What have you eaten today? (Low carb forum)

Good evening all. Real Curate's egg of a day today. Worst bits were fbg and fathead pizza - fbg bit unexpected pizza about what I expected. Best bits were grandson coming to stay and data from heart rate monitor for log spitting. Walk still to come so day should end better.

Breakfast+Mid morning snack: Several pints of tea with h/m almond milk
Lunch : Vente Filter coffee with inulin and cream
Afternoon snack: Smaller mug filter coffee and cream
Evening meal: Fathead pizza with cheddar, salami and mushroom topping; celeriac remoulade and cucumber ;will walk, wait, test then maybe have high fibre chocky bar and sea salt caramel Halo Top
 
Breakfast - chocolate chia pudding and berries, tea

Lunch - daughter took me to Wagamama which is tricky but I had lollipop prawns, wok fried greens, chicken wings and a tiny bit of her Samla chicken curry (which I LOVE and used to be my favourite)

Dinner - salmon and spinach

Snacks - nuts, jelly and cream
 
Bed 5.7 FBG 4.8. Despite fairly normal figures until I got a 9.4 DP blast. Rechecked last nights food but can't see anything that would cause a delayed DP. Don't feel unwell but it has been up and down like a yo yo all morning. Decided an OMAD was called for but that didn't seem to satisfy the BGs for a while. Anyway, let's see what tomorrow brings.
B. Tassimo Americano grande with a dash of cream.
L. Nothing just lots of water.
D. Slice of ox tongue, roast pork, 1/2 Slice roast beef and smoked turkey, bit chicken breast , 4 bistro tomatoes, lettuce, 1/2 avocado, tablespoon picked red cabbage, boiled egg and Helmanns.
Going to visit sister tomorrow. Got her a bag of Queasy Drops so see if it helps with the nausea. Also got her a mini beanbag which she can put on her knee to hold her tablet/kindle etc and it has little pockets for telephone/remotes etc. Found them on this site Live Better with Cancer. I know I get tired reading in bed with my tablet so she is bound to get sore wrists. Seemed such a clever little idea. Queasy Drops? Worth a try.

Hi all
Journey back busy lots of traffic but weather better so not as stressful back safe and mum all unpacked and settled in I’ve just tucked her up in bed and will be heading to mine very soon as tired!
Breakfast bacon and egg
Lunch ham and home made coleslaw
Dinner ham salad followed by lc lemon and lime mousse.
Cooked ham a few days ago to make today easier!
Taking mum on shopping trip in the morning and meeting youngest son for lunch.

It’s been like winter here today, drizzle on and off all day, some heavier rain too. Fog this morning and cold!

L home made cauliflower soup small pack pork scratchings
Snack half a PhD smart bar
When I got home I whizzed up an almond milk, almond butter smoothie,
D fried egg, couple of halloumi chips, ham, 2 large strawberries and cream

Hope you have a good visit with your sister tomorrow @maglil55 they are such thoughtful gifts - Ive never heard of queasy drops, fingers crossed that they work.

@ianpspurs I’m glad you managed to shake of the melancholia, I’m sure having your grandson around was a huge help.

Breakfast today: My go to breakfast of smoked salmon scrambled egg and avocado. Coffee with cream.

Lunch: celeriac remoulade with added walnuts, and leftover cheese zucchini bake. It was much better cold, just like a crustless quiche and the courgettes werent as sloppy. Slice of lemon drizzle cake and coffee with cream.

Dinner: I was v organized today and put spare ribs in the slow cooker so they’d be ready when I got in from yoga. Recipe was from Recipesthatcrock.com and used Diet Coke, they turned out pretty well. Had them with cauli rice and salad. Followed by another slice of lemon drizzle cake warmed up and with a dollop of clotted cream.
 
What was wrong with the pizza?
Topping was fine as it was my choice. Base was not very nice - mouthfeel was wrong. I have found almost all savoury things made with almond flour vaguely unpleasant. I was never a big pizza fan but I thought I'd try it as our grandson likes pizza and it would look as though we were all eating the same. Not a total disaster as the topping meant I ate half and it was filling. Had I eaten anything else today I wouldn't have bothered after a small slice but that's just me.

@jayney27 do you have a recipe for the almond milk/almond butter smoothie?
Hi I made it up, I think it might need a little bit of adaptation as it wasn’t quite thick enough but it was ok for a first attempt,
I used 1 tbsp almond nut butter, 1 tbsp thick double cream, 1 tsp erthyriol and 200mls almond milk and blitzed it in my nutri bullet.
 
Breakfast: none! :wideyed: Fasting for blood test! Missed my coconut ‘porridge’ :(
Lunch: lemon and garlic chicken with cauliflower, broccoli and red onion salad followed by Greek yoghurt and raspberries.
Mid afternoon: raspberry chia pudding and black coffee.
Dinner: butternut squashetti bolognese followed by strawberries and salted caramel Oppo with a sprinkling of LC chocolate granola.
Nurse did more than just my bloods this morning, she checked my feet, my weight and BP, which were all ok. Ticked alcohol, smoking and retinal screening off her list. Took a wee specimen too. I just have to wait for results (on line) and review with GP end of next week :)

I wish I could buy an ox tongue to cook. It is something I have not tasted since childhood as we do not have many oxen anymore. I recall them being the size of bison tongue

Whatever is a tassimo Americano grande?
Coffee pods. Tassimo is the make.

Thanks. I’ll give that a go.

Maybe add some ground chia seeds? I picked some up in Lidl quite cheaply. Have only used the whole seeds before - these might be good for thickening purposes.

All - I’m on the lookout for quick and easy recipes that will suit my fussy/simple tastes.

Any involving fish particularly welcome. NB allergic to mushrooms and celery and anything involving any spice is out (herbs are fine)
