What have you eaten today? (Low carb forum)

I am expected back in my previous role Jan 1st, current manager has promised to complete the process for permanent role where I am before we break for Christmas but that’s not looking likely now. I’m going to meet with the head of department for my old role tomorrow to try and help me make a decision. I’m too old for all this malarkey lol
Good luck with that. Hope you can sort out what you want. I was fortunate that the job I did I loved so I never wanted to leave it. My hubby just thought I was weird actually looking forward to going to work.
 
I have now entered a very strange world indeed so not sure I will be posting menus. Tested after just drinking tea with almond milk - 7.4. Instinct is to fast but look at porker on the left - surely that is wrong??:arghh::arghh:

Your skillet bread... I think this is something that Mr B would enjoy. :D

BUT the whole skillet part is not gonna work for me.

I can’t/won’t use the big gas oven. Never had a successful meal out of it, because it heats unevenly and the temp gauge idiosyncratic to say the least. New cooker planned, but in the meantime I manage very well with one of those lovely wee halogen ovens. And no skillet will fit insde it.

Would it work if I just used a cake tin?
 
Ah. Baileys. Used to threaten my constituency there will be no Christmas dinner if I did not get a bottle to keep me going on 25th! This will be my 2nd Christmas without.

I don’t see why not. Almost tried that or a casserole dish as my skillet is really a bit too big for the oven - had to balance it on the edge of the oven shelf to fit it in, so mine wasn’t totally evenly cooked as the batter shifted towards one side. The recipe calls for the skillet to be heated in advance but no reason why you couldn’t do that with a cake tin. It’s very tasty!

Hi all
Hope good day had by all despite the seriously yucky cold, misty wet weather - well it was in West Midlands, felt like early evening all day long!
Breakfast one slice of Hilo toast and fried egg
Lunch cheese and nuts plus sliver of 85% choc
Dinner wild salmon, hollandaise sauce and squash and celeriac chips with glass dry white followed by lc raspberry pudding and fage yoghurt.
 
Hi all. Second hungry day in a row. Was ravenous by lunchtime.

Lunch was at cafe near work with my work pal. 3 rashers bacon, 2 fried eggs and some grated cheese on the side - needed something extra and suspect the sausages and burgers there have lots of fillers. Really hit the spot.

Dinner was ribeye steak with garlic butter followed by 2 desserts. First was clotted cream with single serve almond butter. Second was some of the 65% milk chocolate with hazelnuts and some extra thick double cream.

@Brunneria hope Mr B enjoys the cheesy bread. May have to take some to work for lunch tomorrow.
 
No breakfast or lunch today, just 2 teas and 2 coffees, more so due to being run off me feet at work and no time to stop
Currently got my chicken sizzling in the wok and about to throw in peppers, cabbage, onion and a few beansprouts to make a stir fry
Have also spent 10mins on dietdoctor tonight and printed some Keto recipes (mainly chocolate puddings in truth) in the positive aim of falling back in love with cooking food that’s yummy to eat and so hopefully reignite my love for food!

Discovered Pink Gin last week

Ooh I love gin in most forms. Pink gin has a couple if drops of angostura bitters in hasn’t it? I’ve made it when I worked in a bar as a student, but never tasted it.
I’ve discovered Elemental Raspberry gin recently though -it’s a small Cornish distillery ( Elemental gin) and they made the raspberry version for one of the founder’s dad who is a diabetic and missed sloe gin ( but couldn’t drink it because of the sugar) it is wonderful! I bought a bottle for me and a bottle for a friend for a Christmas present, but I fear both bottles will be gone by mid December!

Single serve almond butter? Where do you get that? I’ve stopped buying the jars as I can easily finish off a whole jar when I only meant to use a spoonful.
