My wife also thought it might be good in small pieces with strawberries in our homemade ice cream. I think that may very soon have a trial run as our strawberries are ripening and I have an HbA1C test and a birthday coming up.I warm it a lot

@ianpspurs green beans were generally packed in salt rather than fermented but I've never tried doing them. I do quince chutney and also quince vodka. I also used to make elderflower cordial but I don't imagine there's a sugar free way of doing it. I might post a question.I know there's no vinegar which is why my dear wife would probably try this method. I think way back in the mists of time, before freezers, relatives preserved green beans in a similar way. We have been bottling tomatoes and some fruit for a few years but lacto fermentation is now in vogue and promises a health dividend as well as a new taste.
@SueJB We have made quince jelly as my wife likes it very much. A customer of hers used to give her huge bags full for organising his insurance. Apparently it is quite the thing with cold goose for Boxing Day. (We do like goose as a seasonal tradition but always warm). We planted a quince tree which is yet to bear fruit but there are a few growers in the area. It is amazing stuff the cake just had some myself and I’m sure taste would be similar with corn oil but probably best to stick in future with the healthy fats of olive oil or advocado oil when you’ve had chance to stock up. Lots of articles on diet dr about avoiding manufactured oils see this for startersHi @shelley262 just a quick up date, OMG the chocolate cake is delicious, I had a slice for my mid morning snack, couldn't wait any longer. I used corn oil as that was what I had and I make a cake for my partner that uses this with yoghurt so assumed it would work, it seems to have, its very moist and I wouldn't know it wasn't a really naughty traditional chocolate cake. I can't wait to try it warm with some cream

Well done a lovely start to your weekend.Evening all - well my private cholesterol results are in! Can’t believe how quick they were and very encouraging in direction if not total! Last test from nhs was not full fasted lipids so can only compare a few of the results. Total cholesterol was down from 13.7 to 10.8 - non HDL cholesterol down from 11.4 to 8.65,- HDL similar was 2.3 now 2.2 and trigs - not done last time - were normal at 1.2 - total ratio of LDL to HDL was down from 6 to 4.93.(it should be below 4) I’ve only made the changes over last few weeks so clearly taking the right route.I need to up my HDL, lower my LDL and improve my ratio. So a bit more of what I’ve already changed to date to come! I’m planning to temporarily rapidly reduce a lot of my dairy after today and take up much more tea as like it black and weak and prefer coffee with cream. I’m planning to try and keep my fats up with nuts, olive oil advocados etc all good and filling and good for HDL.
Meanwhile today
Breakfast boiled egg and one slice low carb bread
Lunch cheese and nuts followed by one slice choc olive oil cake
Dinner slow cooked beef with cauliflower cheese and glass of wine and a few walnuts.
Yes Shelley you are probably right about the choice of oil, I was curious to try it.
