What have you eaten today? (Low carb forum)

Today I had a craving for some baked beans so I made some myself. They were delicious .. wasn't sure what they would do to my BS but went from 4.7 to 5.3 (+1Hr) to 5.0 (+2Hr). So happy with that but should probably test at 3 hours but I've always had a coffee or a snack by then so can be rather hard to tell. I can't seem to go from one meal to the other without snacking as I get hungry :-(

Cheese & Onion Sandwich on Low Carb Bread w/Olive Butter
S: Apple w/Almond Butter
Aussie Bodies Lo Carb Bar

The wine always gives me nice low numbers in the low to mid 4's and tends to have a hangover effect the next day too (in more ways than one!). Only thing that made it go up was the apple.
 
That dinner sounds delicious. I've not tried celeriac ... what does it taste like and is it low carb?
The taste is a bit like a cross between turnip and celery - its an ugly looking thing but once peeled can be roasted, put in to stews/casseroles and (mixed with other things) made in to a nice mash. Mr C likes it cut in to chips shape, turned over in beef dripping and then roasted. Yes, its quite low carb - 9g per 100g.
 
Its a fasting day for me today, so

Breakfast and Lunch: Nothing - except maybe a cup of Bovril if I get the shakes or feel very cold (that happens occasionally when fasting)

Dinner: Leftovers of yesterday's port, spicy red cabbage, roast butternut squash. I won't have much of the butternut - its a bit sweet for me nowadays.
 
Saturday
breakfast - porridge
lunch - green thai curry spiced soup
dinner - meatballs in a tomato and veg sauce with cauli on the side.

Sunday
breakfast - porridge with flax seed and a few blueberries
late lunch/dinner - was out at a 'do' given by the company I was working for when I retired. The menu was pre chosen from a short list but I sent a note back with the menu list explaining and the hotel was very good about making adaptations :happy:

pre meal - fresh orange juice or a dryish, sparkling white wine (didn't bother with that 'cause driving)
starter - oatcakes and duck pate with a colourful side salad and some fruity onion relish.
main - balmoral chicken (chicken breast stuffed with haggis and roasted) served with a whisky sauce. Everyone else got boiled and roast potatoes with some mashed parsnip, carrot and green beans and I got some rocket salad on the plate and my own generous dish of veg. with carrot, cauli and broccoli and a few pieces of baby sweetcorn for garnish.
pud - menu choices were either apple crumble and custard or sticky toffee pud and custard but they brought me a little plate of a couple of small water biscuits with butter and three decent sized bits of cheese (brie, a mild blue cheese and some red leicester) garnished with a little sprig of green and black grapes.

We were offered wine with the meal but a lot of us had traveled a fair distance so if we chose not to drink with the meal we got the wine to go :happy:, Mr. G. and I scored a nice bottle of red for another day.

I was well pleased and scoffed the lot and very tasty it was too :), (I have to say there were a few envious glances at my cheese).

supper - err nope, too stuffed still.

That meal out sounds really lovely and how nice of the restaurant to be so flexible. I'd never have thought of stuffing chicken with haggis - I might have a go at preparing that (I like haggis).

Chicken is good stuffed with black pudding too. Made that and the haggis version many times. One of the best haggis is Mcsweens. All the supermarkets here stock it. Watch the carbs though @Chook. Mcsweens did a gluten free version this Burns night and the carbs were still 18.7g per 100g. Haggis itself is about 20g. Mcsweens do a 3 bird haggis which is only 11.6g and still very tasty. They also do a really nice whiskey sauce.
When I do the stuffed chicken breast I roll out streaky bacon and wrap the stuffed breast like a mummy to keep the stuffing in. I fry it enough to crisp the bacon then pop them in the oven to finish cooking.

We had a holiday in Berwick two years ago (before I was low carbing) - bought a haggis, loved it and then bought loads to bring home and think I've still got some in the freezer but I will have a look at the Mcsweens website. :)

@mo53 I see you managed a sneaky bit of pomegranate at lunch time today :-)
 
@Lesleywo you noticed. I wondered if anyone would spot the extra pomegranate. :)
Nothing gets past me! I was thinking of you this afternoon when I was doing my groceries in Woolies .... how much are the pomegranate pots in UK? They are $5 a pot here (about 3 quid). Sounds like an expensive desert to me!

In Asda they are a pound each. I like them sprinkled over salads. :)
 
B: nothing
L: sort of forgot, then got ravenously hungry after seeing references to sausages elsewhere on the forum, and cooked some Black Farmers that were in the fridge. With bacon. YUM.
D: after my very late lunch, I had a pot of defrosted home made curry with konjac rice. Busy evening, so took the easy option. :)
 
@Lesleywo wow that is dear. In morrisons £1.50 each or 2 for £2. M& s are the dearest 100g the same for £1.75. I'm happy to pay a £1. :)
 
Yesterday - still battling this flaming bug. I've never experienced anything like it. You improve for a day or so then it comes back to bite you. A bit fevered and BG back at 9.2-9.5. Comes down eventually but very slow.
B. 2 scrambled eggs and 2 rashers crispy bacon. 1 mushroom.
L. Nothing
D. 2 air fried chicken thighs, lettuce, 3 cherry tomatoes, small avocado, helmanns, 2 walnuts , red Leicester and applewood smoked mini.
Sugar free jelly, 6 raspberries and 2 teaspoons cream.
Drinking loads of water
