What have you eaten today? (Low carb forum)

Ginger tea for breakfast
Brunch out at cafe, mushroom and scrambled egg on toast -without the toast, and two creamy cups of coffee.
Dinner, picking and grazing on fathead sausage roll, cheeseboard, mixed nuts, sugar free tonic water. Feel like having a beer, but resisting the temptation.
Had a walk in fresh air today, for first time in ages. Will repeat the exercise tomorrow. Slobbing about has become a tiresome habit that I intend to break.
 
@Goonergal - welcome back. @shelley262 - quite a couple of days! Why is it major appliances seem to go on days where it is nigh on impossible to get a tradesman. Well done on sorting things out for New year's eve. 2 years ago my fridge/freezer went on boxing day. We had to survive for3 weeks using a tiny drinks fridge. @DJC3 - the Dane is your Daughter's isn't it? Or have I missed something and you've taken on 2 Danes? @Brunneria - glad you and Mr B are recovering. I've missed the last couple of days but pretty easy to remember. I've had the boys staying so some refereeing was required. Anyway -
Thursday -Bed 6.2 FBG 6.5
B. Tassimo Americano grande with a dash of cream. Slice Morrisons high protein wholemeal toast with pate pate.
L. Bit of that M&S layered salmon terrine
D. A can't be bothered meal as has been busy catching up on ironing , changing the beds etc. Slice of ox tongue, slice pork loin and marinaded beef. Lettuce, Santini tomatoes, 1/2 avocado, 1/2 egg. Low Carb creme brulee with raspberries.
Friday - bed 6.4 FBG 6.2
Pretty much the same as yesterday but decided to have a cooked breakfast while I could.
B. 4 mini chipolatos, slice GF black pudding, 3 rashers crispy streaky bacon and a fried egg (double yolker too). Tassimo Americanogrande with a dash of cream.
L. Raspberry PHD bar - took boys to library only to discover web site was wrong - they were not open! Took them to Tesco to spend some Christmas money and No 2 needed new wellies.
D. Busy making macaroni for Hubby and the boys. No 2 has developed a liking for Viennetta. After dinner, play , showers etc story time - I'd forgotten how Grim Grimm's tales can be. Both boys out for the count by 8.05pm though. Went for eventually slice of ox tongue, pork loin, lettuce, tomato and boiled egg. Yet another low carb creme brulee and a low carb Bailey's.
Saturday - they may have conked out reasonably early but they were awake and arguing by 6.20am. Gave up and got up at 6 35 to referee again.
Bed 6.3 FBG 5.9 but rising on referee duty!
B. Slice ox tongue and a boiled egg while sorting out boys breakfast. They were very hungry this morning and eating non stop. Managed a coffee as well.
L. Another boiled egg on the move late afternoon. Took son shopping first , I continued referee duties then deposited them all home and went off to do my own shopping. Hubby off to football (they lost) so another can't be bothered meal.
D. Slice pork leg and ox tongue. Tuners chicken filler, boiled egg and yet another LC creme brulee with blackberries. Hubby back from football cold, miserable and now sleeping. May yet have a low carb Bailey's. Niece is off to Glasgow to see the Bodyguard. I'm looking forward to no early morning racket!

Ah yes, I do hope she knows the time will hopefully come when she can. I used to work in counsellor training and we did a lot of work around loss and grief so I know the territory and the process, but it's not quite the same when its your own x

I’m sorry. Condolences are always so inadequate, having good memories of the funeral will help, but you knew that.

Hi @maglil55 - things sound as hectic as ever in your neck of the woods.
Both Danes are my daughters - the rescue centre she got Melody ( black one) from rang her a few weeks ago and said they had another that would be perfect for her! She lives in the tiniest cottage with a very tall husband and 2 small children so its snug round there but she is very happy with her lot.
I agree Grimm’s fairy tales are terrifying!

Fathead sausage roll sounds like a good idea - I’m trying to think of New Year’s Eve party food I can eat, I’m a bit bored of cheese and olives. We’re off to daughter’s for a buffet type do. She’s getting salami/ parma ham and that sort of stuff for me but everyone there will be having The usual carby buffet fare.
 
I also made some with a mix of black pudding and sausage meat, @DJC3 . I don't like black pudding but they went down well with even the carb loving friends.
Black Porkies! Loved them. You can also do them with haggis. I soften down chopped onion in butter then mix the onion with parsley and the sausage meat/black pudding or sausage meat/haggis and then made cocktail sized sausage rolls. Beaten egg to bind the mix. I'd tend now to increase the sausage meat content.
Still on the subject of sausage meat you could make mini Scotch eggs with quail eggs ( swine to peel) , wrap in sausage meat and use the LC crumb mix of almond flour, parmesan, sesame seeds and season.
Do chicken strips the same way with the crunchy crumb and serve with a LC dip.
If you have mini molds - make bacon cups with rolled out streaky bacon. Beat up eggs and add grated cheese, cream and season. Cook chopped up bits - peppers, mushroom, tomato - whatever. Add a little to each cup then top up with the beaten egg mix and bake - delicious cold or warm.
Salami crisps. Chorizo crisps. Also going to do courgette crisps to make use of my new processor. Trick with them is to dry them on kitchen towel before salting and oiling them. Then let them dry out on a baking tray on greaseproof in the oven. Just keep an eye on them.
Devilled eggs.
Strawberries dipped in dark chocolate.
Fat bombs - loads of flavours.

Loads here too. There's a variation on the mini bacon cup filling it with guacamole. The stuffed mini peppers are good and don't forget either lo dough or fat head pizza.

It was. I'm loving the blackberries just now. Hectic is very true. No 2 was annoying big brother hence the referee duties as he was quite annoyed with him because he dropped a Lego ship that took ages to build and it broke. He wasn't about to forgive him even with the knowledge it can be rebuilt.
I really had forgotten how scary some of these fairy tales were with quite unpleasant endings. Took me a while to find a story with a reasonable ending.
 
Long day down to the south coast for a belated Xmas celebrations with my parents.
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch at Brewers Fayre: (got to choose a main meal without having to ask for substitutions :)) 6oz steak, grilled tomato, mushrooms and green veggies (peas, runner beans, mange tout, brocolli and Brussels sprouts) followed by smuggled in Oppo cheesecake with cream.
Mid afternoon: black coffee.
Dinner: cold meats and salad buffet followed by LC carrot cake and cream.
 
Tea....we shared two veg bakes with chili..(1 each, small)
broccoli rice, (M&S) splash of soy for flavour..
( Missus not impressed, but i added, the chopped onion/jalapenos..and i liked.)
Be trying that with a veg/chicken curry at some point.

The usuals 3 scoops of GY, with the 10 berries, for pudding for a change...Yum.

Had the week off, and missus off as well, but got flu-ish symptoms.
been nice ..i've played nurse Ratched all week...and impressed her with my new cooking skills
and presentations.

Pace has been slow and steady, many lazy days since boxing day..
a nice break from the norm.
One more day then back to the office on monday and back on the chain gang.

You can also do a variation on duck and pancakes I.e. no pancakes. Cut the duck breast into thin strips and toss in olive oil and 5 spice. Cook in a wok for a min or so then add about 50 mls hoi sin *don't want too much as this is where the carbs come from. Cucumber and spring onion is finely cut as normal. Instead of The pancake use a small lettuce leaf, add some cucumber and spring onion, top with the duck and sprinkle with sesame seeds.
Other old standbys chicken wings, chicken skewers and mini ribs. Bunless mini cheese burgers.
Another favourite of mine is making mini fish parcels. I use filo which is 14g carbs per sheet but it depends how many squares you cut out of the sheet. Butter the filo sheet with melted butter, cut into squares, add a cube of salmon to each square, sprinkle with paprika and seal into a money bag shape. They don't take long to cook in the oven and are lovely hot or cold. Serve with curried mayo dip ( mayo, cream and curry powder or paste).
