What have you eaten today? (Low carb forum)

B- Greek yoghurt, blackberries and seeds.
L- a super cheese selection ( it was a surprise gift which arrived in the post) olives, walnuts, a cherry tom from neighbour’s garden and Olinas seedy crackers.
D- lamb steak, air fried Med veg and green beans. A handful of Montezuma’s AB buttons afterwards with my post prandial cuppa.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: bolognese with sliced sautéed courgette, with a few spots of sugar free ketchup and a sprinkle of grated mature cheddar.

Today I had boiled eggs and a microwaved Edam ‘cracker’ for breakfast.
Lunch similar to yesterday - cheeses, olives nuts and l/c crackers. DGF cake and cream.
Dinner was 3 Coop chipolatas, mushrooms and scrambled eggs.
My other granddaughter was round this aft so we picked blackberries and made jam. Not low carb, I forgot about the hack of adding chia seeds to make L/c jam so I shall pick more blackberries tomorrow and make chia jam.
@shelley262 your chicken traybake looks delicious.

Dinner out belatedly for my birthday, as first evening hubby had off this week. I had butterflied chicken with chimichurri, harrissa yoghurt, coleslaw and polenta chips. Polenta is less carby than potato but still pretty high carb so I only had one and a half of the three huge chips!

Chicken chop suey, no rice and no noodles. Just veg and meat

L- sliced turkey breast from butcher’s with some salady veg. Choc chia pud.
D- Gammon steak, quite salty. Steamed broccoli, baked aubergine and tomato. More choc chia pud.
 
Yesterday I had

Brie with a tomato

Roast pork with mushrooms, onion, red pepper

Skipped bedtime snack as experiment.

Today so far

Kimchi udon noodle soup with added sliced pork, veg and a poached egg. About 40-45g carbs and no noticeable influence on BGs compared to a lower carb meal.

Sausages with cauliflower "popcorn", cheesy coleslaw and a tomato.

I have salami and more coleslaw for a bedtime snack but haven't decided whether to eat it yet.
 
What is cauliflower popcorn?
This sort of thing, although ours was from Lidl and came with gochujang instead of sweet chilli


Basically lightly battered gently spiced cauliflower florets, reheated in an oven (or airfryer). Delicious!

Cold sausages for breakfast with the last of the coleslaw.

Dinner will be a takeaway of some sort. I rather fancy sashimi but hubby/ daughter will need carbs after a busy and strenuous day.
 
Ham and eggs for breakfast.
Lunch was cheese and crackers followed by chocolate chia pudding.
Dinner- a piece of beef skirt I’d popped in the slow cooker on top of some sliced onions this morning, adding a small splash of bone broth. Served with buttered cabbage and broccoli. Rhubarb and fresh cream to follow
