What have you eaten today? (Low carb forum)

Used to LOVE kale crisps.
Don’t EVER buy them. The prices are ridiculous.

I used to use olive oil massaged gently all over the kale (take out the ribs as you do this)
Then i would scatter/crumble/rub in a seasoned paste made of garlic, Pataks curry paste and blitzed cashew nuts.
Then dehydrate til light, crisp and translucent.
They keep fresh in kilner jars for a good while. Not that they lasted long ;)

Lots of other recipes on the web.

Balsamic vinegar was a good sprinkle too.
Also marmite and Parmesan.

Oooh, I am salivating reminiscently.

Today’s food has been:
1pm tin of tuna with lots of mayo
5pm salami crisps
7pm beef mince pan fried with a few curry spices

There was an accident with the latest Tescos order. Halo choc/mint arrived. Very strange. Pity to waste it though...

It was the Halo Choc Chip Mint that led to my discovery that I suddenly liked mint after donkeys years of thinking it was revolting.
 
persuaded myself it was simply fried onion so ate most of it. Still waiting for 2hr bg so time will tell.

Could have been worse, I nearly succumbed to a few of daughter’s sweet potato chips, at least I managed to resist those.
 
Don't think I meant to imply I felt obliged to love them, I can see how they should work I think the trick will be getting tjhe right salami and timing/method. I have never tried Oppo as I am a big fan of homemade ice cream with homegrown fruit. But as they say, your mileage may vary. I agree about chorizo, tend to get it into as many dishes as I can.

Whilst folks have managed to calculate the correct timings for their own microwaves, of course they'll all vary. If you're having trouble getting them crispy start with about a third of the time, then check and turn over, onto an unused part of the kitchen roll, then blast in 10 or 20 second bursts until you achieve what you want.

If you're cooking them over a covered rolling pin, or whatever, to achieve a proper Pretendy-Pringles bend, then only turn them over the once.

I seem to have recovered from whatever was wrong with me. Bed 5.5 FBG 5.8 and I've been low 4's most of the day. Nasty DPs gone too.
B. Just coffee
L. Mattesons smoked sausage
D. Salmon fillet with chilli and soy, 4 small scallops, lettuce, Santini tomatoes, 1/2 avocado, mini mozzarella pearls and 2 Walnuts.
2 squares Lindt 90%.
Was later getting to swimming with No 1 grandson but he still made sure he got his full ration 3.40 before we got out of the Club.

Thanks for all the hints an tips. Like everything it is all trial and personal taste. I just need to play around with timings and optimal thickness of salami - should get to know staff at deli counters well experimenting ;)

I have a load of salami and chorizo in my fridge and I am trying to resist the temptation to go 'crisp' them. I keep telling myself it's 1030 , you don't need them. Will content myself with Graham Norton
 
Very serious request please. Has anyone managed to cook pastrami in either an instant pot or sous vide? I have yet to get to Katz deli but want to make my own not so little slices of heaven! Morrisons had some coated brisket which gave me the idea and once an idea is planted I find it difficult to rest until I have tested it to distraction.
Edit: Some very good info on The Net and an instructive 15 min video but other input would still be appreciated!

Have been asked for high fibre chocolate toffee bar recipe. This is in development but the story so far is here.
Lifted this from fasting thread as it belongs here better. Version1.0 of high fibre chocolate caramel bars:
@ziggy_w, still in development but at present 100% chocolate; flaxseed; psyllium husk powder; butter; inulin; stevia. In my opinion they are much better left in fridge for a few days.
Melt butter (I think about 100 gms but we didn't weigh first ime and mix in flaxseed and psyllium husk powder ( amount judged by size of moulds to leave space for layers of toffee and chocolate) and press down hard into moulds. Place moulds in fridge to set. Mix butter, inulin and stevia in a saucepan and heat - whisking constantly - it will very suddenly go toffee colour - strain off some butter as it will separate the butter and/or toffee could be mixed with flaxseed psyllium combo at this stage; This time we used about 100 gms butter, 2 tsp inulin and 1 tbl spoon stevia but next time will use much more inulin as we have bigger moulds; melt chocloate again depends on mould size - add sweetner if you want; remove bars from moulds carefully; Next time I think take out base and put chocolate in bottom then put base onto the chocolate; Place toffee on top of flaxseed base quite quickly as it goes hard; Keep chocolate warm or reheat and coat tops of bars; I add raspberries sometimes -when dehydrator comes that will be even better. They are crisper and nicer for me if left in the fridge a few days.
Quantities depend on mould size really. We have now bought food grade soap moulds which are deeper and will allow raspberries, nuts etc much better. Hope this helps :)

Hi all. Catching up a bit. Still feeling rotten and BG not playing ball.

Yesterday was at a cricket match with a friend - her sister gave her a match ticket including tour of the Oval and afternoon tea. Ate my way through various low carb snacks including pork crackling, cheese, peperami, salted almonds and 90% chocolate. That was all before the tea! At the tea ate enormous portion of clotted cream and a couple of small scones (sultanas picked out). Decided to try the Victoria sponge. Wow, so sweet I had to stop after less than a small bite. Friend said my face was a picture. My pre-ordered, promised plate of sandwich fillings minus bread eventually appeared disguised as a Parma ham salad.

Today was an OMAD day in attempt to get blood sugars down. 4.5 before dinner which is much better than the past few days, but still higher than normal. Cooked my first ever short rib - didn’t realise it would shrink quite so much. That and accompanying buttered cabbage wasn’t quite enough so had generous portion of extra thick cream mixed with almond butter and Hotel Chocolat 100% drops.
 
Bed 4.7 FBG 4.6 - normality has returned. Watched a bit of the wedding then off out shopping. Another glorious day.
B. A bit of Mattesons smoked sausage with 2 scrambled eggs ( think Hubby was happy fishy breakfasts had gone. Short lived though)
L. Leftover salmon from yesterday, leftover prawns, 1/4 avocado, leftover mini mozzarella pearls and 4 Santini tomatoes. Sounds a lot but was just bits.
D. Slice each of roast pork leg, turkey and ham. 4 Santini tomatoes, waldorf salad and coleslaw. 2 walnuts and 2 baby beets.
Tassimo Americano Grande with a dash of cream when I came back with the shopping.
Intended baking today but a nap got in the way inbetween shopping and giving the bathrooms/fridge a good clean.
 
Between not really having eaten since ending fast. oldest son's birthday and new toys arriving a real pig out day. May have missed a few bits and pieces but what I can recall of menu is below:

B: 2X mugs Tea with almond milk: 3 slices chicken breast; olives and feta; homemade high fibre chocolate caramel bar ( 100% chocolate; flaxseed; psyllium husk powder; butter; inulin; stevia much better left in fridge for a few days)
MMS: 1 travel mug coffee with double cream
L: 2 X pint mug tea with alomond milk
MAS: Salami crisps; chorizo crisps; guacamole; salsa; goats cheese and salami; parma ham and goats cheese; kale chips
D: Jerk sausage; 8oz burger; tomatoes; mixed salad; small slice chocolate birthday cake; lemon drizzle cake; double cream; 4 strawberries; Woodford reserve bourbon
 
B: coconut porridge with a few raspberries and spoonful of cream.

L: 1/2 avocado smoked salmon. Coffee and cream

Afternoon: sitting in the garden, English sparkling rose, salami crisps, olives, garlic prawns, pork scratchings. Fabulous!

Later: 2sausages, 3 Hotel Choc buttons.

There is still a bit of wine left I think and everyone else has gone so that’s my nightcap sorted.

Hope you all had a lovely Royal wedding day, whether or not you watched it.

I haven't done pastrami yet, although I have considered it; I like pastrami. :)

Are you new to both IP and sous vide, or have you had your pot a while?

I’m still struggling with my cold too, feel hungrier than normal but haven’t over eaten or eaten more carbs than normal but my BG is a bit higher than normal :hungover:
 
Both arrived in the last 24 hours. Watched a good youtube walk through of how to do it so very keen to have a go

To be compliant to the thread, today I had a bitty day, but my evening meal had lobbing a few things on the BBQ, and doing a stir fry on the side burner. :)
