Bed 5 FBG 5.7. Really hungry today. Weight is stable and not doing anything. Hubby busy with soup for tonight and I'm about to start on a low carb chocolate pear sponge.
B. Slice Hovis lower carb seeded with the tasty salmon one pate from Sainsbury's. Tassimo Americano grande with a dash of cream.
L. Was out in search of more sellotape , gift cards and some bits and bobs I didn't get yesterday so I succumbed to one of Tescos New Yorker sausages.
D. Campari and soda
Hubbys **** a leekie soup.
Chicken stock base and he's added onion, carrot, leek , celery, parsley and shredded chicken that he used for the stock. Some barley and to garnish some shredded prunes.
Main smoked haddock kedgeree. Everyone else will have it made with long grain rice. Mine is cauliflower rice. Soften chopped onion in butter with turmeric and curry powder. Poach the haddock in milk with bayleaf. Flake the fish when cooked. Add the rice to the onion / curry mix and cook using a mix of fish stock and vegetable stock. Boil a number of eggs (I've done 6) then cool and quarter. I then add a little double cream to the rice , slowly heat then mix through chopped coriander, parsley and gently fold in the flaked fish and egg quarters. Serve immediately.
Low carb Chocolate Pear cake with brandy cream. Kenwood is getting an outing for this.

Thanks so much for the information, @Goonergal. Simply fascinating. Sometimes, I also end up fasting -- when I am busy after getting up and have to rush to work, but nothing as organized as you. I then also tend to see somewhat lower blood sugar levels probably in the same neighborhood as you. Anyway, congrats -- your levels are really, really excellent

Not sure. I’m just under a BMI of 25, so a “normal” weight, but still have quite a lot of fat around my abdomen. I want to get rid of as much of that as possible as I think it indicates insulin resistance and remaining fat around my liver/pancreas. It’s coming off but very slowly! Have started some resistance training at the gym to try and help.

I have never heard of a chocolate pear sponge, but it really sounds great. Would you mind sharing the recipe? Also, I would really like to hear how it turned out.
Recipe didnt have a temperature so I've put it in at 170c Fan oven and we'll see what happens. Think I could have used a smaller springform tin but again we'll see what happens. If it is too dense I will make it again but I'll change the recipe to a whisked sponge by separating the eggs and whisking the whites into peaks and folding the flour mix and the whites into the mix. It may not be dense enough to keep the pears on top like that but we'll try.Wonderful, @maglil55. This really looks yummy. (Sorry had missed the link before). I gave it 40 mins at 170c. Might want to take it up a notch to 180c and 35 mins. Springform Tin was fine. The cake rises and is not dense at all. I was like a kid again licking the cake mix of my fingers once I'd scraped out the bowl. The mix tastes good and my new Kenwood is a beast of a machine! Hubby has got me the folding tool, blender and dicer for my Christmas.
I'm going to make the low carb black forest gateaux again to take to my brothers and the folding tool will be invaluable for that. I'll make it Christmas Eve to give the cherries a chance to soak up the kirsch.
I find it difficult sometimes to know which of the tummy fat is subcutaneous fat and which is visceral fat. I hope that most of the fat that is left for me is just below the skin -- but to be honest I have no way of knowing. When I was in hospital, they did all the necessary tests to diagnose fatty liver and fatty pancreas, but no one seems to interested in conducting any tests to see if the issues are resolved. It is frustrating, to be honest, to be working in the dark.
Do you have a scale that tells you your level of visceral fat?
The only sure was is an MRI but that costs. Found this though. They admit it's not accurate but will give you an idea. It was quite an interesting article until I got to the end and they started on no carb fad diets but apart from that interesting.I agree. My scales show body fat percentage but not visceral fat - not sure how that would even work.
