What have you eaten today? (Low carb forum)

Looks good. How do you get the file size of your photos so small?
Hi I tend to make the original smaller by emailing the photo to myself in small size as my iPad then does it automatically to send it! I then use that photo! Bit convoluted but I know it works for me. I have seen others use apps and I’ve used software in the past but this is quicker for me! Good luck would be good to see your rolls.
 
Hi all. Still enjoying the sunshine. Love it when I can kick about in shorts and t-shirt.

Lunch - at cafe near the stadium. 2 rashers bacon, 2 fried eggs, 1 small, likely carby sausage. Abandoned the tomatoes after one bite as tasted too sweet.

Dinner - pan fried sea bass fillet with cauliflower cheese followed by Oppo vanilla ice cream with cream and raspberries. Raspberries went all mushy and it tasted like raspberry ripple. Delicious. The evening has now taken on a decidedly choclatey flavour: 5 Hotel Chocolat 100% buttons followed by 1 square of Willie’s Pure Gold 100% (the squares are very large at 32.5g).

@shelley262 I found a beginners Pilate class nearby and have signed up to a free taster session tomorrow evening, so will let you know how it goes.

Breakfast bacon egg and mushrooms fried in coconut oil
Lunch cheese and celery followed by my first slice of low carb coffee and walnut cake - tastes really naughty and OH has just helped himself to a second slice so must be good even for regular high carb cake eaters!
Dinner roast belly pork and cauli mash with braised celery, followed by last slice of lemon drizzle warm with cream.
Planning glass of wine.
Despite my two! Slices of cake my bloods today are much lower than normal - maybe the pleasure of cake eating!
 
@shelley262 the cake looks delicious. I did intend to do some baking this weekend but somehow didnt get round to it. Your photo has inspired me though.

@maglil55 congrats on the not hollow rolls. I haven’t made them yet but will follow your tips when I do.

@Goonergal good luck at pilates, I managed not to fall over this week but my friend keeled over completely at yoga on Mon during a kneeling pose-Very hard to concentrate when there’s a loud thump and a lot of chortling going on next to you!

Managed a bit of housework and gardening today which helped to keep numbers under control.

B: coconut porridge with 5 raspberries and 10ml cream. Still ended up with pp bg of 7.0 which is what prompted the vigorous vacuuming.

L: 1/2 avocado, 80g prawns, garlic mayo
Felt too lazy even for lazy mousse so had a small pot of clotted cream ( M&S do individual 40g pots sold in pairs. 1g carb each) with 5 HC 100% buttons to dip and scoop it up with. Heavenly but a bit messy, wouldn’t eat this in company!

D: BBQ again! Small pork chop, tandoori chicken thigh, asparagus, mushroom and green salad.
Glass of wine.

Worked really well as hope you c@n see. I only made two thirds of the ingredients and made in to a loaf cake which as only two of us like coffee cake seemed sensible!
Also made following adaptations
Erythritol used as sweetner so changed quantities to same as butter as is a like for like sweetner
I added a few drops of stevia as think it makes taste work better erythritol can taste oddly cold! This takes that effect away.
I used @maglil55 s tip to beat up the egg whites and fold in and this worked a treat.
I worked out my two thirds cake is about same carb count as the lemon drizzle slightly less than 2 grams of carb per slice not the figure on recipe maybe it’s the sweetner as erythritol is zero carb.
Husband and I tried it after lunch and it tastes delicious would recommend.
Pleased your rolls worked @maglil55 and weren’t hollow like mine! Once I’ve emptied freezer a bit of low carb bread I must give these another go!
Looks lovely, I remember back in the day (pre diabetes) my friends mum used to make a wonderful coffee and walnut cake for my birthday treat, it was delicious, may have to have a go at this after my holiday

I’ve had a relatively good food day.

Breakfast was a bulletproof coffee

Lunch was a chicken pesto and mozzarella salad from pret. Hubby and I were in town doing some shopping and were almost about to give up on lunch when we wandered into Pret and noticed that everything is wonderfully labelled. So we were able to chose a salad with less than 10g carb.

Dinner was 2 Iceland 100% beer burgers with Edam and Roquefort, a chicken drumstick and a few cornichons.

Today has been a hungry day so I’ve smacked on a babybel, a handful of pork scratchings and a slice of left over fat head pizza.

Today I’ve eaten 12g Carb, 137g fat and 117g protein. Protein is higher than I would like.

Tomorrow will be my 2 week ketoversary and whilst I’m feeling better and my numbers are dropping, my weight has been pretty stable. I’m hoping for some losses over the coming week.
 
Another good day here too, weather wise, not as sunny or warm though, maybe about to get cooler again.

Breakfast was omelette, bacon, mushrooms and 2 slices of livlife bread and butter
Lunch we had out as we were buying a dog carrier to fit in the new car, I had a small chicken Caesar salad minus the croutons
This evening I had a tuna steak oven baked with lemon and pepper butter, cauliflower rice, strawberries and cream

The cake in the link you've posted looks delicious.
The recipe contains something called 'splenda' though. What is this please as I've never heard of it?
I don’t use Splenda it’s a brand name for an artificial sweetner which I don’t like. I swapped it for erythritol which is a natural zero carb sweetner which tends to have no impact on bgs. I also added a few drops of liquid stevia. Stevia is another natural non sugar sweetner that others use. I find @ mix of both is a good taste. If you use granulated erythritol you’ll have to increase quantities you use as it’s a weight for weight sweetner ie you use same amount as you would sugar whereas artificial sweetners like Splenda are super sweet so you need to use less. So I used same amount of erythritol as butter and ground almonds like in a no4mal cake recipe where sugar is used. Hope this helps.
 
Bed 5 FBG 4.9. Had more than a few 3's today so bug had certainly gone. Kept checking to make sure but the Libre was within 0.2.
B. Tassimo Americano grande with a dash of cream. Too busy with No 1 grandsons breakfast. Good wee soul. He didn't emerge until 8am so didn't ruin my one lie in.
L. One of the DD Keto rolls (Not hollow). Next time I'll reduce the water to 1.5 cups and see if that reduces the cooking time

Had the roll with Mortadella.

D. Had a campari and soda tonight. First in a while. Rib eye steak with 3 Santini tomatoes, 1 onion ring, wilted spinach and celeriac chips. Scoop of Halo Top.

@Brunneria - think it may be time for me again to make the cheesy, eggy corned beef thingy as I do have everything in the fridge.

Lunch: sweet chilli chicken curry with cauli rice followed by lemon drizzle cake and cream.
Mid-afternoon an impromptu coffee at the pub by the river with a handbag stock Adonis bar!
Dinner: cold roast chicken, cauli & broccoli salad, pork scratchings and coleslaw followed by another slice of lemon drizzle cake with cream (the last few slices have gone in the freezer now!)

All sounds lovely, I’ve just placed an order for some Adonis bars and their brownies, these are slightly higher in carbs but still low enough for a treat. I’ve ordered them direct from Adonis as I’ve given up trying to find them in shops in my area :cool:

If my local Spar don’t get the Adonis bars in again, (they were selling them off half price last time I was in there). I’ll have to resort to getting them direct or from Amazon
