What have you eaten today? (Low carb forum)

Successful low carb tea loaf using Barberries (@DJC3 got my dried barberries from Amazon) Soaked 20g of dried barberries in 150g of cold tea and generous splash of brandy overnight with mixed spice (25g)and lemon zest.
View attachment 72874 This morning strained barberries and mixed 150g of the soaking juices with 5 eggs - using handheld electric mixer. Then added to mix a few spoons at a time a mix of 100g of panda flour, 120g of eyrithritol, 25 g of baking powder plus towards end of mixing 65g of melted butter. Then folded in the strained barberries.

Put into lined two pound loaf tin and baked at 160 fan for 45 mins.

Sliced when cold and frozen apart from a taster had today and some left in fridge for tomorrow. A definite success - thought soaked barberries tasted a bit like currants.

Can be served with butter but it's lovely and moist so didn't need it I felt after tasting. I managed to cut 18 slices most of which I froze in a plastic bag with small pieces of kitchen towel between slices so can take out of freezer as needed.
What are barberries. I've never heard of them. Loaf looks good.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake

Found them when looking for a lower carb dried fruit to experiment with as a replacement for currants which are very sugary. I started looking at dried cranberries which are a tart berry but many are sold sweetened with things like glucose syrup then found barberries mentioned sold without added sugar and thought I'd give them a try. They are used a lot in Persian cooking I gather.

Thank you for the information. It's true you learn something new every day. Unfortunately I am unable to have dried fruits as they cause havoc with me as much as I used to like them.
 
Apparently most air fryers have a 60° setting which can be used for dehydrating (drying) things. I wonder if it would work with my own home grown redcurrants, blackcurrants and raspberries to use later as dried fruits? No preservatives no added sugar
Has anyone ever tried it?

Yes it works well, I do herbs too, you need to slice strawberries as they are too big but other small berries are are fine whole, I usually set them for 6 hrs then check & go up in a further 2 hours until done. I’ve also dried sliced lemons & sliced lemon peel, grind the lemon peel up it’s delicious sprinkled on fish & salads, just a tiny bit as the flavour is intense. I did sliced oranges for Christmas decs too.

I’ve done this to make banana chips for my grandchildren so I’d imagine it would work well.

Particularly like the idea of dehydrating lemon and orange peel and slices - a great way of getting an intense flavour with fewer carbs. I use a lot of lemon zest in cooking as love intense citrus flavours.
 
Today, nothing so far, it's been a difficult day for various reasons. (I have food, just no opportunity to eat yet).

Yesterday was an interesting day foodwise:

Cocktail sausages and a few crisps (bag opened for Father's day treat)

1 Maoam pinball as I had a dry throat (impossible to even guess carbs from the pack info, in the end hubby weighed 5 and we did some maths)

Small ice cream as we visited my parents for Father's Day/ last visit before Dad's heart op this week and my brother was dishing out mini Twisters to anyone who sat still long enough. At least I now know that a sensible portion of ice cream does not ****** up my BG. Yay!

Couple of chunks of delicious bacon as brother had picked up a bargain bag of misshapes at a farm shop - he also gave us some lemons but we haven't eaten them yet!

Spinach mornay with prawns added, two scotch eggs.
 
Cooler this morning
Coffee and cream
Cherry tomatoes and gouda
Cauliflower cheese too much
Smoked salmon
Too warm

B- Greek yoghurt and blueberries
L- leftover portion of the low carb pasta bake from a couple of days ago.
D- cheese, walnuts, olives, a portion of l/c soda bread and a small apple peel.
@shelley[emoji6] I forgot to say yesterday- I love the look of your barberry fruit loaf. It’ll be perfect for Christmas with all the spices too.

It was Pensioner's lunch yesterday and as a starter, prawn cocktail with half a slice of bread and butter. Main... Lasagne with 2 small slices garlic bread and salad. Pudding.... fruit flan with 1 scoop ice cream. for tea, I had cold roast chicken. Then later 1 ice cream because it was so hot. Remember to drink today because it's going to be hot again. :happy:
