeding plus had a walk through the towns gardens where there is a wonderful display of crocuses - a real sign of spring heading our way and time for another seasonal avatar.

Dinner left over chicken and sausages from yesterday and salads - I had the idea of using my cabbage and turmeric root sauerkraut and mixing with some mayo to make a gut friendly coleslaw. The olives have been kept in olive oil in fridge so there is some cold olive oil on them if anyone thinking my olives look odd - it turns into liquid olive oil again after a few mins at room temperature.

It was quite cold, and occasionally windy there (Tenby, West Wales) but lovely too.

Your chicken/sausage salad looks very nice.
