What have you eaten today? (Low carb forum)

Bed 5 FBG 5.7. Really hungry today. Weight is stable and not doing anything. Hubby busy with soup for tonight and I'm about to start on a low carb chocolate pear sponge.
B. Slice Hovis lower carb seeded with the tasty salmon one pate from Sainsbury's. Tassimo Americano grande with a dash of cream.
L. Was out in search of more sellotape , gift cards and some bits and bobs I didn't get yesterday so I succumbed to one of Tescos New Yorker sausages.
D. Campari and soda
Hubbys **** a leekie soup.
Chicken stock base and he's added onion, carrot, leek , celery, parsley and shredded chicken that he used for the stock. Some barley and to garnish some shredded prunes.
Main smoked haddock kedgeree. Everyone else will have it made with long grain rice. Mine is cauliflower rice. Soften chopped onion in butter with turmeric and curry powder. Poach the haddock in milk with bayleaf. Flake the fish when cooked. Add the rice to the onion / curry mix and cook using a mix of fish stock and vegetable stock. Boil a number of eggs (I've done 6) then cool and quarter. I then add a little double cream to the rice , slowly heat then mix through chopped coriander, parsley and gently fold in the flaked fish and egg quarters. Serve immediately.
Low carb Chocolate Pear cake with brandy cream. Kenwood is getting an outing for this.

@Goonergal -- do you see a difference in your blood sugars when you fast?.

Yes, I do - and that was the initial reason for starting to do it. My levels are pretty good anyway now, so the levels when fasting are only lower by a little, but enough to notice. Generally my FBG is a bit lower when fasting and I get down lower during the day: pre-dinner is usually around 4.0 and high 3s are not unusual.

Recently I did an experiment with 2 full weeks of one meal a day (dinner) and compared it to the previous 2 weeks of my normal regime. Blood sugars averaged 4.8 in the fasting weeks, compared to 5.0 in the previous weeks. However in the second week of fasting the average was 4.6.

Weight loss was also better when fasting and that is my main motivation for it now as it’s getting harder to lose as I have less to lose!

Thanks so much for the information, @Goonergal. Simply fascinating. Sometimes, I also end up fasting -- when I am busy after getting up and have to rush to work, but nothing as organized as you. I then also tend to see somewhat lower blood sugar levels probably in the same neighborhood as you. Anyway, congrats -- your levels are really, really excellent.

How much more weight do you still want to lose?

I have never heard of a chocolate pear sponge, but it really sounds great. Would you mind sharing the recipe? Also, I would really like to hear how it turned out.

Not sure. I’m just under a BMI of 25, so a “normal” weight, but still have quite a lot of fat around my abdomen. I want to get rid of as much of that as possible as I think it indicates insulin resistance and remaining fat around my liver/pancreas. It’s coming off but very slowly! Have started some resistance training at the gym to try and help.

I find it difficult sometimes to know which of the tummy fat is subcutaneous fat and which is visceral fat. I hope that most of the fat that is left for me is just below the skin -- but to be honest I have no way of knowing. When I was in hospital, they did all the necessary tests to diagnose fatty liver and fatty pancreas, but no one seems to interested in conducting any tests to see if the issues are resolved. It is frustrating, to be honest, to be working in the dark.

Do you have a scale that tells you your level of visceral fat?

By the look of the mix it may be quite dense but I'll let you know. I used to make chocolate pear sponge a lot with a minty , chocolate top but this could be an acceptable substitute.
 
Wonderful, @maglil55. This really looks yummy. (Sorry had missed the link before). I will definitely try the cake during the holidays.
Recipe didnt have a temperature so I've put it in at 170c Fan oven and we'll see what happens. Think I could have used a smaller springform tin but again we'll see what happens. If it is too dense I will make it again but I'll change the recipe to a whisked sponge by separating the eggs and whisking the whites into peaks and folding the flour mix and the whites into the mix. It may not be dense enough to keep the pears on top like that but we'll try.
I was like a kid again licking the cake mix of my fingers once I'd scraped out the bowl. The mix tastes good and my new Kenwood is a beast of a machine! Hubby has got me the folding tool, blender and dicer for my Christmas.
I'm going to make the low carb black forest gateaux again to take to my brothers and the folding tool will be invaluable for that. I'll make it Christmas Eve to give the cherries a chance to soak up the kirsch.

I gave it 40 mins at 170c. Might want to take it up a notch to 180c and 35 mins. Springform Tin was fine. The cake rises and is not dense at all. It looks like the photo.

I agree. My scales show body fat percentage but not visceral fat - not sure how that would even work.
 
The only sure was is an MRI but that costs. Found this though. They admit it's not accurate but will give you an idea. It was quite an interesting article until I got to the end and they started on no carb fad diets but apart from that interesting.

Thanks. That is interesting. Checked out my waist to hip ratio (using measurements taken last week) and it’s 0.86 so not good! I’ll try the measuring standing up/lying down next time I measure.
 
So, a third fasting day in a row. No breakfast or lunch.

Dinner was brined chicken with cauliflower cheese followed by chocolate chia pudding with cream.

Planning at least a snack at lunchtime tomorrow followed by another 3 fasting days in an attempt to lose the remaining 1.3kg I need to lose to get to the initial target I set before Christmas.
 
Good morning all.

Sunday ...

Breakfast: Two double decaffeinated espressos with cream and xylitol. Tuna sashimi with homemade low-carb dip (lime, low-carb honey, soy sauce, mustard, macadamia oil). A small piece of quiche. A cornsalad with Caesar's dressing and parmesan.

Lunch: Nothing.

Dinner: Half a low carb roll (fresh out of the oven) with butter, half a low-carb roll with cream cheese and beef salami. A piece of cheese cake.

Late night snack: A piece of low carb flatbread with tartar and mayonnaise.

Edited because I forgot to include the salad for breakfast.

Lunch: KFC Chicken & Large Fries (again)

Dinner: Large Fish & Very Large Chips with lots of ketchup and very mushy peas, baked beans and mash!

Yum yum yum !!!

Snacks: Chocolates, Ice Cream, Crisps

Drinks: Pepsi, Coke, lots of fruit juices and beer!

It’s Xmas that’s why!

Well bed 4.5 FBG 3.2 - yes you saw that right. I did a double take and a double jab to make sure. Felt fine but noticed I was in the 3's all night. Highest I've had so far today is 5.9.

D. **** a leekie soup again and another bit of that chocolate pear cake.
Keeping an eye on my BGs. If the low readings keep up I think I might need another medication reduction but we'll see.
 
B nothing but drinks
Brunch mid morning 1 poached egg 1 toast and butter 3 mushrooms cooked in butter and little olive oil cup tea
Evening Meal 2 portions of salmon baked in oven with parsley roasted veg with bacon
My BG has barely moved from this morning 5.25 am BG 5.7, 12.30 pm 2 hours after brunch BG 5.7
Evening Meal before food BG 6.5, 2 hours after meal BG 7.1 really pleased with these readings! K
