Welcome back to this thread @eggs11 - btw just watched The film the magic pill that you recommend - wow it was inspirational I watched it on Netflix but it’s also on YouTube. I’d love to get my adult autistic son to go keto but it’s hard to persuade a 40 year autistic man to change his diet when he will only eat a few items. I wish I’d had this info when he was little he also has epilepsy, asthma and mental health difficulties all of which seem to benefit from a keto diet. Will keep trying as know it works for me too.I haven't posted on here for a while as I my menus can be very similar each day - however today I made a couple of new things;
Breakfast - scrambled eggs, 1 oatcake
Lunch - tuna and avocado salad - a new recipe I tried, plus almond soya yogurt
Dinner - aubergine and halloumi curry with spinach and cashew nuts - another recipe I'd never tried before and it was AMAZING, so tasty, - got the second portion in the fridge for tomorrow.

Why not test it @nd see what your personal response is? I’ve personally found that it hasn’t made any impact on my progress. I generally only drink one glass unless celebration and usually only Thursday to Sunday to keep units down for my general health and I have found if anything my fbg are lower especially after red wine. Stress affects my bgs significantly and alcohol relaxes me after a busy day. Wine and spirits with carb free mixers are very low carb 2 g of carb for glass of wine See info on diet doctor.Good evening everyone, hope you're enjoying your weekends!
B: Slept in and skipped breakfast - well, it is the weekend!
L: Low carb bagel with smoked salmon and cream cheese with spinach
D: Chicken and cheese wrapped in bacon, 2 x eggs, garlic broccoli rice, lettuce, cucumber, avocado and halloumi.
Snacks: CiaoCarb ProtoToast Cocoa and a mini Peperami.
I've noticed a few of you mentioning wine - I've yet to try any alcohol since starting measuring my sugars. Is wine generally a safe option?
Well done @Goonergal on your recovery from the cake it would have been interesting to see how quickly it zapped back if you’d been monitoring more frequently. Would imagine a normal person would have a big jump after a slice of proper cake like that but good that you got back to a low reading later. You’re clearly less insulin resistantMorning all. Very busy day yesterday with my Dad and his wife and didn’t get to visit the forum at all once I left home in the morning.
An unexpected carb experiment yesterday. Was planning on a 23/1 fast, but one of our activities yesterday was taking my dad to see some very old friends of his that he (and I) had not seen in many years. Successfully dodged orange juice and lemonade, but a large Victoria sponge was produced and a plate with generous slice put in my hand! Made on the spot decision to try it. Didn’t taste too sweet and the filling was at least real cream as well as jam, so thought it might not be too bad. Wrong! Didn’t test beforehand (for various reasons my Dad does not know I am diabetic), but a couple of hours earlier I was at 4.2 and hadn’t consumed anything since, so took that as baseline. 1 hour later 9.3!!!
So yesterday’s menu was
Afternoon tea - Victoria sponge
Dinner - at local restaurant. Small pork belly slice = confit. Absolutely delicious. Skipped the accompanying rocket as drenched in balsamic vinegar. Skate wing with spinach and wild garlic. Dessert at home chocolate olive oil cake with cream. Back to sanity 2 hours later with a reading of 4.6. My ketones are also slightly up - the morning after I broke my fast they were 2.8. This morning 3.1.
Dad and wife having hotel breakfast and leaving around lunchtime so should be able to get in a 23/1 fast today and return to normal.
@ianpspurs - glad to see you on here and interesting discussions. Do you have a Lidl near you? I discovered that they sell ‘chia shots’ in a box of 21 individually wrapped 5g portions - thinking they’ll be useful when out and about.

Thanks for the welcome @Goonergal the meal out sounds lovey so I hope you enjoyed it. We do have a Lidl within 10 miles and I have seen the chia shots. I tend now to buy large bags of chia seeds, flaxseeds, almonds an walnuts from The Grape Tree. Probably not really fitting my clean eating idea but I am looking carefully at planting my own almond and walnut trees. If I could tolerate maple syrup etc I would probably go full on Hemsley and Hemsley. After my next review in June I might use the initial "free hit" period to test a few recipes as everything we have tried has been very much to our liking. I'm a big fan of Halo Top cookie dough ice cream (and the mint ) as you may have noticedJust one big meal today.
A rack of ribs and some GF sausages.
Then, out of curiosity, a little Halo choc icecream. Rather bland, I thought. Adding cream helped a bit.
Whisked sponge method is an old trick. Goes back some 40 odd years in my case when my Mum bought me the Cordon Bleu Cookery Course and I discovered Russian Tipsy Cake - a booze laden sponge that used this method and was stuffed with whipped cream and raspberries. The sponge was so light and I've used the method many many times since.Evening all busy day today working but quite enjoyed - especially as such a wet cold day.
@maglil55 i made a lemon drizzle cake yesterday evening and used your egg method whisking egg whites and folding in at the end and I’d recommend this method it worked even better than last time - delicious
Breakfast one slice of bacon, Waitrose 97% sausage and fried egg
Lunch busy so had slice of low carb lemon cake and coffee
Dinner chilli with olives not beans and slice of livlife bread warmed with garlic butter followed by low carb lemon and lime mousse - there’s a glass of red wine waiting in the wings.
Final bits of decorating on agenda for tomorrow.
@shelley262 That was just the base. We also combine cream cheese and greek yogurt (with sweetner) to actually make a cheesecake. My son and his wife like this cheesecake more than any other. Top with fruit of choice - I like home grown strawberries or raspberries. I would leave psylilum husk powder out of this for other people! BTW, is this the type of thing inulin could appear in? I know Tom Kerridge uses it to make caramel. We are going to try make a version of millionaires shortbread with the cheesecake base and inulin/low carb caramel. I did use that base with 100% chocolate and cream to make high fibre bars which were very good.Evening all

Hadn’t heard of inulin being used for caramel sounds really interesting do you have the recipe or a link please? Several here would be interested in this. You clearly are interested in developing creative recipes your cheesecake sounds really good and always love using my psyllium husk. I tend to add inulin in small quantities to a few baking recipes. Perfect @ianpspurs looks amazing - now I didn’t know that inulin is the only sugar alternative that actually caramelises you learn something every day @ziggy you may be interested for your coffee and caramel flan I feel a creme caramel may be on the list too!
