What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: meatballs with tomato and mascapone sauce, cauliflower, broccoli and carrots.
Sorry no pic tonight!
 
Homemade ketchup is the absolute best! Passata, tomato puree and apple cider vinegar with a little seasoning of your choice. Simmer for half an hour and it's really delicious with no carbs

Completely agree. You can't beat home-made condiments; nothing we can buy tastes half as good as those we make ourselves.

Lunch was Greek yoghurt, a Braeburn apple and a few Brazil nuts. Dinner was a home made beef Madras (ish) with a small portion of basmati rice.

Before diagnosis I used to really enjoy basmati rice @IanBish, sometimes with the addition of wild rice depending on the accompanying dishes.

Unfortunately, it pushed my blood glucose up to unacceptable levels and so it stays firmly off the menu
these days.
 
Today:

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Baked halloumi and sweet peppers
Hummus and salad using cucumber, salad burnet, rocket, Halkidiki and Kalamata olives. raspberries, strawberry halves and mint, dressed with olive oil, garlic, a squeeze of lemon juice and topped with toasted sesame seeds.
Skipped pud.
Water to drink.

D: Seafood salad using crab, brown shrimps, lettuce, vine tomatoes, celery and salad onions with home-made aioli for dipping and topped with toasted sunflower and pumpkin seeds.
Water to wash down tablets.

It was only half a pouch, @LivingLightly. I froze the other half for next time. I like cauliflower rice, but not with curries, unfortunately.

We're all different @IanBish. If you can get away with it, why not?

Fortunately, if I cook cauliflower rice the same way as Indian fried rice with butter, cinnamon stick(s) and cardamom pods, my family and friends don't seem to notice provided that I don't let on.
 
B- h/m yoghurt with M&S grain free granola.
L- Mushroom omelette.
D- lamb leg steak from local farm. It was the best lamb I’ve tasted, I’ll definitely be ordering more. Tenderstem broccoli and the last of my jar of fermented veg with it. 1 glass red wine.
I noticed today that the Low Carb Food Co are doing packs of mix for wraps and crackers. Just a few clean ingredients, and very low carb. I’ve sent off for a couple and will report back. IMG_1724264510.052250.jpg

L: Cheese-crusted omelette stuffed with mushrooms, baby plum tomatoes, spinach and cream cheese plus grated Cheddar cheese for the crust.
Salad using lettuce, watercress, celery, salad onions, Kalamata olives and mint, dressed with an olive oil, garlic and balsamic vinaigrette, topped with walnut halves.
Skipped pud.
Water to drink.

D: Seafood salad made with tiger prawns, brown shrimps, sweet cicely, vine tomatoes, celery, Romano peppers, mustard cress and salad onions dressed with olive oil and a touch of lemon juice, parsley and garlic, topped with toasted almonds. Water to swallow tablets.
 
B- frittata made with red pepper, spring onion and Gruyère
L- meeting a friend at a cafe where we usually just have coffee. Decided to have lunch today and so glad we did, it was fab. Scallops and chorizo salad. ( plus coffee)
D- DD bacon wrapped pork tenderloin with garlic mash ( cauliflower) another very nice meal. IMG_1724351165.324437.jpg
