What have you eaten today? (Low carb forum)

Day 2 of Tai Chi DVD was a lot better. I did the same routine an hour after breakfast and my BG went down by 1.3 units. I did use the chair as recommended by @maglil55 so didn't get that going to fall over feeling even though I didn't use it much. I think it will become easier with repetition and hopefully my posture for the movements will improve. So, meals...

Breakfast: Kippers and scrambled eggs

Lunch: Nothing

Dinner: Lamb stew

Pudding: Greek yoghurt with chia seeds

Drinks: black decaff coffee, still mineral water, Asda lemon meringue flavoured tea, yet more water
Glad it worked. I find a lot of the time it's the psychological knowledge of it being there just in case. You'll notice I made sure I had a slice of high protein toast before rushing off to aqua and BGs obliged by dropping.
 
well heads been away with the fairies last few days, sorry for no posts

so here's my food tally
Tues
Breakfast /brunch..made cottage pie monday, so leftover today..nice

Dinner...fancied ribs so had got half ribs from tesco 15g carbs
seemed i wasn't too hungry so that sufficed for the evening.

Wed.
B skipped, apart from some nuts and a cuppa before heading out
cooked bacon joint tuesday night and cabbage, intended for lunch today.
very tasty...(starting to think old school..cold cut isn't something i've really had over the last 20 odd years,
yet was always on the table/fridge growing up..find it really easy AND enjoyable.)

Dinner. cooked curry meant for half tomight half tomorrow, skipped tonight's had some olives. cheese, ryvita x2 and nuts
appetite diminished last few days.

Side note:
have decided the double cream/coffee route isn't for me.
Not my fav drink and while i enjoyed the sweetness of the cream, i don't think i felt 'right' in myself having drunk it..if that makes sense.
So i'll probably stick with the teas,
and now the cold meats are making good sense to me, that and an assortment of veg, will pad out most of the weeks meals/snacks..a few treat types cooked up and my meal plan is done.

i find skipping breakfast to be do-able when out early, tend to get to 11am before hunger/roughness kicks in then i have to eat.
but on days where i am out later, the poached eggs/full breakfast OR greek yoghurt + fruit sorts that meal out nicely.

love the sound of so many of your dinners, but if i'm honest even if i could cook like you guys, it would only be the odd occasion most weeks.
Food was a love affair, now i just see it as nice but it's main purpose is to get me to the next fuel stop..

( just needed to say that out loud, for some perfectly obscure reason. :rolleyes:)

and yes, i'm still be posting ...AND stealing your food ideas..:D:)

I made too much icing, do you more experienced low carb bakers think it’ll keep ok in the freezer. Ingredients are high % chocolate, double cream, unsalted butter, cocoa powder and vanilla Stevia drops, I made it up from a combination of recipes and ingredients I had in the cupboard!
Can’t lie, these actually made me drool just a little! What perfect looking cakes!!!
 
@Rachox those cakes look amazing.

Hunger continued today so gave in and ate 3 meals.

Breakfast - had arrived at meeting and decided I wouldn’t last or was in danger of biting someone’s head off (difficult colleague in attendance) so M&S to the rescue with Serrano ham and manchego cheese rollitos.

Lunch was smoked salmon and some of the delicious whipped creamy cheese, a hard boiled egg and a bag of M&S pork crackling.

Dinner was a brined chicken thigh and a brined chicken drumstick.

Probably too much protein but has filled me up nicely before my double Pilates session later on.
 
@jjraak sweet memories! Thanks for giving us that. I actually had thought you meant food stayed out on the table all day, so I’m relieved!
@Rachox I’m not experienced, but those fatty ingredients look like it might be ok to freeze the icing. Thaw well (heat I guess if it’s a cooked recipe) and then beat like crazy to get the lumps out of the cream? I don’t know what double cream actually is: maybe it won’t separate on freezing? My regular buttercream frosting freezes excellently (butter, xxx sugar, milk, vanilla extract)

Need that recipe @Rachox x hope you made notes as you went along! I’m trying an adapted lclemon drizzle for a friend’s birthday tomorrow his fave cake but he’s pre diabetic have made some good ones but going to tweak and try out a few things!

Breakfast: Tea - 2 mugs with inulin - both 1.5 pints: Brunch: Lemon and ginger tea; 2 eggs on a bed of wilted spinach, avocado and chorizo piglets in blankets; ( was a regular breakfast for a long time with chorizo not piglets- then “discovered” IF - hmm) tea (6 pints by now) - Naproxen makes one V hungry innit Lunch: Chicken mayo sandwich - Schneiderbrot protein bread (more fibre); Afternoon: Cocoa with tsp of inulin - yes that’s 3 for the day Evening meal: Adapted version of Paleo Cassoulet - ignored the topping and bacon https://www.marksdailyapple.com/primal-cassoulet/ prepped in IP on Tuesday. Mark that down as another LC attempt best avoided.
Lat oblique wrecked left hand side - couldn't put my own socks on:arghh::arghh: Spent Jan fixing right hand side of my body and doing the supposed good stuff - walking and swimming - and this is how it ends up. Sat all day watching Little Drummer Girl.

They look great. No idea if they will freeze - give it a whirl.

Bread recipe would be really appreciated - bread is one of those things people keep chasing ie the elusive enjoyable low carb bread!

Breakfast:Homemade granola, hi lo toast and butter
Lunch: Tarragon mushrooms on sourdough toast. 85% mini bar of Mosser Roth.
Dinner: Roast chicken, roasted carrots, celeriac, sweet potato and sprouts and peas. Homemade gravy.
Snacks: tbc!

Booked holiday so already planning snacks for airport!

Still catching up on posts so bear with!
 
Hi all - played truant today! Had Pilates and jobs on today’s list but sun was shining and life’s for living so we made last min decision to get out for the day. Went to nearby favourite market town of Bridgnorth and had excellent day. Including finding a brand new pair of trousers originally from m and s per una in a charity shop in my size for a few quid - I do love a bargain!
No breakfast - still full from party yesterday evening
Lunch at fave fish place - platter of fish. Salmon, trout, crab and prawns with samphire and mayonnaise
Dinner pork saltimboca with mushroom sauce and celeriac mash with small glass red wine followed by lc raspberry mousse.
Hope everyone had a good day and managed to get at least a bit of the sunshine it was very cold but gorgeous
 
Evening all
Nothing to report today other than 3 cups of coffee, a handful of peanuts and a chunk of cheese. Feel a little out of sorts for no real reason. Perhaps the mid January blues have hit but I’ve got zero appetite and refuse to eat for the sake of eating.
@zauberflote - yes venison in the local supermarket for me, both as steaks and sausages and I’m sure I’ve seen venison meatballs in there before too

Our Double Cream is what you call Heavy Cream or similar to whipping cream. Ours is a bit thicker than your whipping cream and you have to be careful with it as it is easy to over whip (especially with my beast of a Kenwood). I have an American DIL
