What have you eaten today? (Low carb forum)

Evening everyone
Latish post as I get back from yoga after 8 and I’m always starving. Didn’t fall over so I’m pleased with myself.

B: scrambled egg, smoked salmon and avocado

L: stir fry in coconut oil, marinated tofu, cauli, red pepper and mangetout. Lemon chia pud. This was a fairly carby meal for me, around 10g but I wasn’t expecting such a spike. Went from 5.4 to 7.3 at 2hr. Good thing I didn’t splosh on the soy sauce ( checked label just before and stopped myself in time)

D: salmon with coconut and Indian spices. This was lovely, it was in the paper last weekend, not as a low carb recipe, just happened it was. Had it with asparagus and courgetti. Sugar free jelly and cream afterwards

Hi @DJC3 i use kikkoman soy sauce - just a bit - but it’s low carb 3.2g per 100mls and whole bottle is only 150mls. Much lower than the other soy sauces out there. Supermarket own brands are even higher in carbs than the others. We have to become experts!
 
An eating day

12.30 chorizo crisps with cream cheese, followed by a tablespoon of Halo smothered in double cream.
6pm (after a brisk dog walk that was a little too brisk 8n the mutt’s opinions!) a small portion of last night’s mince n cheese, followed by pork ribs, to meet an enormous appetite.

Am stuffed now!
 
Hi @DJC3 i use kikkoman soy sauce - just a bit - but it’s low carb 3.2g per 100mls and whole bottle is only 150mls. Much lower than the other soy sauces out there. Supermarket own brands are even higher in carbs than the others. We have to become experts!
@shelley262 @DJC3 I use Kikkoman as well but I use their Tamari Soy. It's gluten free and even lower in carbs at 2g per 100mls (and no way would you use 100mls). It's readily available in supermarkets - tends to reside with the free from stuff.

Thank you for this will look out for it - love this forum so helpful. It’s a problem that supermarkets put things in different places you need hours to research sometimes! I like online shopping for this reason but helps if you have a recommended product to search for either way.

Thanks Shelley. I wouldn’t have thought to check other brands but I’ve seen Kikkoman in Sainsburys. The stir fry was ok but would have been better with a splash.

Just noticed your post too @maglil55 Thank you for the tip, I’ll hunt some out.

I find coconut milk and coconut cream in 2 or 3 different areas of the supermarket too - and at different prices!
 
They are high protein bars sweetened with polyols (excessive consumption may have a laxative effect! ;)).
Three different flavours, but expensive! Although on offer, four for the price of three in Tesco just now.

I noticed these were on offer last week and got some of the chocolate brownie ones. Not bad at all when you need a chocolate fix!
 
Evening all! My sugars have been strangely high today, I am hoping tomorrow they will even out otherwise I may have to go for a 24 hour fast.

B: Decaf coffee with Cadbury Highlights sachet and double cream
L: Low carb bagel with ham, salami and pepperoni with lettuce and cucumber (not a bad substitute for Subway's Italian BMT!)
D: Two sausage patties topped with bacon, brie, egg and avocado.
Snacks: A slice of CiaoCarb cocoa ProtoToast.

I'm really enjoying the low carb bagels for lunch (from lowcarbmegastore). As a massive bread addict they're making this whole low carb journey a little easier! They're expensive but I think they will become a regular staple of mine.
 
Hi all hectic day today so did 23/1 Intermittent Fasting as good opportunity
Dinner chicken stir fry followed by slice low carb lemon cake and cream

@maglil55 re dd rolls query - last time I used fibre flour for a trial this time used two thirds almond flour and one third seeds ground in coffee grinder I also added some whole seeds

@ianpspurs all these recipe ideas I need to check out the dopamine book! I wondered about adding some inulin to the lemon juice in the drizzle cake @ziggy_w what do you think this may make it crispier and sugary on top? May experiment next time!

Hi everyone, this might be my last post for a week as holiday starts tomorrow. Hopefully as I’m Mediterranean bound diet will be fairly easy to stick with.
I haven’t eaten a great deal today, started with 2 slices of LivLife toast with butter, visit to Trafford Centre in Manchester, not hungry but had a latte and small bar of dark chocolate at cafe Nero.
Microwaved some salami slices when we got back from shopping trip and had a small salad of tomato, lettuce and cucumber with a lamb steak.
Later I had an Adonis chocolate brownie. readings have been 6.2 this morning, 5.2 before evening meal 5.4 after 3 hrs and 4.6 at bedtime
Hope everyone has a good week and I hope you are feeling better @Rachox

Have a fab holiday jayney. I’m sure the food will be superb and very healthy, but the main thing is to enjoy it. Have fun.
 
Do any of you know which is the best low carb cocoa powder?
I’ve run out and don’t want to trawl round all the supermarkets checking labels when I know there is such a mine of information right here.

@DJC3 - I'm gluten-free so have just got myself used to not having soy sauce on stir fries. These days I tend to have some lime juice and a splosh of hot chilli sauce.

That sounds good! I usually have limes ( prefer them to lemon in gin). Which chilli sauce do you use? I’d imagine there are a lot of high carb ones out there.

We always have Tabasco in the house, but otherwise I tend to use Uncle Frank's Red Hot Original or Sriracha variants. Most of the Uncle Frank's stuff is very LC. There are very few hidden bits in there.

When looking at condiments, I always try to remember that for something like a hot chilli sauce, the amount I will actually use is likely to be modest, by its nature, so if it was carbier, I'd likely still be relatively relaxed about it, as I'll be using a few drops, rather than many spoonsful.
