What have you eaten today? (Low carb forum)

@maglil55 glad your sister’s improving, infections must be quite scary when on chemo.

@shelley262 pleased to hear you had a calmer day.

I had a lovely day, no 2 daughter made breakfast: scrambled eggs, smoked salmon and avocado.

Took dog out for long wet walk, no lunch but coffee and birthday cake ( leftover choc olive oil cake) when we got back.

D: went to a gastro pub that does exotic meat. I had small buffalo steak and mouflon ( some kind of mountain goat) both very good. Asked for extra salad instead of chips and got 2 huge bowls full. 2 glasses shiraz with it. Fabulous.
All too full for pud but had a bit of cheese when we got back.
 
Bed 7.7 FBG was also 7.7. Can you get Evening Phenomenon as well as DP? BGs are fine all day now apart from DP and this rise late at night a good 4 hours after food. Comes down again quite quickly.
B. 2 scrambled eggs with parsley and a slice of smoked salmon. Tassimo Americano grande with a dash of cream.
L. Didn't intend to have lunch but 1 hour in soft play drove me to it. In fact alcohol would have been better! The other half of the Diet Doctor Italian Keto plate.
D. DD tuna melt with salad. Made this before. It's a huge portion and delicious. I'll be reducing the portion by half.

Hello all.

Again higher fasting blood sugars today. Might be increasing insulin resistance as I have not exercised for about 3 weeks now due to the flu. Hope to get back to exercising soon.

Btw, I measured blood sugar levels after having the coffee-caramel flan today and the little bit of burned sugar wasn't a problem. I started at 5.3 and one hour later blood sugars were 5.2. So, it will stay on the approved list.

Today ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Late lunch: Coffee-caramel flan, one hour later a wiener sausage, a DD keto roll with mayo and beef salami.

Early dinner: A small piece of T-bone steak (about 100g), about 50g of Explore Cuisine mung bean edamame fettuccine with pesto Genovese and homemade low-carb cole slaw. The last flan and a glass of red wine.

Oh I remember soft play stress! You did well not to head straight for the gin.

The tuna melt looks great, definitely on our menu this week.

Hope you start to feel fitter soon @ziggy_w it’s really dragging on isn’t it? You’ve done really well to stay so positive.

B: coconut porridge, few raspberries and cream

L: smoked mackerel, rocket, avocado and boiled egg with apple cider vinegar dressing.

4pm ish - always my weakest time - handful of hazelnuts, not weighed, then another, then 5 Hotel Choc buttons, then thankfully got a grip.

D: pate on lettuce leaves.
Chicken thigh cooked in creamy mushroom sauce. Cauli rice and spinach.

Less than 29g carbs today according to my Carbs & Cals app but a staggering 3,000 calories! I don’t usually look at the calories but think I’d better go back and dissect this, hopefully Ive just written a quantity in wrong somewhere.

Lunch: cold roast chicken, raw cauliflower and broccoli with Caesar sauce followed by Greek yoghurt and raspberries.
Mid-afternoon: Hartleys 10cal jelly and a black coffee.
Dinner: bolognese with butternut squashetti (so much prettier than spaghetti!) followed by Oppo chocolate and hazelnut with strawberries.
 
Hi all stressful day today and was hoping my potato salad resistant starch experiment would work but it put my bloods up by one point after two hours not horrendous but they were already highish from stress - difficult long motorway journey seemed to be stuck forever on way - so normally would be a low rise if any after a relaxing meal so think it’s off the menu - mind you it’s quite a faf boiling them three times and maybe needed even more boiling! Will also see what fbg is like in the morning.

Sounds like you really deserved the prosecco! I travel down to Cornwall quite often to visit no1 daughter and I’m with you on the frustrations of long motorway journeys.
Hope your mum is ok, bet she was pleased to see you.

Thank you for asking - She’s not brilliant looks like another UTI is brewing but she’s an 87 year old diabetic with failing kidneys and just dosent drink enough fluids like many elderly folk - so it’s difficult! Med appt first thing and then shopping trip for new shoes for her - hoping for a low carb lunch out with her if she’s well enough. Then pm lots of practical jobs that are needed that she can no longer deal with.

Life comes full circle doesn’t it? We end up caring for our parents as if they were our children.
It Can be difficult and frustrating at times I know. I lost my dad 4 yrs ago, he was a hopeless diabetic but died of pancreatic cancer in the end and I wish I hadn’t nagged him so much about his diet now. ( did absolutely no good)

I thought that was on a bed of cheese. That would also be a marvellous meal :)
 
Not bad so far and I think I beat the liver dump
boiled egg and a ryvita (yuk but I needed the carb)
lunch: pork burger with mooli and wasabi salad................ lush, anyone want the recipe?
supper: not eaten as yet but sole in white wine with leeks, might even have a little celeriac
 
1pm leftover burger. Much smaller portion than yesterday!
7pm will be half an ox cheek in a v little Guinness and meat juice.

Also 2 squares v dark choc (actually they were a bit of Lindt rabbit ear, but roughly 2 squares worth :D )
Can't help picturing the old joke of the 2 chocolate rabbits one with their tail missing the other with its ears missing. Conversation was "my bottom is sore" " Pardon".

@DJC3 - yes , the agony of soft play. How some find them relaxing I don't know. The younger grandson has been acting up lately and is driving everyone nuts. Thankfully he's at nursery tomorrow so a peaceful day.
The tuna melt is really delicious. Another of Diet Doctors really good recipes. The Oopsie bread it is on keeps for a couple of days in the fridge too. I wrap the excess Oopsie in individual bits of greaseproof. It makes great sandwiches. I'm sure I posted a photo of one of my chicken and avocado salad sandwiches on Oopsie a while ago.

D. DD chorizo sausage with creamed cabbage. This is another really good DD recipe and so easy. I use the Matteson version of the chorizo.
