What have you eaten today? (Low carb forum)

Had a funny couple of days food wise . At a funeral yesterday so just a slice of hovis low carb bread with peanut butter before we left . Whilst at the gathering after picked at some sausage rolls picking out the sausage and also scrapping off the filling from a piece of quiche . I put my napkin over the debris I left on the plate !
Today had an early morning appointment with the diabetic doctor the less said about that the better !
Then met my friend for coffee and resisted anything to eat. When I got home I was starving so made myself poached eggs with avocado on the side , followed by a few strawberries. Tonight my husband wanted pasta so made him this and then made myself a frittata using up spring onions streaky bacon parmesan shavings and a few runner beans and I must say it was delicious.
Raspberries and clotted cream for dessert later.

When my oh\ family wants a pasta meal I use normal pasta for them and 30g of bean pasta ( explore cuisine ) for me - it’s very low carb and never spikes me means family can have one of their faves and so can I ! Don’t know if you’ve ever tried it? You did well at the funeral buffet - buffets are the hardest for us well done especially at an emotional event.

I’ve never been a pasta lover so even if I could eat it I wouldn’t if you know what I mean . I did try the courgetti spaghetti once but I like them more as a normal vegetable. I don’t like normal rice but don’t mind the cauliflower version.
 
Today was the first of this heat wave to be humid and require fans anywhere. As a result food plan was derailed this evening. After a really good exercise session this afternoon I couldn't face preparing or eating much . I had planned to have a chicken mayo salad but that seemed like hard work to eat. Menu below:

7.15 - 2 pints Lemon Green tea with lemon slices and sweetner
10.00 mug black French vanilla and Waitrose house blend filter coffee with sweetner; Fluffy omlette (3 whole eggs; 2 egg whites; 50 gms cheddar cheese; 150 gms mushrooms;) 15 gms reduced salt and sugar tomato sauce
11.30 small mug black FV coffee sans sweetner - drinkable without sweetner but not a keeper
1.25 2 pints Lemon green tea with Lemon slices and sweetner
14.55: 100 gms Waitrose deli coleslaw; 2 slices Brunswick Ham; 2 slices Tongue; 30 gms pea shoots; 30 gms watercress; 1 wonky avocado; 30 gms Chia seeds;6 gms psyllium husk powder; 1,5 tbls Hellman’s mayonnaise; 2 Pints Water
17.00: Water - lots after stationary cycle; diet coke
19.10 High fibre chocolate bar broken up with 2 dessert spoons extra thick jersey cream;
 
Love this site already, thank you all for helpful info, will try celeriac soon. What's peoples opinions on lower carb and high fat diet with a good mix of protein, sounds too good to be true. Have just indulged in rhubarb, strawberries and thick cream yum!! So, I guess calories will be higher, I am very confused but started being careful from Monday lost 5lb yesterday and gained 1/2lb today so maybe I am on the right track. Absolutely shocked though as to the amount of carbs in a large jaffa orange.
Things will fall into place for you food wise, I use nutrachek to track my carb values, I think @Rachox uses it too.
I’m a recent convert to celeriac but I absolutely love it, hopefully you will to.

@gil2625 A very simple rule of thumb is eat veggies that grow above ground and .5 to 1 gm of protein per kg of body weight or about size of your palm each meal. Healthy fats to fill you - eggs, avocado, lean meat. chicken. cheese with some caution as very calorific. Not perfect but nice and easy. Nuts are good but similar to cheese 28 gms a time (1 oz) would be a good guide. Just my take on things but I am no expert. Also, if your digestive system can stand it lots of fibre perhaps discover flaxseed and chia sees. Drink lots of water. Hope this helps and other forum members please correct any errors I may have made.

@gil2625 you can put chia seeds in yogurt, sprinkle them on salads etc. most supermarkets sell them they very small black/grey seeds. 1 example here https://www.tesco.com/groceries/en-GB/products/290594510 Not recommending these just and example. Hope this helps.

Hi I mean blood glucose ie your sugars taken by finger prick and blood glucose meter two hours after you’ve eaten - essential to find out what number of carbs you can tolerate in a meal. Reading taken before to reading two hours after should never be more than a 2.0 rise but in practice I now aim for 0.5 max rise as the more regular/ flat the reading seems to produce a more reliably low hbaca1 well in my own experience anyway.

I do use Nutrachek to find out carb counts of ingredients but don’t actually use the tracking, I have spreadsheets on my iPad for that. I love a good spreadsheet! I have foods eaten, carb counts, blood sugar readings, blood sugar daily averages, records of MySugr’s HbA1c once a week, daily step counts, weekly weight....ok a bit nerdy but I love a bit of number crunching! :joyful::angelic:
 
Catch up again. Yesterday - Wednesday bed 6.8 FBG 6.3.
Aqua fit and grandson free!
Despite being Grandson free was still rushing about with deliveries and keeping the painters on track in nieces house.
B. Tassimo Americano grande with a dash of cream.
L. Late on Morrison's salmon, cod and prawn koftas, lettuce, mini plum tomatoes, spoonful of M&S whipped cream cheese, 3 walnuts.
D. Prawn cocktail, 1/2 avocado, 3 mini plum tomatoes, last of the fresh anchovies (going to buy more today) , mini mozzarella pearls (too hot for anything else).
Succumbed to Halo Top and 6 raspberries.

Today - Thursday bed 5.7 FBG 7.1. BGs are staying within range but yo yoing up and down within range.
B. Tassimo Americano grande with a dash of cream then off to Aqua fit again.
L. Lo dough finally arrived so I made a ham and cheese toastie with it and really enjoyed it.
Collected the boys and headed to the beach (still really warm but nice breeze at the beach and they have an enclosed beach park). Black coffee from the van at the beach while the boys had slushies.
D. Will be another salad, tuna, prawns , anchovies, lettuce, mini mozzarella pearls, mini plum tomatoes and a boiled egg.

Even persuaded the boys to walk along the beach collecting shells so I don't feel suicidal tonight and they have some colour about them - car full of sand though.

What a great afternoon that sounds. Hope no. 2 is behaving now.

Great control with the funeral buffet. I went to one a couple of months ago and was astonished at the carbi- ness of absolutely everything there. I ended up doing similar to you and breaking food apart to eat the ok bits, then covering my plate with a napkin.

Me too, I like to record things in spreadsheets, I use my nutrachek mainly for carb counting.
 
Hi @gil2625 I don’t think I can add much to the posts already here. I did start fairtly gradually - about 50g/ day carbs, and like @shelley262 I only count carbs - not calories. I now try to keep to 20-30g/ day but I don’t weigh veg - a handful of spinach here or there doesnt seem to make too much difference. Like @ianpspurs says- stick to above ground veg.
I ise the Carbs&cals app to monitor what I eat, there’s a book of the same name if you fancy too, but I think you have now got an app so you’re sorted.
Good luck with it, I’m sure you’ll enjoy this way of eating - it’s been a complete revelation to me and after a lifetime of trying to eat ‘low fat’I love it.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: fried halloumi chips, salad of cauliflower, broccoli and cucumber followed by Greek yoghurt and raspberries.
Mid afternoon: orange chia pudding and black coffee.
Dinner: lamb and mint burger with cauliflower, broccoli and mushroom salad followed by strawberries and salted caramel Oppo.
 
Evening all.
Glad you enjoyed the fluffy omelette @ianpspurs I envy you all those lovely fresh eggs.
B: halloumi, mushrooms, spinach and a poached egg. Coffee with cream. (Worrying story about the halloumi shortage @Rachox !)
L: Trout with asparagus and hollandaise sauce

Snack: sf jelly and a handful of walnuts.

D: pork chop with crispy crumb made of equal amounts crushed pork scratchings and almond flour, with chopped parsley, and lemon rind. With broccoli.

Also had a bottle of champagne in the garden late afternoon as we’d had another chat with the developer who wants to buy our house, and decided to go ahead with it. The neighbours will hate us I know.
