What have you eaten today? (Low carb forum)

Yesterday.

Breakfast -- Two double decaffeinated espressos with cream and xylitol. Half a low carb role with butter and gouda and the last left-over fried vegetable cake from the night before.

No lunch.

Snack at about 6:30 p.m. -- Half a glass of red wine, some olives and two squares of 85% chocolate.

Dinner -- A corn salad with caesar's dressing, parmesano, and fried mushrooms. Half a tunafish steak coated with sesame seeds (couldn't finish it as I already felt stuffed).

Before bed -- another square of 85% chocolate.

Breakfast: Black coffee

Lunch: Mug of Bovril (if needed)

Dinner: Mixture of veg from the garden (courgette, tomato, chard, broccoli, few runner beans, garlic) sauteed together in butter then popped in to an oven proof dish, topped with lots of mozzarella and baked until golden

'Supper': Very small handful of macadamia nuts

Drinks: Coffee at breakfast and mid morning then sparkling mineral water for the rest of the day

That sounds nice - and a good idea for a quick meal.

Penultimate day of my 5 day 600 calorie fast mimicking week.
Benacol.
A handful of almonds.
Chicken with mushrooms and cabbage. Amazing how much mushroom you can eat for very few calories.
A cup of tea.

Last day tomorrow thank goodness!

Breakfast - none

Lunch - none

Dinner - another portion of the courgette dish I made earlier this week. Courgettes sautéed in olive oil and layered with fresh tomato and onion sauce and mozzarella, topped with parmesan and baked in the oven. Added some broccoli and finished off with 2 squares of Lindt 90%.

Drinks - 1 mug tea with cream; 1 small bottle San Pellegrino; plain water throughout the day.

Hope you get the results you want. Are you aiming for weight loss or better blood sugars, or both? Would be interested to hear the outcome.

Still improving bed 6.6 FBG 7.1 and pre breakfast was 6.7. Haven't felt great today which I reckon is down to the weather. Monsoon rain and very achy.
B. 2 slices boiled ham, 4 cherry tomatoes and 2 scrambled eggs
L. Tassimo Americano grande with a dash of cream.
D. Cajun chicken and probably salad of lettuce, tomato and avocado with the obligatory Helmanns.
Think I'll have a mug of Marigold Swiss bouillon too.
Sun is out now and I don't feel as ******.

It was really nice! Just a sort of thrown together experiment. Next time I will add in some stronger cheese to the mozzarella topping and maybe a splash of cream to the veggies before putting the topping on but it is definitely something I will eat again. (It would go great with lamb chops :) )

Hi everyone.
This is my first post on the diabetes.co.uk forums, so here goes!
I'm currently restarting my low-carb diet. Today's food:

B: Two egg omelette with Lancashire cheese, three rashers of streaky bacon.
L: 4 slices of Tesco salami and 2 slices of prosciutto.
D: Home-made curry burgers (250g beef mince, curry powder, chilli powder, 1 garlic clove, 1 egg, pinch of salt) and a bowl of sweetheart cabbage.

Drinks: Yamamotoyama green tea (lots of it, I'm addicted to it from when I lived in Japan), sparkling water, 1 can of diet coke.

Hello and welcome :). I'm loving the sound of those curry burgers. Yum!

Thank you!
They're really easy to make too! Just mix it all up, shape into burgers and grill/bake :) I like to experiment with spices so next time I might add some smoked paprika!

My tum's rumbling now!! I think I'll try the curry powder version with lamb mince - I've got a load of it in the freezer. :) I think it would do well cold for Mr Chook's lunchbox for work as well.
