What have you eaten today? (Low carb forum)

Black coffee all morning.
L- bacon sandwich in Chaffles. H/m yoghurt.
D- pheasant breast ( I’m grateful to our neighbour for the free, nutritious protein, but pheasant is not my favourite, we do seem to have rather a lot of it in the freezer) cooked in mushroom, thyme and cream sauce. Green beans ( no leftovers sadly) and spring greens. Hunk of mature cheddar to follow.

Evening everyone! Good day today for me, asparagus spears to start at 2.30pm then I had 3 heck sausages with two eggs (supposed to be soft boiled but turned out hardish) and some shredded, lightly boiled sweetheart cabbage. Lots of butter with the cabbage, and the heck sausages don't have enough fat so cooked them in lard. I remove the skins before frying, I hate sausage skins!! Then greek yogurt with kefir*, four frozen (by me) blackberries, chia seeds and a splash of double cream. Later I had some poppy seed crackers (only a few) with full fat soft cheese - I made a seasoning for the cheese with finely ground green peppercorns and pumpkin seeds. I think I'm low carb enough for the day even with the crackers, ketones are still above 0.5 and BG down to 6.3 (unheard of in recent years)

* I am pleased to announce that my kefir is behaving itself very well now and produced the first proper jar this morning! It is a little sour to my taste so for now I will have it with greek yogurt, but I am so happy that I don't have to buy it in plastic bottles and can be sure it's alive and well. It really does produce a lot of grains! Will have to see if anyone locally wants some.

@DJC3 I will have to make some chaffles now! Those look amazing!
 
Failed myself massively today.

Had arranged to meet friend at a cafe for coffee, but went fasted.
After an hour she ordered cake so I convinced myself a cheese scone was the "least worse option". Didn't actually enjoy it but it must have triggered something because then went to do Lidl shop and one of the tokens was a free bag of sweets... and not only did I pick them up, I ate them all in the car on the way home :banghead: :(

Mid afternoon a couple of swigs of kefir to see if it would stop the carb cravings.

D: a slice of walnut and mushroom loaf, 3 chicken drumsticks, buttered cabbage and leeks, red peppers. 1 glass wine
 
The agree icon was for the amount of " junk " food and in my case takeaways also add to the cost . Therefore as you said it can balance out the cost of the expensive " healthy " food .

It’s surprising how much you can save when not buying the snacks sweet stuff and general carby rubbish isn’t it? I feel I eat luxuriously every day now, I love it.

Yes, that was our experience when I switched to a LCHF way of eating.

You only have to size up the contents of many a supermarket trolley piled high with fizzy drinks, fruit juices, smoothies, breakfast cereals, maize snacks, potato crisps and other UPFs to realise the ease with which money is frittered away on items we wouldn't regard as food.

If we avoid UPFs as much as poss and shop for real food, we're actually spending no more and some of us find we spend a lot less!
 
Evening all

Today:

B: Two poached eggs topped with a knob butter, avocado and three crevettes seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Walnut and mushroom nut roast made with onions, eggs and flax 'egg', (strictly no breadcrumbs) garlic, vegetable stock and rosemary.
Steamed Brussels sprouts with toasted slivered almonds smothered with butter.
Carrots cut on the diagonal, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with mussels and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, lemon verbena and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts..
Water to swallow tablets.

It was a really tasty and satisfying lunch. I’m a very slapdash cook these days so my Chaffles are just a beaten egg with a large handful of grated cheese added (makes 2).
Glad to see your kefir is working out, you might find you get to enjoy the slightly sour taste.
 
Morning all on this lovely sunny but cold day. Boiled gammon today with plenty to snack on afterwards. With salad should be a tasty meal. For tea, a slice of cheese. Trying to go omad again. It worked before, hopefully it will again. Got an appt with a paramedic at the surgery soon. I'm beginning to wonder if we have any doctors there! Have a good day all. :happy:
 
By now I should have had my breakfast on the go, if not eaten. That was the intention for what should have been an OMAD day. But then, how often do my plans work out? By the time I was reasonably awake after an awful night, Neil had started stripping down the heavy grill, on top of the hob and in front of the microwave - he's not completely happy with the way it's working so wants to fix it. In the end I had a cup of tea and a cold chicken drumstick.

When I can get to the hob I will be making stir fried pork, bacon, onion and cabbage, probably with egg stirred into it.
 
FBG this morning was a slight improvement of late with 10.3 . Yesterday's meal were ... Breakfast 2 slices of cheese on toast with sliced tomato cup of coffee (38 carbs )
Lunch was kippers green beans ( lots of butter and ground black pepper ) and a slice of wholemeal bread (20 ish carbs )
Evening meal was 3 lowish carb red onion sausages ( not very nice ) red cabbage and one small new potato .( 30 carbs )
Tea and coffee before and after day's total carb intake was around 95 .
 
Raclette cheese is great for melting and is the one used in the dish called tartiflette.
You could use raclette, but reblochon is the usual cheese for tartiflette
I had never heard of tartiflette so I googled it.
And decided I'd use the raclette cheese on a dish with cauliflower and bacon, no matter that cauliflower isn't potato, and raclette isn't reblochon. :hungry:

But like @Annb 's days, mine often don't go to plan either, although my surprising night was much nicer than not being able to use hob or microwave (if a tad confusing).
Before cooking, I thought to go have a beer with my neighbour-in-the-garden. There was more than one beer, and then there was a bottle of rum, and then there was lots of hugging and cuddling, and then it was 1 AM and I realised I really needed to eat something.

Back to my own house for a LC sandwich with raclette, raw chicory and hummus, and the last of the cashews. And off to bed, or so I thought.
Only to find out I'd forgotten to make the bed, a daunting enough task at the best of times, and close to impossible after all this rum.
So I called the dogs and went back to my neighbour, and spent the night very comfortably snuggled up to him and our three dogs. It's been many years since I've shared a bed with anyone but my dogs and cats, it was very nice! :happy:

Hopefully today will be a bit more boring so I'll be able to report back on the not-tartiflette with not-reblochon tonight. And I'll make my bed! :bag:

That sounds perfect! Going to try it today and already salivating at the thought! Yes I think I can train my tastebuds to like the sourer taste, I'll do it gradually and especially when I'm hungry as that always helps me to like a food!
 
Fish stock was all ready to go, so I thought I'd better make the soup ready for tomorrow. I knew I had some frozen salmon in the freezer which Neil had bought for me a long time ago but it really wasn't very good so soup would be the best destination for it. Could I find it? I could only find some scallops in a plastic box - not to be used for soup - and a box of what looked like a pinky coloured fish, but no label and not easy to see through the sides of the box. It turned out to be a piece of skate wing. No salmon in sight. So I made my soup with that one piece of skate wing and the "fresh" haddock Neil bought when he went shopping plus some thick slices of lemon. I did find a small container with some mackerel pate as well and another box with some frozen carrot in lemon juice. That, some salt and spices tomato puree and butter with a few herbs at the end will make the soup. Tasted it before reducing and it tastes pretty good. If I hadn't already done the prep for my stir fry, I'd have the soup instead.

Hi All so back to Wednesday supper was two Green Cuisine plant burgers topped with Portobello mushrooms all baked in the oven.
Yesterday usual brekkie of slice LC toast, copious tea.
Lunch went completely off the wagon and while out running errands over lunch gobbled down an egg & cress sandwich and hot drink of tea in the car. It was glorious BUT the guilt wasn’t worth it.
Supper was chunky cod fingers and broccoli.
Today same brekkie.
Lunch was half packet of cooked chicken mini fillets dipped in Nandos Lemon & Herb sauce. Tea.
Supper will be salmon baked with shredded pak Choi, mushrooms and Teriyaki sauce with cauli rice.
 
I also found q pack of broccoli and another of cauliflower in the freezer - bought for making broc&cauli cheese. Forgot they were there and won't be eating them now that I know they cause problems for me. Offered them to Alistair but he never uses frozen. Thought I might tgqake them next time I see my friend with the salmon carcasses. Decided instead to keep them and make something with them for the next time we have a pot luck lunch but not sure whether to make soup or a cheese dish with them. There will be something soon, no doubt so I can decide then. Just means not being able to get those packets out of the freezer just yet. A large space in my big freezer is being taken up by bags of grapes which DIL harvested before she had her op and with which she intends to make wine. No space in their freezer, so loads of them in mine. I could do with the space so I hope she gets around to making the wine soon.
