What have you eaten today? (Low carb forum)

Evening all, lovely day weather wise today, hair appointment this morning followed by food shop, just back from meal out at a local pub/restaurant
Coffee with cream and 90 second microwave bread topped with almond butter
Small pack of pork scratchings on way home from shopping
Coffee with cream this afternoon
Roast beef and turkey carvery followed by portion of choc olive oil cake with extra thick cream when I got home
 
Hope everyone had a good day. A bit late today as lots of prep to do for the morning going to mums and was working this morning.
breakfast one each of mushroom, bacon and egg
lunch hummus, celery, cheese and four seeded crackers
MAS piece of LC lemon drizzle (hot out of oven) with yoghurt
Dinner chicken curry with celeriac with glass of red wine followed by SF jelly and yoghurt
Interesting conversation with youngest son about Tom Watson and his reversal - think its made him see LC eating as less of an oddball thing because of the press recently he sounded almost proud of me felt really good.

Hello all,

We were out yesterday, so no time to post. Also ran out of test strips as mail delivery was delayed.

Friday

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Tartar with mayonnaise and two fried eggs.

Dinner: Went out to a French tapas place and had two glasses of wine and rabbit livers in cognac-cream sauce and four small lamb chops.


Saturday

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: A DD keto roll with mayonnaise, avocado and shrimps. Greek yoghurt with low-carb honey and a fig.

Dinner: The last of the cauli-coconut rice with two small filets of sole. Lamb's lettuce with feta cheese and a dressing of mustard, lime juice, olive oil, orange peel oil and erythritol.

Snack: About 25g of 85% chocolate.
 
Much to Mrs No6 ‘s disgust I’m posting this pic. She loves cooking so 10 minutes ago, having seen it on here I said ‘I must try chocolate mug cake’ then she arrives with this and a ‘sorry it’s a bit over cooked’ You can’t really argue with that, but the good news is it’s pretty tasty!IMG_7529.jpg

No worries!!!

The only thing wrong with that is that you need a BIGGER MUG - that way it won't boil over next time.

Don't think I posted yesterday's food:

B: a single gf cracker with smoked salmon pate on it. I bought these pates thinking 'easy and quick in the morning' but really, they are nothing special. My own chicken liver pate has a lot more ooomph (basically pureed cooked chicken liver, garlic, herbs and seasonings, with cream cheese stirred in when still warm) and my own smoked salmon pate is blended smoked salmon, cream cheese, lemon juice and black pepper. Hardly hard to do, and definitely nicer! The bought smoked salmon pate is so mild flavoured that it must have about 2% fish, even though it is low carb and gf. Their idea of 'with lemon' is to have a rubbery jelly that smells a little of over cooked lemon peel.

L: other half a bar of lindt lindor orange. cough. BG started at 4.9 and rose to 7.3 before dropping again (thanks Libre). Not ideal, but nor was it horrific. We walked it off with the dogs.

D: 250g of homemade beefburglars (Mr B is so demanding) with mature cheddar on top. This time I added horseradish AND mustard AND garlic to the mix, before dicing in some gherkins. Won't bother with the gherkins again, but the radish and mustard were delish. Then I had one of his small new potatoes too, but don't think I will bother again. Lost the taste for potato unless it is a fragment of Kettles Crisps or somethng crunchy.
 
Easily done! Ive done the same and realised I’m not really enjoying what I’m eating. Happily most of that sort of thing is now too sweet for me so I find it easy to resist too.
I think you are doing extremely well, I really wish I’d known enough to change my ways when I was prediabetic.
Even pre diabetes days I used to tell myself the dessert/cake/biscuits would not taste as good as they looked and usually that was the case. My problem was I could make very good desserts/cake etc having been trained from a young age by my grandma and Mum and they were impossible to resist (particularly trifle!).
My 'difficult to resist' where there was a finger buffet was an odd one - egg and cress sandwiches. I love them.
 
Sunday menu:

Wakey Wakey+ Breakfast + Mid morning: 5 pints tea + Coffee with cream + 2 tsps of inulin + 0 carb n cal butterscotch sauce
Lunch : Gordon Gekko style
Mid Afternoon: Walk then tea; rest exercise bike
Evening meal : Pork belly from IP so so not as good as sous vide or even oven for me; roast veggies - tomatoes; courgette; garlic; mushrooms; broccoli;
 
The forum is finally up again. Hurrah!

Still no testing strips. Waited all day on Saturday for DHL to deliver, finally a note at 4 p.m. that delivery has been postponed to Monday. Gasp!

Yesterday ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Asparagus fried in olive oil. Scrambled eggs with cheese and mushrooms. Greek yoghurt with raspberries.

Snack: About 10g of 90 percent chocolate.

Dinner: Lamb's lettuce with feta cheese and homemade dressing (mustard, orange zest oil, olive oil, lime juice and erythritol). A DD keto roll with mayonnaise, gouda cheese, and beef salami. Half a glass of red wine.
 
Been off grid for a couple of weeks tech detoxing in rural wilderness.
Stayed with low carbing, enjoying eggs and bacon breakfasts, with some fasting when I couldn't be bothered the 10 mile round trip to the shops.

Sunday
B: coconut 'porridge' made with correct full fat coconut cream. A great improvement on my last effort. I could get used to this as a yogurt or bacon alternative. Chucked some rasberries in. Felt very full after so no lunch needed.
L: black coffee
D: Roast beef, cauliflower mash. 2 large glasses Merlot.

very quiet day due to weather being YUK
coffee and cream when I woke
very late breakfast - popped out to our local eatery for an English breakfast, 1 fried egg, 1 sausage, 1 rasher bacon, some mushrooms and half of a thin slice of fresh granary bread toasted with thick butter
Almond milk cappuccino late afternoon with a PHD Smart bar
salad made with wafer thin chicken, boiled egg, salad leaves, tomato, small portion of Brie and a blue cheese dressing
spoonful of low carb granola and cream glass of wine

Well it's catch up for loads of us now everything is up and running again.
Saturday

Bed 6.1 FBG 6.2 - had my clean up day. Unfortunately ommitted to wear gloves and my hand reacted badly. I'm prone to eczema on my hands from dust, chemicals , stress - loads of things. Clearing now but I've been plastering my hands with E45, Sudocrem, anything really.
B. Slice Tesco High Protein bread with Ayrshire ham and a Slice of melted cheddar. Tassimo Americano grande with a dash of cream.
L. Nothing.
D. Usual slice each of roast pork, ham, ox tongue, 6 sweet potato chips, lettuce , mini plum tomato, 1/2 avocado, boiled egg and later chia pudding.
Bed 5.9 FBG 6.4

B. Stuck with the slice of Tesco high protein bread toasted but with ham and egg mayonnaise. Tassimo Americano grande with a dash of cream.
L. Nothing
D. Campari and soda. A cobbled together chicken breast stuffed with cheese and gluten free black pudding with a mini cob, mushrooms , asperagus and celeriac dauphinoise.
Curse you Halo Top - another new one, oatmeal cookie and 6 raspberries.

Gone back to my clerk of works role for my niece. Her bathroom is being gutted - last thing in the house so she's moved out for The week.
 
Breakfast - wholemeal toast and butter with a smidge of Sweet Freedom chocolate spread, tea

Snack - jalapeño cheese (latest addiction) and nuts

Lunch - Lo dough 'garlic bread' (cooked in a pan for two mins with garlic butter) with paté, SF jelly

Snack - Atkins bar

Dinner - steak and mixed salad, Halo Top with double cream

Best steak I've had in ages (although I say so myself) - as soft as butter

Bed 6.4 FBG 5.9. What a nice relaxing day. September weekend here so the boys have had a 4 day weekend. Gardeners and the plumbers for nieces turned up though. First hour was spent making bacon butties and tea/coffee for the workers. After that it was a case of planning what we can fit into the Bath trip. So far I've just booked the hop on hop off which we'll do a full circuit on then take it from there.

B. Between cooking butties I had 2 97% pork chipolatos, small bit of GF black pudding, 2 rashers crispy streaky bacon and a fried egg. Tassimo Americano grande with a dash of cream.
L. Nothing.
D. Currently have 12 lamb chops in the IP with carrot, onion, green beans, peas, lamb stock, tomato puree. Will have it with the remains of the celeriac dauphinoise.

I'll stick to chia pudding and raspberries although that halo top is calling to me like a siren.

I also booked the annual trip to Dobbies to visit Santa. Can't believe I'm booking for Christmas already. No 1 has his birthday on Saturday so I have the Lego Millenium Falcon to wrap (not the £671 special edition I hasten to add).

Heading out to Dobbies tomorrow after school drop off. I need some things from Lakeland and Hubby wants to have a look in Hotter and I suspect I may come back with more bulbs for the garden.
 
Evening all now we are back up and running. Autumn proper is holding off here so I hope you all had at least some good weather. Lots to mull over from today but here is what I ate and did.
Wakey Wakey : 2 pints tea then weight machine
Breakfast : Polish chicken sausage; portaloo mushroom; egg; 3 rashers streaky bacon; tomato; 20 mins ex bike then 2 pints tea
Mid morning: Coffee with dash cream + 2 tsps of inulin + 0 carb n cal maple syrup
Lunch : Big salad with tin mackerel fillets in olive oil; chia seeds and psyllium husk - fibre needed; “snack size” free weights before; “snack size” rowing after (snack size = 15 mins)
Mid Afternoon: Tea then walk
Evening meal : Fluffy omelette with chorizo, cheese and mushrooms;
 
Hi all so two days menus thanks to forum issues and poor phone signal at mums:
Sunday one slice bacon and egg
Lunch a few seeded crispbreads
Dinner chicken salad followed by clafoutis and cream
Monday bacon and egg
Lunch out ham and mushroom omlette and salad
Dinner out at carvery turkey and pork with cabbage, broccoli and cabbage followed by - at mums - SF jelly and cream
Back home tomorrow
