What have you eaten today? (Low carb forum)

We always have Tabasco in the house, but otherwise I tend to use Uncle Frank's Red Hot Original or Sriracha variants. Most of the Uncle Frank's stuff is very LC. There are very few hidden bits in there.

When looking at condiments, I always try to remember that for something like a hot chilli sauce, the amount I will actually use is likely to be modest, by its nature, so if it was carbier, I'd likely still be relatively relaxed about it, as I'll be using a few drops, rather than many spoonsful.

Good point about the quantity used. Thanks I’ll look out for Frank’s - the ‘turkey cups’ recipe on the link you sent looks good.
 
Do any of you know which is the best low carb cocoa powder?
I’ve run out and don’t want to trawl round all the supermarkets checking labels when I know there is such a mine of information right here.

The one they sell in Lidl is the lowest carb I’ve found so far at about 8.7g per 100g. Otherwise in the baking section look for Food Thoughts Fair Trade Organic Cocoa, next best I have found (12. something), otherwise good old Bournville is not bad at 14g.

I use Uncle Franks too but as you say you also use very little of this one as well so it’s minimal impact for a lot of flavour. Love idea of adding lines too thank you

@Goonergal was it you who mentioned some other Lidl goodies? Chia shots? I can’t remember but there were definitely things I meant to look out for.
 
Hi folks. On the home made caramel trail. Found a paper about hard toffee and non sugar ingredients and don't know if it is helpful but here goes:
Abstract
A low cariogenic, low-laxation hard candy product having acceptable clarity and cold flow stability, contains a bulking sweetener agent, comprising isomaltulose, trehalose, erythritol or combinations thereof and a doctoring agent, comprising inulin, indigestible dextrin, sucromalt, polydextrose, or combinations thereof; wherein the bulking sweetener agent to doctoring agent ratio is 70/30 to 40/60 dry solids wt. %.

Was basically looking for more info on using inulin. Seems the ratio of inulin to say erithritol is key the 70/30 or 40/60 part.

@DJC3 Is the cocoa powder for baking or drinking? If drinking, I just melt 100% chocolate in almond milk and cream and add sweetner of choice but I assume everyone else does so not sure if useful. I do have 2.5 kgs of 100% Callebaut drops to use though:)

Mostly for baking and chocolate chia pudding.
I haven’t had a hot chocolate to drink for ages. melting 100% chocolate ( I have some Hotel Chocolate buttons) in almond milk and cream is a great idea though and one I will certainly be pinching. Thanks

Your caramel research sounds interesting, I remember you made some delicious sounding chocolate eggs at Easter too.

@Goonergal I found it! Nearly missed it however as it was with the baking stuff and I was looking in the tea/ coffee aisle. It was worth the trip, got lots of other goodies too.

Hi, yes chia shots (box of 21 individually wrapped 5g sachets). Can’t remember what else - did see avocado oil, I think.
 
Hi all

Feeling much better today and appetite a bit more normal - not quite sure what was going on yesterday.

Breakfast - none

Lunch - bag of pork crunch, peperami

Dinner - brined pork chop with cauliflower cheese followed by 3 Hotel Chocolat 100% buttons

All this talk of hot chocolate is making me want some - @ianpspurs melting 100% chocolate is a great idea.
 
Last night’s overindulgance (ribs AND cheesy mince) led to the first indigestion I have had since going carnivore. I’d completely forgotten what it was like! Oh well, lesson learned. :D I guess i still (5 months after that tummy bug) need to avoid overburdening my gastro intestinal tract.

Today has been
1pm a v v sml portion of pulled pork (to test the tum)
5pm salami chips
7pm will be goatsmilk yog and cream

B: 1 x Sports Direct mug tea 30 mls double cream

MMS: 2 x SD mug tea 30 mls double cream

L: 2 x SD mug tea almond milk

MAS: 1 pint water with cider vinegar and Himalayan salt

24 Hr fast up (I am not prepared to accept a 5.7 fbg without doing something)

D: Avocado; 1 tin Mackerel in Olive oil; Homemade mayo; Chia seeds; Spring Onions; ; Cucumber; Walnuts; SD mug tea x 2 Almond milk

MMS = mid morning snack; MAS = mid afternoon snack

@Goonergal glad to see you are feeling better take cafe. (Please don't tell any other Spurs fan you may come across)

Bed 6.8 FBG 7.1 but no nasty DP today.
B. 2 rashers back bacon, fried egg and a GF sausage. Tassimo Americano grande with a dash of cream.
L. Salami crisps - gee they're good.
D. A very adapted DD Keto stir fry with broccoli.
Added to the mix, a few strips of mini red and orange peppers, peas, beansprouts, couple of mushrooms and Oomi noodles. Wet it down with a little stock and the Tamari Soy ....oh and sesame seeds. Had a wee prosecco as well. No 2 grandson was heinous today!
Got into Aqua for tomorrow from waiting list. In on Thursday as well. Car in the garage tomorrow so bus it is. Will fit a gym visit in too.

An annoying day here as bg refused to drop below 6 until 6pm!!!

B: peppermint tea

L: leftover salmon fillet from yesterday with rocket and avocado salad. Acv and olive oil dressing.

D: DD recipe chicken and pesto bake thing. A bit too salty for me but everyone else loved it. Had it with buttered cavolo nero. Strawberries and extra thick cream for pud.

@shelley262 keeping my fingers crossed for your A1c test tomorrow, but you don’t need luck you’ve worked so hard.
 
B. Multigrain chunky porridge (28g carb) made with almond milk and cinnamon topped with very small piece of banana and pecans, black tea, black coffee.
Followed by one and half hours of rapid walking.
L. M and S vegetable samosa, 4 crackers with olive tapenade.

Treat. Invented a sort of Cosmopolitan. Vodka, sugar-free cranberry and raspberry juice, lime juice. Lovely!
D. Gazpacho, followed by roast pepper, cauliflower, onions, butternut squash, aubergine with garlic, chilli and feta.
Bon appetit! (That's the vodka talking).

Did 18/6 fast today
Lunch cheese and celery followed by thin slice warm lemon cake and cream
Dinner beef casserole with cauliflower cheese followed by lazy chocolate mousse - my first one and really lovely
Now on fast again until after blood test mid morning as includes full lipid panel and others on forum have advised a fast in other posts. Thanks for your wishes @DJC3 what will be will be one can only do ones best.
@ianpspurs - we will all be dreaming of your chocolate mountain! 2.5 kg!
@Mongolia - I enjoy breakfast too and if miss it often have it for lunch as a brunch
