What have you eaten today? (Low carb forum)

Hi all hope you all had a good day. I had a wonderful Pilates session and also really enjoyed my meals. @Tori71 you reminded me of the Hilo bread - not bought low carb bread for ages but have been looking wistfully at OHs bread and toast recently so decided to get a Hilo loaf in last shop split it and freeze it and have another go with it. Know it is 4.8g of carb per slice but wonder if by freezing and toasting it may make it more resistant starch. My pre dinner reading two hours after lunch was it’s usual low so worked for me today!
Breakfast one slice of Hilo toasted with one boiled egg
Lunch veggie soup and one slice of Hilo toast followed by coffee and one square of 95% Lidl choc
Dinner pork chop, braised celery, on bed of Mushrooms followed by SF raspberry jelly with cream.
So had a few more day time carbs than usual - but hopefully not too high- it’s my weekly ketone testing in the morning so will be interesting to see if it has lowered my average good weekly reading.
 
But 5.4 isn’t ‘very high’ by any stretch of the imagination. I’d be chuffed with it.
For a pack of rolitos it is ridiculous - especially after a dog walk. A pack of rolitos ain't far off of fresh air

Quite a nice day today.
Breakfast: DD breakfast sandwich
Lunch: 50g smoked salmon, cream cheese and the still just about edible bits of an avocado I found in the bottom of the fridge.
20g almonds and 20g Callebaut chocolate buttons.
Dinner - picked up girls from school - they wanted pizza so we all made and ate fathead pizza. Sour cream on mine with chorizo, mushroom, jalapeno and red pepper.
No red wine tonight.
 
Breakfast - 3 cups of tea - some days one or even two just isn’t enough! With my usual peanut & chocolate protein bar

No lunch as just manic at work

Dinner is a total mash up of whatever was in my fridge and needed eating, plus I’d already cooked 2 separate meals for the rest of the family so I have chilli chicken wings, chorizo and chilli cheese slices, roasted peppers, onions courgettes and cherry tomatoes and then a dollop of cathedral mature cheese spread.
Really wish I liked wine as it’s the sort of day I could have done with a large glass!
 
I didn’t get below 6 all day so I still say it ain’t high.
You can have a hug. I have been getting really odd readings all day BUT bigger issue for me is how the heck I maintain decent bg levels and weight. I still don't see that level as good value for a rubbish "meal" It is significantly above trend for lunch which is usually a huge salad - by huge I mean a family sized pasta serving bowl full to overflowing. Rolitos aren't food so the number per se is fine but for that input it is ridiculous.
This whole thing is a cost benefit analysis for me - that one failed. Would have been better not eating IMHO

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cod fillet with creamy peppercorn sauce and a few peas and sweetcorn followed by Greek yoghurt and raspberries.
Mid afternoon: raspberry chia pudding and black coffee.
Dinner: extra strong cheddar and mushroom omelette with cauliflower, broccoli and red onion salad followed by SF jelly, cream and LC chocolate granola.

Were you involved in the crunch? Hope not but hope you and vehicle are ok if you were

Are you trying to maintain weight as well? That seems to be my problem.
Bgs went down substantially when I was doing 30hr fasts but I lost weight too. If I eat more, weight is stable but bgs go up, even with <20g carbs. It’s such a bloomin nuicance.

Yep. BMI 22 -11-9 was a target. Keeping there whilst keeping lowish bg is hard. I find fasting easy. Can't find a breakfast that works either.
 
I hve seen it described as 'whooshing'. Where you wait and wait and wait and then the scale drops sharply and then stops.
Can't remember her name, but we had a lady a couple of years ago posting who said she started off at around 350 pounds, and went for weeks losing slowly, then whooshed down 2-3 pounds a day for weeks, then stalled for months, then lost slowly again... the human body is amazing.
I looked that up because I was curious. So apparently what happens is when you lose fat it gets replaced with water so you don't initially lose weight. Then just one day you lose all the water resulting in the big weight loss numbers. Then the cycle repeats. They also say that's why where you lost the fat feels "softer" - because it's water for a while. I have noticed that - where I've lost fat, like my belly, is not solid anymore; it's kind of "jiggly". Fascinating!
