Just testing 1 hr after rolls then trying this! At 1 hr went from 4.6 down to 4.1 with 1 roll so a miracle food :woot:
Cake looks like a cake and tastes "lemony" so a successful afternoon :woot: Thank you so much ladies this may appear at evenings, with LC vanilla custard or lots of cream as a dessert, on the very odd occasions I want a dessert.
Update: RIP Lemon drizzle cake. My wife forgot to hide it so her red setter ate it and my Lab may have cleared it up especially the poor old labafter we had a slice each - we may have consequences those ingredients and dogs tummies:bigtears:
Oh no! Proves it delicious but real shame and let’s hope it dosent have dog tummies consequences!
 
I went to an Ethiopian restaurant recently and all food is served with injera which is a bit like a pancake and used to scoop up the food instead of cutlery. I looked up what it is made from and it is teff flour. Has anyone come across this before and used it in anything else?

Yes, I have seen teff flour mentioned. Haven’t tried it, but I would like to - on the understanding that other trials of traditional alternatives (buckwheat, spelt, barley) have all been... unfortunate.

What sweetener did you use?
If it was xylitol please seek emergency veterinary attention for your dogs.
Xylitol can be deadly to dogs, even in small quantities.

Thanks we used triple zero stevia as we din't have xylitol at the moment turns out to be very lucky we didn't. Internet suggests stevia is not toxic but may give bad tummy. Daughter in law is a vet and says will be ok but may have the runs!
 
Phew indeed! :D

I used to use xylitol. And I still think it is the best flavour sugar substitute, butas soon as I discovered how toxic it is to dogs, I got rid of it and won’t have it in the house. Our mutts never get human food (except the occasional tail end of a GF sausage), but accidents happen.

Am v relieved for you!

Thanks Brunneria. The red setter was returned to a kennels our daughter in law worked at whilst training. She was a present to my wife but as she had not been properly looked after has a habit of reaching for any food she can. Lab does not do this but once the cake/crumbs were on the floor he took advantage!
 
Well, my day’s food didn’t go as planned.

We took MIL to dog friendly pub. Glorious weather. Gorgeous spring gardens. Dogs behaved immaculately (to my stunned delight). However, we had chosen the place mainly because the menu had Zero Carb/carnivore friendly options which meant I could eat well without appearing too much of an oddball. Unfortunately, when we got there, they had replaced the usual menu with a special Bank Hol fixed menu.

I ended up picking the lamb shank, but everything came with Yorkshires, mash AND roasties, carrots, broccoli spears, apricot stuffing and a roast parsnip. Smallest shank I have ever seen. That lamb must have been newborn!

And of course, I was ravenous. But I DID manage to leave the roastie, the Yorkie and the green veg, so I stayed GF :D
The worst thing on the plate wasn’t the carb, it was the greenery. But I may still end up with some tummy consequences, though veg has been better tolerated recently. We shall see.

Then I was still so hungry I had strawberries and clotted cream. :nailbiting:

Well, I did say that I wanted to try strawberries this summer. Just didn’t expect it would happen so soon...
 
Interesting day! Idea was to have an active rest day and try our hand at some baking. Active rest and IF clashed at breakfast gap or maybe hit the Randle Cycle wall? Baking worked but the cake vanished into dogs prompting fears about their welfare. Now wonder about last 2 readings of the day and fbg but long term I really believe the rest will be beneficial. Will still do the 10K steps but that is a base not exercise. Anyhow, food diary below!
B: 2x SD mug tea with single cream;
MMS: Waitrose Americano coffee and double cream
L: 2 SD mugs double cream
MAS: Nothing not happy with “breakfast” level but 4.6 mid afternoon more to my liking. Tested 1 Keto roll and 1 slice Lemon Drizzle cake (RIP) back to 4.6
D: 4 hobbit size ribs in homemade barbeque sauce; 2 keto rolls ( also hobbit size) with butter and Cornish blue cheese ( rude not to take advantage of Waitrose reductions)
Dog walking postponed as under observation see RIP cake!
MMS = mid morning snack; MAS = mid afternoon snack SD = Sports direct

@ianpspurs that chocolate cake looks amazing. I may have to buy some more cake tins. What quantities of 100% chocolate, cream and sweetener do you use for the ganache?

@shelley262 your before and after pics are great! Hope your bruise is reducing too.

Not quite as energetic as yesterday but still managed to,clock up just shy of 30,000 steps. Flagging by the end of the day. Menu was:

Breakfast - none

Lunch - Shake Shack. Bun less double cheeseburger with lettuce, tomato, onion and mayonnaise.

Dinner - pan fried sea bass fillet with buttered cabbage followed by Oppo chocolate and hazelnut ice cream with cream. Any tips on how to get crispy fish skin without the butter over cooking?

You can try mixing 50:50 with another fat that is less likely to burn. I have seen olive oil suggested by tv chefs, but nowadays I would probably go for lard or mild coconut oil. :)
 
Evening all - good day getting organised for forthcoming holiday. Up to elderly mums and aunts to help them organise and pack - a mere 120 miles away - on Wednesday after my early morning appt with DN - flying early Friday am with the family for a week caring in the sun!
@Goonergal yes bruise fading although still impressive - waiting for matching one on Wednesday!

Breakfast one sausage, egg and mushrooms
Lunch cheese and celery
Afternoon tea in garden pot of tea and slice lemon drizzle cake
Dinner cold roast beef salad followed by raspberry mousse - whipped cream separately for first time and folded in to the no sugar mixed jelly and frozen raspberries and it set as two layers lovely with a layer of jelly and raspberries on the bottom and a whipy raspberry mousse on top. Made 6 portions.

@Goonergal we use about 200 gms chocolate and 600 mls cream remember this is a big cake! Just keep tasting for sweetness to suit really.
 
Met a friend for a walk this morning at a coffee shop so had brunch before walk - eggs benedict and I did eat the muffin it came on:oops: Then as the weather was so glorious I lit my fire pit and did myself a little bbq - thai chicken kebab, venison sausage, rocket, avocado, olives and mayo, followed by choc brownie, salted caramel Oppo and a few strawberries:p V yummy. Still sitting outside now. Anyone in favour of another Bank Holiday tomorrow?:D

This is interesting reading Brunneria. I like this bit:

As I'll be moving to Ethiopia in August, I'll be able to confirm whether teff flour does benefit blood sugar management or not! Think I should experiment with making the pie crusts, cookies, breads, and assortment of other baked goods that it also mentions in the article.
 
Beautiful day at the food festival. In the morning I did just decide to have a 'day off' as I would have just been miserable and I don't want this prediabetes to stop me enjoying things or living my life. I had a baguette (filled with chicken, bacon, and halloumi) and some fresh pineapple juice (in fact, I've noticed juice doesn't give me a massive spike. Further investigation needed). Lots of walking around so blood sugar rise wasn't as dramatic as I thought it would be! Managed to keep away from the ice cream at least! Back to LCHF tomorrow.

@ianpspurs hope dogs’ tummies remain calm. Can’t believe it was the Setter who stole the cake not the Lab though! What a relief you didn’t have inulin. I agree about icing on cakes, hate it but your ganache sounds lovely.

@Goonergal have you tried ghee for frying? You can use it at a higher temperature than butter without it burning.

@shelley262 hope you get a chance to relax on your hols. Do you know definitely if your A1c needs repeating?

Nice day foodwise:
B: poached eggs, avocado and halloumi. Coffee with cream

L: Hot smoked salmon fillet with leafy salad and olive oil/ apple cider vinegar dressing. Adonis blondie bar ( my last one, do I order more? ) another coffee with cream.

D: Tried @maglil55 s chicken Cordon Bleu. It was lovely and a great hit with everyone here ( although having walked to Tesco just to get parsley for the coating, I forgot to get it, I did get a bottle of champagne though and we drank it in the garden before eating).Had it with a mixed salad and more of the same dressing. Then strawberries and cream. Lovely.
