Hi Ian very interesting. Do you know how the Helmsley version works out carbswise because I didnt see any nutritional values. I downloaded it online. I might be tempted to buy a book which one of theirs do you find most useful? When you get your recipe tweaked to your satisfaction do tell. I think Mrs P is quite brilliant!Hi PenhuinMum, no the Hensley x 2 recipe is one we have used a fir bit it has eggs and baking power from memory This one has flaxseed and water plus some salt but nothing else. I really like the Hemsley sisters version lots, it freezes well. I actually have both Hemslay books and have tried to adapt several recipes.

Quick question about the high fibre chocolate bars. Would using ground chia seeds in place of ground flaxseed work? I have some of the former, but not the latter (and no means of grinding my whole flaxseed). Thanks!

Thanks @shelley262 That idea re water had crossed my mind. The recipe video is clear that the high proportion of water and high heat creates steam which makes the loaf rise and gives a crust. About 30-40% of comments on youtube say they have the same problem and nothing seems to solve it for them.A thought @ianpspurs which may not work. But for what it’s worth when baking French bread - a long long time ago - the steam used to help the rise comes from boiling water in a tray on lower shelf in oven so when bread goes in it’s really steamy. Wondered if you made rolls and put directly on shelf above if it would work? Probably pie in sky but thought would run it past you!

From what I read about the version we are trying to perfect, about 33% of people have the same problem. Re Mrs P , she produced 3 boys but hasn't done much sinceThe Hemsley book The Art of Eating Well has Pablo's Chicken in which is excellent and the flaxseed bread is also in there.

I wouldn’t be without my mini moulds I have one that makes mini loaves which I use for my almond bread, clafoutis and egg bakes and a round one that is divided into wedges, this is good for the zucchini lemon or chocolate olive oil cake as the portion sizes are generous but still keep me within my allowances for carbs per slice. Brilliant I love how prepared you areBreakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: left over cauliflower and broccoli cheese apwith peas and sweetcorn followed by Greek yoghurt and strawberries.
Mid afternoon: white Americans at a coffee shop with raspberry phd bar.
Dinner: cheddar and mushroom omelette with cauliflower, broccoli and yellow pepper salad followed by SF jelly, cream, strawberries and LC chocolate granola.
I’m in an Air bnb tonight waiting to meet my daughter off a late flight before driving home tomorrow and yes, I confess I have coconut porridge ingredients and my favourite saucepan and wooden spoon with me for tomorrow morning!
