What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (carefully measured 2 tsp) washed down with a white coffee (still using almond milk to save calories and carbs)
Lunch: 2 x scrambled eggs with one slice of HiLo toasted with butter and Marmite on followed by Greek yoghurt and raspberries.
Mid-afternoon: Hartleys 10cal jelly and black coffee.
Dinner: omelette filled with mature cheddar and mushrooms with salad of raw cauli, brocolli, celery and radishes followed by strawberries and 50ml of chocolate and hazelnut Oppo.
 
Black coffee
Lunch beefburger, 2 slices cheese
Supper: salad, ham, salami, cheese, salad
raspberries 5 and ice cream

No bolus again. A very odd state that I don't know what to do about it
Double salad for supper?! ;)
 
B- coffee, DD porridge with wild blueberries, 1 slice LC bread with butter
L- leftover chicken stir fry
D- hotdog on LC bun, sauerkraut, 2 pieces pickled beets (yum), 6 kalamata olives, home made BP coconut chocolate
Forgot about the two glasses of red wine to compensate for lousy day.
 
Hello all. Still suffering from the cold, but my head is feeling less congested. I am hopeful that I will be much better tomorrow. Was ravenous when I got up this morning.

Breakfast: Two double decaffeinated espressos with cream and erythritol. A cornsalad with Caesar's dressing and parmesan. Half a DD keto roll with goat cream cheese and smoked sockeye salmon.

Snack: A wiener sausage, one DD keto roll fresh from the oven with chicken liver pate and one DD keto roll with butter.

Early dinner: Explore cusine edamame-mung bean fettucine with pesto Genovese and butter-seared scallops. One glass of dry red wine.

Because that cheesy eggy corned beef thing has been popular, I thought I would dig out a recipe I used to love.

Low Carb Breakfast Balls.
They are a different formula ;) but have a similar deliciousness.
Good hot or cold, breakfast, snack or main.
Actually, the only reason I stopped making these was because Mr B couldn’t stop. I would make a whole tray, and they would just vaporise....

In the end I was making them in slabs, like meatloaf, because it was easier than forming bite sized meatballs that he would just inhale.
 
Still 18:6 intermittent fasting - seems to be helping fbg

B: coffee and cream

L: halloumi, avocado, spinach and poached egg. Followed by Greek yoghurt and raspberries.

D: DD keto garam masala chicken ( have any of you tried this? It’s scrummy) with cauli rice, green salad, then 5 Hotel Chocolate buttons.

@Brunneria these look good, and simple. Still haven’t tried the corned beef thingy. I’ve bought a tin of corned beef but keep forgetting. It’s good to have a few different recipes in reserve, saves boredom setting in.

Seem to be taking fasting and feasting to extremes at the moment. Well, the feasting was a bit extreme today anyway. Wasn’t planned...

Breakfast - none

Lunch - was planning on skipping but was hungry in the morning and found myself unexpectedly at home as a meeting got cancelled. Went for a Lidl protein roll with almond butter.

Dinner - fathead pizza with pepperoni topping.

Downfall was the entire bar of Tesco 85% chocolate I managed to eat while out this afternoon. Amazingly BG rise was only 0.1mmol, but am rapidly concluding that only 100% chocolate can be on the menu as it’s so easy to over eat anything else.
 
B - alpro plain soya yogurt with almond
L - 3 egg omelette with small amount of feta, cherry tomatoes and salad leaves, soya yogurt
D - pesto crusted salmon and broccoli and then coyo raw chocolate yogurt
snack - cashew nuts
Feel very full today - still under 50g of carbs though

Lunch: 2 x boiled eggs with Marmite soldiers made from 1 slice of HiLo bread, followed by Greek yoghurt and raspberries.
Mid-afternoon: Hartleys 10cal jelly and black coffee.
Dinner: cold roast chicken, salad of raw cauli, brocolli and radishes with pork scratchings and coleslaw, followed by strawberries and salted caramel Oppo ice-cream.
 
Yesterday was
9am 5oz steak and 2 eggs, avoided the bed of cubed potato and onion
2pm my choc/cream mousse
7pm pork ribs with a thin smear of homemade BBQ sauce (garlic, BBQ spices, Worcestershire sauce, liquid smoke and a dash of Reggae Reggae)

Today
11am cheesy eggy corned beef
6pm will be lamb chops or diced chicken breast with chorizo in a cream sauce. haven't decided yet.

The weather is foul, so I shall spend a lot of the afternoon sitting on the floor wrestling with two bored yet over-excited dogs.
 
@Brunneria does your chocolate mousse set in the fridge, or are you just using thick cream and mixing with dark chocolate? Interested in trying this, but can’t figure out how it would set! Thanks.

It set v quickly at room temp.

i melted the choc bar in a bowl, in the microwave, till just liquid.
then tipped in a dash of fridge temp cream, while using a hand whisk (one of those electric things with 2 removable balloon whisks).
the liquid thickened up in seconds, so I dolloped in the rest of the 300ml of double cream and whisked til solid - maybe 20 secs?
it all happened amazingly fast!

i think next time I may dilute the cream (or the choc) with cold water (or booze :wacky: or orange juice :hungry:) as an experiment.

or alternatively whip the cream first then add the diluted liquid choc at last minute, while whisking hard. Don't know if that would end up with tiny strings of hard choc in whipped cream though, rather than a smooth blend.

I have previously made many a gorgeous choc mousse, with all sorts of petit pot au chocolat refinements, like 8 raw egg yolks, and 8 raw whipped egg whites, folded with a metal spoon during a waxing moon while chanting plainsong and wearing a bikini apron, adding pinches of salt, chilli and nutmeg, standing on one leg... but frankly, those days are long gone. Choc and cream it where I am nowadays. And v happy about it too :D

My long term ganache recipe which has been used to ice chocolate cakes for the last quarter century involves melting high cocoa choc with small knob of butter, removing from heat and cooling for a while and then folding in double cream and putting in fridge to set. You decide how much you want it to set and whip it out of fridge accordingly. The butter is to give it a glossy look on the cake. I have just realised that come the next birthday I will be actually able to eat at least part of the cake. Bliss.
 
After a very sad first attempt at making the Coconut porridge popular here, a bit of advice from Rachox and a second attempt and it became nearer to perfection. Filled that hunger gap. Was becoming quite famished with the first failed attempt. :hungover:

So Coconut Porridge, using organic blueberries in mine. Followed afterwards with 6 almonds. Normally I always drink water but the only juice I do love is a Diet Cranberry with 0 sugar but only when its on sale so treated myself to 2 full glasses of it.

B. Tassimo Americano grande with a dash of cream.
L. 4 of these Tesco Cumberland chipolatos - 2g carbs. Wonderful. 2 rashers back bacon and a fried egg.
D. Tuna salad with lettuce, Santini tomatoes, boiled beetroot, boiled egg and mozzarella pearls.
Halo Top with raspberries.
Thursday - bed 7.7 FBG 7.4 DP improving too.
B. Tassimo Americano grande with a dash of cream. Last of the Tesco Cumberland chipolatos with 2 rashers of back bacon and a fried egg.
L. Nothing
D. Prawn salad tonight - needed eating. Prawns, tablespoon salmon pate, lettuce, Santini tomatoes, 1/2 avocado, 2 Walnuts, Helmanns.
Halo Top and raspberries.
Friday- bed 7.2 FBG 7.7 and DP finally gone.
B. Tassimo Americano grande with a dash of cream.
L. 2 egg omelette with, ham, tomato and mozzarella.
D. Fathead pizza with yellow pepper, mushroom, tomato, ham and mozzarella.
Halo Top on its own.
Today - Saturday bed 7.7 FBG 7 and DP still out of the way. I still have achy arms but I must be getting better. Weather is foul and we have another funeral today - 4th since mid January. This one is a 3 hr round trip in vile weather but we made it.
B. Tassimo Americano grande with a dash of cream.
L. It was a sit down meal after the funeral. Lentil soup (no rolls for me) and chicken breast in a creamy white wine and mushroom sauce with green beans and carrot batons. Hubby had the steak pie that looked REALLY good but I stuck to the chicken. Couple of diet cokes and a black coffee (I'm the driver).
D. Picky things from M&S - Tuna, mozzarella pearls, Santini tomatoes and anchovies and a coffee.
 
Hi all

A combined 23/1 fasting and (almost) zero carb day. So no breakfast or lunch.

Dinner was a small lamb chop I found lurking at the bottom of the freezer, 2 Waitrose free range pork sausages and 2 rashers bacon. Then did a smaller, rough and ready version of @Brunneria ’s chocolate mousse: melted 7 Hotel Chocolat 100% cocoa buttons in a ramekin and then stirred in 60ml extra thick double cream. Hadn’t quite melted the chocolate enough, but did the job.
