What have you eaten today? (Low carb forum)

@ianpspurs hope dogs’ tummies remain calm. Can’t believe it was the Setter who stole the cake not the Lab though! What a relief you didn’t have inulin. I agree about icing on cakes, hate it but your ganache sounds lovely.

@Goonergal have you tried ghee for frying? You can use it at a higher temperature than butter without it burning.

@shelley262 hope you get a chance to relax on your hols. Do you know definitely if your A1c needs repeating?

Nice day foodwise:
B: poached eggs, avocado and halloumi. Coffee with cream

L: Hot smoked salmon fillet with leafy salad and olive oil/ apple cider vinegar dressing. Adonis blondie bar ( my last one, do I order more? ) another coffee with cream.

D: Tried @maglil55 s chicken Cordon Bleu. It was lovely and a great hit with everyone here ( although having walked to Tesco just to get parsley for the coating, I forgot to get it, I did get a bottle of champagne though and we drank it in the garden before eating).Had it with a mixed salad and more of the same dressing. Then strawberries and cream. Lovely.
Loved your champagne mistake - much better than parsley. No don’t know about bloods just presuming as it’s not online will see on Wednesday morning unless it magically appears online tomorrow!

How frustrating for you! Especially with the palaver of getting everyone ready for their holiday. You will certainly need one by the time you set off.

I must admit I didn’t miss the parsley and was very happy with the Champagne. Mr C was bemused but seemed happy enough too.
 
Just got home from our trip to the coast. Did a lot of winging it today! :wideyed: I usually like to have my food planned out in advance.
Breakfast at Premier Inn: full English, fried egg, 2 rashers bacon, sausage, mushrooms and half a tomato followed by greek yoghurt and red berry mix (I asked if the red berry mix had added sugar and they printed off the whole breakfast nutritional info for me :happy:) washed down with black coffee.
Lunch at Prèt a Manger: crayfish and avocado salad followed by half a mini bar of dark salted chocolate with a Diet Pepsi.
Mid-afternoon at an independent coffee shop: black coffee and smuggled in peanut phd bar.
Dinner at pub on the way home: gammon, egg, pineapple ring, mushroom, tomato and peas. Oppo and strawberries when I got home as carb intake so far was well under my 60g top limit :)

Shelley, if your surgery is like mine, your bloods will appear as soon as the Doc who ordered them has seen them. Whilst the lab will have been working (although probably at skeleton level) over the weekend, the GPs likely haven't. It may magically appear tomorrow morning.

Fingers crossed for you. My veins are like the channel tunnels, and stand oiut all be themselves, so not usually an issue, but I bled like a stuck pig last time - explained by the phlebotomist as being because she only had to take a very small sample, for thyroid testing. Thankfully, I didn't bruisse.

Oh, and to be on topic. After today, it's a miracle I don't look like a cheese.

Wondering whether to get some of the others instead though.... or as well as.

I'm not as keen on the chocolate brownie. Still good for 2g carbs but given the choice I'd take the blondie every time. The greenie does look nice though.
 
Hi all

Day off today and enjoyed another day out in the sun visiting Hall Place house and gardens. Gorgeous. Menu was:

Breakfast - none

Lunch - was aiming for a fasting day but very hungry so ate a bag of Awfully Posh pork crackling I had with me.

Dinner - 2 Waitrose free range Cumberland sausages, 2 rashers bacon, 1 Birds Eye burger followed by one of my lazy desserts: extra thick double cream mixed with almond butter and 2 broken up Hotel Chocolat 100% buttons. Finished off with another 3 of the buttons.
 
Hi all busy day today lots of sorting to do mixed in with a few checks of my online records but no luck - will find out in am either result or if they need more blood! Will let you know once I know! Going for a A few days up north and then off to Spain.
Breakfast one sausage and fried egg
Lunch cheese and one slice of low carb bread
Afternoon tea low carb lemon drizzle
Dinner beef stir fry with bean spaghetti, jelly mousse later
Interestingly in past few days afternoon tea with low carb cake has resulted in significantly lower pre dinner readings Don’t know why - I’ve tended to avoid snacks as a general rule. Maybe it’s sitting and enjoying the garden and the sun!

L: cold venison sausage from bbq last night, leek and goats cheese crustless pie
D: cold chicken kebab from bbq, rocket, avocado, onion, fried chorizo slices, mayo; peanut butter fudge/flapjack thing with strawberries and Oppo

Appointment tomorrow with DN to discuss being put on Metformin:oops::eek::grumpy:

Glorious sunny day so hope you all enjoyed it. Not quite the day I reckoned on but I have had much worse May 8ths!
Menu today uninspiring and probably dysfunctional but all mine.

B: 2x SD mug tea - 1 almond milk and 1 with double cream;
30 mins static cycle with 5 HIIT sessions @ 145+HR Up to now all good
MMS: Starbucks mug coffee and double cream
L: Avocado; 100 gms cheddar; psylium husk powder; Homemade Mayo; water. OK at this point
Cut 400 gms Asparagus and collected 7 more eggs for 1600 steps
MAS: 2 x SD mugs tea 1 each double cream and homemade almond milk
D: Nothing. At 6.30 we hadn't eaten so I decided it was too late and will eat again tomorrow lunchtime. Wonder if the LC Eaton mess I would have had will be edible?
Dog walk. Dogs are oldish so try to avoid heat of the day
Macros taken from my usual source: 4% from carbs, 85% from fat and 11% from protein probably around 1200 cals and yesterday about the same. I think I have come to the end of this little experiment!

B:scrambled eggs with avocado

L: salami, cheese, celery and macadamia nuts followed by lazy chocolate mousse.

D: roast beef, roast celeriac, broccoli and cauliflower cheese ( the easy method, thanks @shelley262 and @Goonergal)

Shelley hope your travels go according to plan and you can relax a bit in Spain.

L: salami, cheese, celery and macadamia nuts followed by lazy chocolate mousse.

D: roast beef, roast celeriac, broccoli and cauliflower cheese ( the easy method, thanks @shelley262 and @Goonergal)

Shelley hope your travels go according to plan and you can relax a bit in Spain.

Lazy chocolate mousse was invented by @Goonergal and is just 100% chocolate( 5 Hotel Chocolate buttons for 1g carb) melted in the microwave and stirred into a dollop of extra thick double cream.

I notice in her post today she has simplified things even more by stirring in almond butter instead of melted chocolate. Sounds good!

@Brunneria should really take the credit for the mousse. I’ve just taken the lazy part to extremes!

It really is delish I tried it for first time a few days ago and both I and my OH thought it was a keeper. I also grate those buttons on oppo vanilla ice cream and at 0.2g per button they are a life sAver when in need of a low carb choc fix.
