What have you eaten today? (Low carb forum)

I have my results as I can view them online, however, I’m not brave enough to look, I am seeing DN on Friday :)
I always check in on line multiple times a day til they show up! :joyful: Will you look before your appt?

They are there, I’m just not brave enough to look for the result, silly I know but maybe temptation will get the better of me before Friday. Not entirely sure what I’d be looking for or at as I’ve never had access to them before.

If curiosity gets the better of you, you know there’ll always be help on these forums to interpret the results. Just do it in daylight hours or you may have to wait for an answer! ;)
 
Breakfast:nothing
Lunch:beef super noodles with a slice of bread (had 5 units of novorapid with this my nurse suggests I take novorapid with meals depending on what I’m eating and my BG) bg pre lunch was 5.2 post lunch was 7.3
Afternoon snack: a small bag of dry roast peanuts. Pre snack I was 4.1 afterwards I was 5.0
Dinner:small bowl of chips and a Diet Coke 5.0 before dinner and I haven’t got a 2 hours after since I only ate about 45 mins ago

Im new to type 2 diagnosis but i was a bit shocked at your diet
 
Out to a local cafe for breakfast: fried egg 2 rashers bacon 1/2 fried tomato 1/2 cumberland sausage ( gave other half to Mr C as I thought it was a bit cereal-y) lots of fried mushrooms which they happily substituted for the chips that usually accompany the set breakfast!

L: bag of pork scratchings and 3 strawberries in the garden with 3 glasses bubbly over the course of the afternoon. Didn’t get much gardening done.

D: slow roast pork belly, celeriac dauphinoise ( snap @maglil55 it is fab I agree)
Green beans.
Cooked some Jersey Royals for the others, I’m going to try one reheated tomorrow (A1c test in the morning so didnt want to tempt fate today).
Celeriac dauphinoise - I liked it so much I made it again yesterday and I have enough for today again. To be honest it tastes just like the potato dauphinoise. I must do more experimentation with celeriac.

Jersey royals - I can get away with 2 small ones with butter on them occasionally but I do mean occasionally. I keep the carbs low on whatever I have with them.

My daughter actually said she preferred the celeriac version to potato! I think I’d agree, it has more flavour. Even Mr C ate it all and he professes not to like celeriac ( tbh I didn’t tell him what it was)

Looking forward to the Jersey Royals later. Fingers crossed.

@Rachox very interesting about BG in the heat. I’m finding the same - last summer, especially when overseas, numbers shot up whilst out in the sun. Doesn’t seem to be happening so far this year.

@maglil55 just reading your post made me tired! Where do you get your energy from?

Another 23/1 fasting day today: love the decadent meals that go with that. Dinner was beef short rib followed by lazy dessert of extra thick double cream mixed with almond butter and Hotel Chocolat 100% buttons.
Sometimes I don't have energy - I just flake out at night! This week isn't quite as bad but I still have loads of running about and DP is still an issue. Now I have the school clothes order for next year I'll be starting on sewing the boys labels on over the holidays. Mum used the stick ons but a few washes and they come off. Sew ons last and if you'd ever experienced the lost clothing ROOM at grandsons school you'd understand why I sit and patiently sew labels on! At least it's restful and not running around.

@DJC3 and @maglil55 i agree re celeriac it’s amazing mashed too love it over spicy mince like a shepherd pie also love celeriac chips and roasties just hate cutting it! Nearly slice finger every time !

Goodness, days to catch up on AGAIN!

Saturday was another meal out. This time for no reason at all.

1pm I had my first proper vegetable portion in 6 months (Baba Ganoush as a starter), mainly because I had never tasted baba ganoush before, and wanted to find out if it is as delicious as I have read. It is. The plate had 2 quenelles of baba ganoush, one of tahini, one of pesto, all on a bed of baby salad leaves, with a blob of spiced apple puree in the centre. Then the whole was artistically scattered with chargrilled 'waffer thin' morsels of courgette and a few pine nuts, with 'tomato water' on the side.
Everything exquisite except for the tomato water which was, IMHO a preposterous cheffiness and a total waste of time. I mean, who wants to pour slightly green tinted almost tasteless water over a perfectly good salad?

Then I had the standard beefburger, with tomato mayo, and left the chips, and the bun. Mr B ate the onion rings.

I thought I had got away with the veg, but then had gut cramps all evening.
Nothing more unpleasnt though, which is a good sign. :)
So things are defintely improving, and I have to say, that starter was exquisite.

10am steak and eggs
7pm atomic buffalo turds (more veg! may be spinning out of controll! Hold me back folks!)

Now, before people start reporting me for offensively scatalogical eating habits, have a look at the links below.
Atomic Buffalo Turds are indeed a 'real' thing.
And most delicious.

For my version, I got a punnet of those wee baby peppers, sliced each in half, filled with cream cheese, under a smear of smoked chipotle and a dusting of chilli, with sliced chorizo over that, each one wrapped in a half slice of streaky smoked bacon.
25 mins in the oven at 190 degrees, and voila! perfect TV finger food.
Although to be honest I did end up only eating a few of the pepper shells, and peeling/sucking the bacon, chorizo, cheese combo out of the rest.
Mr B adores them on many levels ;)

I did actually consider renaming them Atomic Buffalo Poops
But then I realised that if I did that, people might go googling that name, and not find the turd recipes...

:D
 
Whoops - didn’t mean to send those then!

Was intending to add that I too hate peeling and slicing celeriac, but it’s easier than swede!
