What have you eaten today? (Low carb forum)

Hope good day had by all - apart from lots of other stuff I did loads of baking today ready for OHs 65th party’s this coming Sunday. I had to remind myself lots of times not to lick my fingers as they were full carb products! Lots of family coming over to stay at weekend and for the party on Sunday so a lot to do! Pleased have freezers!
Breakfast one boiled egg and one slice LC bread
Lunch one tin of wild red salmon with seeds followed by half of mini loaf tin lc lemon drizzle with yoghurt
Dinner 3 pork ribs on bed of cabbage followed by one clafoutis and cream
 
Hi PenhuinMum, no the Hensley x 2 recipe is one we have used a fir bit it has eggs and baking power from memory This one has flaxseed and water plus some salt but nothing else. I really like the Hemsley sisters version lots, it freezes well. I actually have both Hemslay books and have tried to adapt several recipes.
Hi Ian very interesting. Do you know how the Helmsley version works out carbswise because I didnt see any nutritional values. I downloaded it online. I might be tempted to buy a book which one of theirs do you find most useful? When you get your recipe tweaked to your satisfaction do tell. I think Mrs P is quite brilliant!

Quick question about the high fibre chocolate bars. Would using ground chia seeds in place of ground flaxseed work? I have some of the former, but not the latter (and no means of grinding my whole flaxseed). Thanks!

Mini loaf mould ordered from Lakeland and to be collected later...

I also ordered a mini loaf mouldyesterday - should arrive tomorrow so I’m looking forward to having a go at these choc bars too.

Hi @PenguinMum My analysis of what went into Hemsley's recipe was this per 100 gms

From what I read about the version we are trying to perfect, about 33% of people have the same problem. Re Mrs P , she produced 3 boys but hasn't done much since:angelic: The Hemsley book The Art of Eating Well has Pablo's Chicken in which is excellent and the flaxseed bread is also in there.
 
A thought @ianpspurs which may not work. But for what it’s worth when baking French bread - a long long time ago - the steam used to help the rise comes from boiling water in a tray on lower shelf in oven so when bread goes in it’s really steamy. Wondered if you made rolls and put directly on shelf above if it would work? Probably pie in sky but thought would run it past you!

Thanks @shelley262 That idea re water had crossed my mind. The recipe video is clear that the high proportion of water and high heat creates steam which makes the loaf rise and gives a crust. About 30-40% of comments on youtube say they have the same problem and nothing seems to solve it for them.

Evening all. @Kingmidas the photo is lovely and the holiday food sounds fantastic.
@shelley262 I had the same test of willpower when making mashed potato for the others yesterday - its so instinctive to have a little taste. Have you invited a lot of guests for the big day?

B: asparagus wrapped in bacon ( snap @jayney27) with a poached egg

L: Ham, avocado, boiled egg and green leaves. 10cal jelly

D: Very nice sage, rosemary and garlic stuffed loin of pork done in the good old IP. Youngest daughter came round to join us ( and brought her washing!) and declared it the nicest pork she’d ever had. Accompanied by garlicy buttery cabbage and cauli cheese. Couple of glasses red wine.
 
@shelley262 you have been busy. I must admit I took easy route and bought piri piri chicken from Lidl, made some lasagne and chicken curry (the old stalwarts)! Luckily my family arent big on sweet stuff but there is always a big bowl of mixed chopped fruit (which I ignore). I hope you and your family have a brilliant time this weekend. As I get older I find these are rhe most important things in life!
 
I very nearly orded it yesterday, but 2.5 kg!!!! I have a very small kitchen here and I’m not sure I have room! Is it the one called cocoa mass?
Yes, that;'s the one. While you were at it you should have ordered the buy 1 get 1 free kgs of inulin and £1 for 500 gns flaxseed.:angelic:

I wouldn’t be without my mini moulds I have one that makes mini loaves which I use for my almond bread, clafoutis and egg bakes and a round one that is divided into wedges, this is good for the zucchini lemon or chocolate olive oil cake as the portion sizes are generous but still keep me within my allowances for carbs per slice. I also have some pretty flower moulds that I have used for peppermint fat bombs.

Lunch: left over cauliflower and broccoli cheese apwith peas and sweetcorn followed by Greek yoghurt and strawberries.
Mid afternoon: white Americans at a coffee shop with raspberry phd bar.
Dinner: cheddar and mushroom omelette with cauliflower, broccoli and yellow pepper salad followed by SF jelly, cream, strawberries and LC chocolate granola.
I’m in an Air bnb tonight waiting to meet my daughter off a late flight before driving home tomorrow and yes, I confess I have coconut porridge ingredients and my favourite saucepan and wooden spoon with me for tomorrow morning! :joyful::hilarious:

Do you buy from Amazon? I think Ive seen you mention Bulk Powders?
I’ll wait to see how I get on with the choc bars before buying industrial size portions I think.
