What have you eaten today? (Low carb forum)

Breakfast small kefir then then two boiled eggs with a low carb roll
Lunchtime cooked some rhubarb earlier with ginger and lemons so had a spoon of the cooked rhubarb with yoghurt
Dinner hm Bolognese with some low carb pasta and topped with parmesan shavings and glass of soda water with some of the rhubarb cooking liquid used as a cordial.

Car in garage tomorrow for a job so will hopefully keep my mind off stressing 're eventual bill.
 
Monday 12 February bed 7.9 FBG 7.3. Aqua day. I was able to take my time as no school runs!

B. TAG and 2 slices of SRSLY toast with ham and a Dairylea triangle. Benecol dairy free.

L. A bit of crustless quiche.

D. Chicken escalopes with a spicy coating and celeriac fries. Raspberries with a dash of cream.

I did have a gin and soda to celebrate the half term break!

@Antje77 - In case you don't know the story of the Billy Goats Gruff, I am not calling you the troll under the bridge, nor am I suggesting you would eat the cyclist!
 
He may do a variation on the three Billy Goats Gruff - who goes trip trap trip trap over my bridge? Grandson's loved that story when they were little.
Alistair went to a little playgroup close to us when he was about 2 and a favourite story of the children there was the "Billy Goats Gruff" but I had to stop taking him there because he hated it and would run into a corner and cry whenever he heard the beginning of it. The lady running the playgroup had to phone me to come and collect him so that she could get on with the story for the rest. After the third time she asked me not to bring him back.

I had a bit of a puzzle this afternoon. I wanted to eat a LC sandwich and logged my dose for it. And then I couldn't remember if I actually took my injection or not. :banghead:
So I waited for over an hour to see if anything would happen before I saw a slight drop, and took this as a cue to eat.
Half of the slice with chorizo, half with a soft cheese I never had before, bought at Lidl at 35% off: Epoisses. Very tasty, but it's the softest and stickiest cheese I've ever had!

By now I'm pretty sure I did take my insulin, but wondering why I didn't go low after waiting this long. Predicting diabetes behaviour is definitely not an exact science!

I can imagine, it's a pretty horrible story and it would have likely made me scared of bridges as a child!
Monsters that want to eat you under a bridge and brothers who are happily willing to sacrifice eachother.
Stupid lady could have just read a different story.

Still, at 46 and having heard it for the first time, I like it. :hilarious:

Naww, I remember it being a little bit scary when I was little too, I used to have a mother goose audio book tape and had to ffwd it when it came on as I didn't like the voice. "who's that trip trapping...."

Dad used to tell me it as well, hid down the side of the bed, popping up one eye close and other open bigger than the other, which ironically wasn't as scary, more silly, used to like it when he told it, but that tape... shudder.
 
Just wanted to post these pics to give you all a giggle. Since my type 2 diagnosis nearly 7 years ago, bearing in mind I have done the majority of my shopping at Tesco during those years. There is an announcement on my account saying:
“Save on what you buy the most and love the best” and then provided 6 coupons. I don’t think they have been studying too closely what I buy the most and love the best! I suppose the flowers and greetings cards might be low carb if I chose to eat them!

No Tesco or Lidl supermarkets within striking distance here, but Waitrose sends me customised money off coupons on the items I actually buy; no points involved. Didn't realise how lucky we were.

Mind you, the number of coupons and the value of the discount has dwindled in the last couple of years. Now they have our marketing data, I wouldn't count on the myWaitrose scheme lasting much longer in its current form. The free newspapers for loyalty card holders were axed some time ago.
 
No idea what to call todays meal, but it tasted pretty good for a thrown together meal. :)

I really like meatballs but 3 days is enough, even though I still had enough left of the mix to make meatballs for two more days.
So I fried a large onion, added the mince/cheese/onion/egg mix that was supposed to become meatballs, and a tin of tomatoes and let it simmer for a while.
After that I added chinese cabbage and some spices for the last 5 minutes.

Enough left for two more days but I guess I'd better freeze it.
I'm driving to Germany with a friend tomorrow to buy tobacco and booze, and have a leisurely walk around the supermarket in general.
I went there last summer as well, and the supermarket sold heated schweinshaxe which was pretty amazing, no such thing in my country. It's something like a giant pork lollipop! So now I'm hoping they still sell them, in which case I won't need a proper meal after coming home. :joyful:

It may have looked okay, but it wasn't all that great. I couldn't get the button mushrooms that I like, the steak was a bit chewy (it was grass-fed, 36-day aged, but you never can tell) and the broccoli wasn't that tasty (I think I prefer "normal" broccoli). But my CGM approves!

Bah, letdown, I had something like that last week, looked the biz though.

This sounds like a wonderful cake. I’ll be interested to see how it turns out.

Hahah yeah, funny. It used to be a lot better and personalised about ten years ago, it definitely knew I had a toddler and gave me appropriate offers then. I mean that was the "selling" point wasn't it? we'll give you somewhat customised deals that you would be interested in if you allow us to mine all of your purchase data whenever you scan your Clubcard. Seems part of that has fallen by the wayside, FAR more generic now.
Too right. I suspect Waitrose has us sized up as vegetarian, leaning towards organic foods and avoiding UPFs like the plague.

Might be disturbing, except it doesn't know about the fish and, AFAIK, it hasn't sussed that I'm diabetic!

H/m yoghurt with raspberries and seeds.
Failed Crispy omelette, my non-stick pan is no longer non-stick. DGF cake
Kobi keema, a simple mince and cabbage curry I’ve just realised I’ve been making this for about 50 years. It fits all the dietary restrictions I’ve gone through. As a cash strapped student it was cheap. As a parent of young children it was quick and easy ( no chilli powder for them). As a Weight Watcher I used low fat mince and spray oil. It’s highly adaptable and always hits the spot. Today I had it with a DGF roti and a spoon of h/m yoghurt.
