Welcome to our forum and this thread for diabetic foodies @JenHarvey.Homemade ketchup is the absolute best! Passata, tomato puree and apple cider vinegar with a little seasoning of your choice. Simmer for half an hour and it's really delicious with no carbs
Before diagnosis I used to really enjoy basmati rice @IanBish, sometimes with the addition of wild rice depending on the accompanying dishes.Lunch was Greek yoghurt, a Braeburn apple and a few Brazil nuts. Dinner was a home made beef Madras (ish) with a small portion of basmati rice.

Unfortunately, it pushed my blood glucose up to unacceptable levels and so it stays firmly off the menu

Salad with an avocado pasta sauce (avocado, grana Padano, lemon, olive oil, granulated garlic), chicken, aubergine
A few slices of cheese
