Everyone can read, say, dont agree, thats absolutely fine, but perhaps someone will appreciate a little bit more info whether its worthwhile or not, and its sincerely nice to have someone, yourself in this case, actually say your learning from a particular person whose aim is to share info they have, thats the whole aim at the end of the day to help someone, who may have a confusion, wonderment, not sure, so much info to take in, they can take from all, and then go to their doc, or whoever, and put forward info to obtain medical answers if the need be. Thank you or the kind comments, and hope any input I give will continue to add to your knowledge and took box as Dr. Fung says, without the knowledge and tools, one cannot reverse diabetes, I am sure he is not wrong his this??

Well, what a small world Moggely, if you go to Byron although its changed now I believe very busy, here on Island also thats tourism, I once owned a cute little beach bar on Clarks Beach, Le Kiosk, did sunrise breakfasts, and other now taken over fabulous restaurant called beach amazing location and views of julian rocks. Worked many years in Law for the local lawyers. You my have eaten or know Mexican Micks best mexican food ever, Mick sold it. I resided Byron Bay 14 years. Lived Suffolk Park Beach. Byron is special, due to its prestine white beaches, most easterly point, hinterland rainforests, it has it all really. How lovely to hear you shall be going there and moving back to Queensland. Give a big Hello to Byron Bay I miss it. Last time I made the bars I just heated the butter till bubbling and brown lobbed in the cream and even though it split just carried on regardless. I only used about a spoonful of erythritol, stirred in at the end.
I think @shelley262 ‘s latest incarnation of the bars just involves heating the butter till it browns and bubbles and just stirring in erythritol ( no cream)
In either case dont bother boiling the butter and erythritol together, its the butter that gives the caramel flavour.

Bless you, I think we all get a bit hung up on our numbers, but as you say, this is not a race, we are definitely not sprinting to a finish line, there isn’t one, it’s not a marathon either it’s one of those long indurance races. I hope that any test I have going forward sees my result within the normal range, that’s a positive and to be celebrated as far as I am concerned if it’s lower fantastic, same as before ok still happy, higher but still normal obviously not estatic but content to still be in the race.

I do feel for you you’ve put lots of effort in and you should get returns on it just shows what a strange thing diabetes is and how individuals bodies are different too. There doesn’t seem to be one solution either.
Having said this you’ve done really well and you’re in the normal range - thing to get worried about i believe is if it starts to climb towards the pre diabetic level. I’ve decided that I need to set myself a maintenance level for my bgs and hbaca1 to live to over the next few years. It’s a long game and a very difficult balance between weight and bgs. I’m eating more to maintain my weight and do wonder if it will put my next hbaca1 up but if I’m healthy and happy think that’s key.
You seem to have found a way of eating that manages your general health, maintains your low weight and keeps you active plus it gives you a normal hbaca1 well done and hope things feel more blue skies today. But I do understand how you feel I would have too at your stage of the journey big hug on way.

I loved the shopping there on the streets, is that your restaurant that u use to own.We will definitely go there go a early morning coffee with those views. Your welcome, the Le Kiosk as I had it, what a simple beach bar, breakfasts I used to do sunrise, fresh orange juice, croissants home made, with strawberries, scrambled eggs on macadamia nut bread and cream cheese, I charged only one dollar fifty cents!!!!! I had cars lining up from Surfers Paradise, home made hamburgers for the surfers for lunch, Jennys special wiht pineapple and bacon, surfers icecreams, macadamia nut, run raisan, choc and vanilla, evenings, snapper or steak BBQ with salad, so simple, new owners have turned it around to a fabulous restaurant, but still do coffees and drinks. If you go, ask if owner is there, and say you have conversed with "Jenny" ex owner of the original Kisok now in Mallorca, you never know he may invite you to a glass of champers ?? Shopping on streets is bliss so many chic boutiques with original styles to choose, this is where I became organic eating, everything if not most is organic in Byron Bay, healthy style of eat, restaurants too, its town of many different vibrant cultures from the hippies to the social bees of famous people, all merge happily together in harmony, thats Byron Bay unique for this, you have good taste to enjoy and like best places on the planet. lol @pollensa, well you can't help but lose your heart can you, thier gain"spain" oz. loose. But hope you do go back now and again.I have seen many places in spain on the internet and would love to go there, but finances at times won't allow it. Thankfully you are happy and that's all that matters. Yes we aussies are a strange lot but the best about us is that we can take it on the chin so to speak.
