What have you eaten today? (Low carb forum)

Hi All,

am feeling a bit uncomfortable that you are all crediting me for creating the snack of the century :D

It was @DCUKMod who first suggested that microwave chorizo crisps were fab. And they are. :) (And cheaper than buying ready made from M&S!)

All I did was swap the chorizo (salty, spicy, ever so slightly more dense texture) for salami (salty, less spicy, more porky and somehow a bit crispier)

So thank you dcukmod :D !
 
Your pizza sounds amazing. I finish work tomorrow lunch time, taking half day as it’s my birthday, we fly to Crete on Tuesday, really looking forward to it but am also slightly nervous as this will be my first trip abroad since diagnosis. My second HbA1c test is end of May so the holiday period will be included in my blood test.

Thanks for the acknowledgment, but M&S seem to have invented those babies. I was only inspired by my toodeliciousforwordsbuttootighttodrivethirtymileroundtriptobuythemgene to recreate, with helpful hints for the PretendyPringle variants from the forum.

I haven’t tried the salami option, but can see how they could have wider matches (in terms of dip carrying properties) than the spicier chorizo.

Evening all busy day today working but quite enjoyed - especially as such a wet cold day.
@maglil55 i made a lemon drizzle cake yesterday evening and used your egg method whisking egg whites and folding in at the end and I’d recommend this method it worked even better than last time - delicious
Breakfast one slice of bacon, Waitrose 97% sausage and fried egg
Lunch busy so had slice of low carb lemon cake and coffee
Dinner chilli with olives not beans and slice of livlife bread warmed with garlic butter followed by low carb lemon and lime mousse - there’s a glass of red wine waiting in the wings.
Final bits of decorating on agenda for tomorrow.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch out at Prèt a Manger: small Mexican chicken soup followed by a chocolate coconut bite with Diet Pepsi.
Mid afternoon: orange chia pudding and black coffee.
Dinner: cold roast chicken, salad of cauli, broccoli and red onion with coleslaw and pork scratchings followed by Breyer cookies and cream ice cream and strawberries.

I’ve had a decadent day with 2 meals I haven’t cooked
B: handful of brazil nuts and an individual portion of M&S Cornish cove cheddar

L: at Ask with friends ( rearranged from last week) had the chicken and pancetta salad with olive oil instead of the dressing that comes with it. Coffee and cream ( again forgot I’m trying to avoid it, but again no ill effects yippee)

D: takeaway curry chicken tikka starter portion. Spoonful of saag paneer and cauli curry.

I had an odd day. So much food!
My day off, so
B: at the cafe that lets the dogs sit under the table and has food for them. Today I had bacon and egg. Mr B had porridge. And the mutts had scrambled egg (£1.20 for enough for both). We all thoroughly enjoyed our breakfasts.
L: sml portion baked salmon
D: pork ribs. This batch of ribs was the leanest I have ever seen, so I made a judgement call and stirred a tablespoon of mayo into the spices. Worked like a charm to stop the meat drying out. Very succulent. Will have to try and remember this for next time.

Lunch - M&S Serrano ham and manchego cheese rollitos

Dinner - out with my Dad and his wife at excellent local Turkish restaurant. Cacik with cucumber instead of bread for dipping; mixed grill with 1 small lamb rib, 1 kofte skewer, 2 cubes lamb shish, 1 cube chicken shish, 1 tiny lamb chop and 2 small chicken wings with salad. Dessert at my place - chocolate olive oil cake with cream: so good I had two portions.

If I’m testing that meal, I test two hours after first bite of the main course out, but then the ‘meal’ as a whole lasts so much longer, having a chat at the table in the restaurant, travelling home and then prepping the dessert. The after test might then only be one hour after first bite of dessert so I guess it’s skewing the result?

Oh my that sounds like a great way to end your fast, and very well deserved.

Guess so, but you still get a sense of what’s going on as any major spikes would show at that point, although the fat content of my meals means I’m usually higher after 2 hours than 1.

Maybe I should skip testing those nights, but I promise not to take advantage and have a big helping of chips with dinner!
