That's a perfect omelette. Hope you enjoyed it.Today for lunch I had a sourdough bacon sandwich. My blood sugar went from 4.8 → 7.2 two hours later, so a slightly higher rise than I'd like. For dinner I had a smoked frankfurter, mushroom and cheese omelette, with garden peas and a tomato. I didn't check my sugars; they should be okay after that.

L- bacon and eggs.
Supper - slice of low carb ‘quiche’ made with slices of corned beef in place of pastry, and filled with a tub of cottage cheese mixed with eggs and seasonings. 4sq Montezuma’s.
