What have you eaten today? (Low carb forum)

Saturday 10 February - bed 7.3 FBG 6.8. I had to get on with holdhold duties after the swimming meet yesterday. I just wanted to cover today and Monday as we are off out tomorrow.

B. TAG and 2 slices of SRSLY toast with cheese and onion. Benecol dairy free.

L. After shopping, 2 M&S cheesy crackers with wensleydale with cranberries.

D. NLCK pasta carbonara. CC little chocolate pot with raspberries.

Sunday 11 February - bed 7.4 FBG 7.7. We were off out later for SIL'S 80th birthday, but the swimming lesson comes first.

B. TAG and 2 slices of SRSLY toast with ham and a cheese triangle. Benecol dairy free.

L. Nothing.

D. Went to one of our local restaurants for SIL'S 80th. My niece ensured there were balloons, banners and cake! I was driving. I had calamari with alioli to start, followed by a lemony veal escalope with plenty veg. I took a chance on a zero Moretti. Thankfully, no gout reaction from the zero lager! CC little chocolate pot when I got home.

I decided a little change to SIL'S card to counteract all the 80 stuff. I got one made at Moonpig, which wished her a happy 39th anniversary of her 41st birthday

Having read the various posts about eating out, we are very lucky here. We have 4 restaurants in our town that we use and who will adapt to suit us. I always let them know in advance. Like @PenguinMum, I do my research beforehand. We have to, as we have coeliacs, seafood allergy, lactose intolerant in our group, as well as me LC. Certainly, with our home restaurants we don't have an issue. We were at the Italian one for SIL'S 80th. I'd say the only places that I struggle with (sadly) is pub grub. I say sadly, as I'd love to be able to have pub steak & ale pie with mash!
 
Evening all. Very late today as granddaughter has just gone back to London. Had a lovely weekend with her. I am so lucky. We went for a carvery and I had pork, carrots, cabbage, cauliflower cheese and roast parsnips plus a little gravy. For tea we had boiled eggs and salad. So I'm hoping my bg level with drop. Monday lunch tomorrow so I'm taking a lemon and lime mousse I've made with sf jellies and yoghurt and quark. Very tasty. Have a good week everyone. :)
 
Meant to fast before my Sunday morning walk with a friend but woke very hungry so had kefir, seeds and blueberries

Mint tea half way round our walk

Lunch: camemebert (hubbys very pleased it's now gone, ponged a bit too much)

D: few Indian spiced snacks, not lc, as nibble starter, not too many.
Roast beef, Cauliflower with cheese, carrots, green beans. Onion gravy
Lc cream jelly
2 glasses white wine

Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
A medley of baked broccoli, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, quail's eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.
 
Just wanted to post these pics to give you all a giggle. Since my type 2 diagnosis nearly 7 years ago, bearing in mind I have done the majority of my shopping at Tesco during those years. There is an announcement on my account saying:
“Save on what you buy the most and love the best” and then provided 6 coupons. I don’t think they have been studying too closely what I buy the most and love the best! I suppose the flowers and greetings cards might be low carb if I chose to eat them!

It all started so well today - you know what's coming, right? I had sweetheart cabbage with butter for "breakfast" around 2pm, followed by 2 hardboiled eggs with butter, then greek yogurt with kefir and 5 raspberries with a sprinkle of chia seeds.

I needed to use up 2 bundles of asparagus so I cut the tender half off, and steamed that for tomorrow's breakfast. I made cream of asparagus soup with the woodier half, with one onion, half an orange bell pepper, 2 small cloves of garlic, fried up in beef tallow and butter. Added chopped celeriac leaves (no celery in, but I grow celeriac in the garden) and several large spoons of nutritional yeast as a stock alternative as the shop bought stock I have has a ton of nasty things in. Simmered in 3 pints of water until all soft, then blitzed with a stick blender. I add cream after it's reheated so the cream doesn't cook in the soup. It was really delicious.

So something went wrong after that, I started to feel so hungry. Had some more soup, then I should have had an avocado salad, eggs and so on but I didn't. I brooded about carbs until I caved and binged. Least said soonest mended, perhaps, hopefully I'll be back on track tomorrow. Another lunch out but I'll try to swerve too many carbs.

I lapse often enough not to beat myself up about it but my health is really at stake now, and I can't be in denial any more! I'll make it a one day lapse, not a one week lapse!

You'd have to carefully test before first bite and two hours after before deciding on a diet of flowers and greeting cards. Honey comes from flowers, and I suspect cardboard isn't only fibre but may have some digestible carbs as well.

Same evening meal as yesterday and the day before. Three small meatballs today, as yesterdays two proved too little. This time I hid a cube of cheese in the middle of the meatballs as you can see in the middle one, which was leaking a bit. :hungry: Smear of mustard as well.
I still have enough mince for another two days of meatballs but the pot of broad beans is now empty, we'll see what tomorrow's meal will be tomorrow. :joyful:

Ann, you are such a gracious host to your friends, but wouldn’t it be easier to keep a couple of packets of biccies in the depths of a cupboard and a cake or two in the freezer to get out as they appear? Baking in anticipation must be dispiriting on two counts when you have baked and they don’t arrive.
Thanks for the kind words. The only sweet things I have in the house are KitKat biscuits and ice creams - both for Em. I can ignore them but if I kept packets of biscuits, I'm pretty sure I would just eat them. No willpower at all. Same with cakes. The ones I made this morning, I will make sure are out of the house by lunch time tomorrow. Alistair will take them away for me. I can last out that long - I hope. Another thing that tempts me is crumpets. I also buy them in for Em but really struggle to leave them in the container.
 
Breakfast L/c homemade zucchini bread, with a smear of low sugar blackberry jam. More jam would have been better but saving the last bit for the last slice tomorro.
Lunch. Red cabbage, peppers and beansprouts salad with soy, sesame lime dressing.
Usual few hours of pickleball.
Dinner. Celery soup. A new recipe for me as I had most of a bunch of celery to use up. Was quite acceptable as soups go, given I don’t really like soup. Followed by a Keto salted caramel ice cream which was very acceptable. I had quite a cold windy bike ride to get the ice creams so thought I had earned it.

Hahah yeah, funny. It used to be a lot better and personalised about ten years ago, it definitely knew I had a toddler and gave me appropriate offers then. I mean that was the "selling" point wasn't it? we'll give you somewhat customised deals that you would be interested in if you allow us to mine all of your purchase data whenever you scan your Clubcard. Seems part of that has fallen by the wayside, FAR more generic now.

Only tea until a bit after noon. Then bacon and eggs.

2nd meal will be a pork mince ragout with cabbage mash.

Neil has developed a bad cold so is feeling a bit off today, so not going shopping. Running out of things, but will manage for a couple of days. Might even use up some more out of the freezer.

Alistair came in on his delivery round and took away yesterday's baking, so that's fine. I was very tempted but I only had one little cake. I do like coffee with cardamom. Never actually tried it as a drink though. Must try that.
 
Yesterday:-
Breakfast - 1 slice of Livlife bread toasted with butter and a smearing of Stute LS jam.
Lunch - Out to a favourite pub restaurant. Warm Chorizo sausages as a starter. Main course was steak with broccoli, cabbage and swede mash. No pud except I did swipe a couple of spoonful's of apple crumble from my wife, which completely smashed the carb barrier for the day.
 
Good morning all. Had my weigh-in last night at slimming group and I've lost 5 and a half pounds! On top of that, my fbg this morning was 6.8! So my week has started well. Now comes the task of keeping it up and that's why I've told you! I've got some salmon for lunch that I'm going to poach and 2 boiled eggs later. Have a wonderful day all. :singing:

The pancake looks great. I had a message from a friend today asking if I could recommend any l/c pancake recipes. I couldn’t sadly, I’ve never found a decent one but I’ll send her this link. It certainly looks like a proper pancake!
There's 2 on my CMT. My favourite is the ricotta souffle pancakes. The crepe is OK

Black coffee and a glass of goat milk kefir this morning.
L- BLT using toasted SRSLY white hot dog roll. Chocolate chia pud.
D- Pasture fed rib-eye steak from local farm, mixed salad topped with my fermented red cabbage. Medley of sauteed mushrooms. Glass of red and h/m yoghurt with raspberries and seeds to follow. View attachment 66155

Well, my plans to skip breakfast went out of the window when I woke at 4, Rose at 5 hungry so had kefir, seeds blueberries and a small pear.

Then off to a funeral. Very well attended for a lovely lady, only 57. Very emotional as they read out my condolence message as part of the eulogy. I cried buckets.

Had a quick couple of slices livlife toast before heading to the pub for the wake. Only had a coffee, then came away.

Nibbled some fridge gravel and cold meat while cooking a vegetarian stew for a guest coming later. One hot chocolate with Baileys

Out tonight with large group of friends so we've had to preorder.
I'm having a fancy salad bowl, then cheese and biscuits, hoping to resist the latter. Fancying a large drink, just not sure what right now.

Been a tough day.

I didn't watch all the videos, lacking the patience to watch videos on recipes I could read in less than a minute, but the first video was enough to give me an idea. :joyful:

Cut cabbage, mixed with two beaten duck eggs (the ducks have started laying eggs again, yay! I found these two this morning, again in the mud in the middle of the garden), fresh garlic, salt. pepper, smoked paprika.
I made it a crispy cheesy crust omelette, and filled it with plenty of cheese and chorizo slices.

You can really add a lot of cabbage to your eggs and still have an omelette that doesn't fall apart, very surprising!

Off topic funny story of the day: We went swimming this afternoon, and the water temperature has now risen to a balmy 8 °C, allowing for slightly longer swims (still less than 10 minutes, don't worry). So I finally felt safe to swim to the bridge (40 m or so) which turned out to have great acoustics. So after some oohooing I tried my best spooky hollow laugh. Right when someone on a bike passed by on the bike path under the bridge. :hilarious:
I never saw him coming and I have no idea what he thought of me, but he sure has a good story to tell at his family dinner!
He may do a variation on the three Billy Goats Gruff - who goes trip trap trip trap over my bridge? Grandson's loved that story when they were little.
