What have you eaten today? (Low carb forum)

Fourth and last day of green beans, other veggies and mushrooms with marinated pork belly strip pieces and spicy peanut sauce.
Day 4 means I'm quite bored with the dish (not to mention the veggies have lost all their bite, despite still tasting good), but it also means very little meat left because, well, just because. Happens every time. :banghead:
Thought to fry an egg to go with it but I dropped it in the sink. Double :banghead::banghead:.

Still tasted good though, and I had it with extra peanut sauce :).

Looking foraward to something else to eat tomorrow!

Has anyone noticed plums don't seem to raise you as much as you'd expect?
Months ago I did a little experiment with dried plums because someone on a non diabetes related facebook group insisted they wouldn't raise bg as much as you'd expect going by the carbs.
I was determined to prove my point with the help of my Libre sensor, but I couldn't, because while I did spike a little (didn't take any insulin for them!), to my bafflement, it wasn't nearly enough to prove my point.

I had decided it was just one of those odd things where I probably would have coincidentally dropped if I hadn't had the dried plums and forgot about it.
But today I hade a couple of fresh plums and the same thing happened!

Are plums a secret diabetes friendly food, is it just me, or was it a coincidence where I again accidentally ate them when I was about to drop anyway?
 
Two hard boiled eggs, low carb toast and vegimite for breakfast.
Small tub of Chobani greek yoghurt for smoko, glass of lime / lemon cordial with a large scoop of Osmolax in it for smoko.
Cocktail prawns and lettuce in low carb wraps for lunch.
Mild beef curry and veggies, sugar free orange jelly and a small amount of two fruits for dinner.

Right off the wagon today! Another bad night meant I was lethargic and unwilling to get going at 7 am, which I needed to do to get ready for my cleaner arriving at 10 am. So, it was all a bit of a rush and I ended up just grabbing a couple of slices of toast for breakfast. BG was about the same as it has been recently in the mornings though. Then my cleaner didn't come until 12.15. She had discovered a major disaster in her kitchen and had to sort it out urgently. She discovered that the floorboards were not just the damp that she had thought, but pretty well afloat - sub-floor full of water.

2nd meal was just lamb cutlets and I didn't bother with any vegetables, but then the slightly fatty lamb upset my stomach a bit and I needed to have some crisps to settle it. BG now is 8.0. Could be worse.
 
1 slice of middle bacon, one egg and cheese omelette, slice of low carb toast and vegimite for breakfast.
A BC choc mint crunch protein bar, a scoop of OsmoLax mixed into a glass of lemon / lime cordial.
Finished the last of the cocktail prawns and salad low carb wraps for lunch.
Corned beef hash, veggies including a half of a spudlite lower carb potato for dinner.

Saturday bed 6 1 FBG 6

Had the boys for a few hours this morning as son was working and DIL received requests for emergency appointments in her clinic. Did all my shopping yesterday so at least I get the afternoon to myself.

B. TAG and 2 slices of SLC toast with coronation chicken.
L. Nothing
D. Prawn salad with lettuce, tomato, boiled egg, 1/2 avocado and a bit cheese. Grenade Ice cream bar and later a DGF Cookie (got a crunchy one this time). They're not as crunchy as say digestive but they are pretty good.
 
Missed a couple of days reporting as suddenly hit with major migraine yesterday. Had not been feeling 'right' for a few days but this was a surprise.
Ended up with a chicken drumstick and some nuts and a cup of tea at 11pm last night
Not much sleep but fbg of about 6.
Brunch was a chicken drumstick and some edam cheese crisps.
Later a frozen yoghurt lolly found lurking at the back of the freezer.

Major freezer clear out this week so expect the unexpected.

D: roast stuffed goose with courgette ratatouille and steamed cabbage. Blackberry crumble made with ground almonds and linseeds, only 5 g sweetener between 4 portions. I had mine with ff greek, boy had cream, hubby had custard.

Sunday bed 6 3 FBG 6 2.

B. TAG and 2 slices of SLC toast with ox tongue and coleslaw.
L. Nothing.
D. Usual campari and soda. I made a chicken cacciatore which hubby had with linguine and I had courgetti with. Pretty much this recipe except I cooked it in a slow oven in my le creuset casserole with a greaseproof circle under the lid.

Later a DGF brookie and another DGF biscuit. Definitely prefer the crisper biscuit. Not a good day - Swimming lesson day . Eldest developed a nervous turn and refused to go in and youngest got his hands on the treats bag and stuffed his face with them then went into very, very cheek mode when I took them away. He'll have absolutely no treats this week now.
 
Instant ramen noodle soup without the noodles.
And with a few extra things added, like broccoli, a fried onion, bell pepper and fresh garlic, a lot of snow peas, surimi and fried shrimps.
Very tasty, and as a bonus all my sinuses are as clear as can be now!

Basically I just added the small sachets of flavour of two different brands of instant ramen to my veggies and protein, but it still felt like I wasn't cooking because I 'just added some things' to a ready meal.
I feel being able to fool yourself like this so you don't have to cook is a wonderful trick!

edit: Why is it only now when I see the picture again because I got an alert for a like (thanks, @Riva_Roxaban ) that I see the obvious white dog hair in my bowl?
Yes, I know with two dogs and two cats, and a strong aversion to the vacuum cleaner, I must be eating pet hairs all the time. But this doesn't mean I want to SEE it!

Mid morning: black coffee and Atkins bar.
Skipped lunch.
Mid afternoon: chocolate chia pudding and black coffee.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!
 
Surely 2 should have been allowed after all you've been through this week?!
No, at around 8g carbs per Jaffa I wouldn’t push it to two! My appetite isn’t brilliant in any case.

Chicken and salad low carb wrap for lunch.
Steak and veggies, gravy for dinner.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and Fibre One caramel protein bar.
Skipped lunch.
Mid afternoon: black coffee and coffee chia pudding.
Dinner: meatballs in tomato and mascarpone sauce with brocolli, cauliflower and a few carrots followed by SF jelly, cream and LC nutty granola.
Hi, I am missing hot oatmeal/cereal breakfasts since diagnosed prediabetic. Could you please give me your coconut "porridge" recipe you have every morning? It's amazing that you are not hungry by lunchtime. I am starving all the time and I have no discipline when it comes to portion control. I am so scared and anxious for the day they tell me that I am T1 diabetic! I thought I was eating healthy my entire life, I always avoided sweet and desserts, (mother is T1 diabetic and growing up seeing needles and all she has gone through because of it traumatized me). It turns out the "healthy" carbs I used to eat were poison...lots of beans, pulses, sweet potatoes, quinoa, brown rice, gluten-free breads and pasta, and lots and lots of various fruits, greek yogurt... I miss all that and I feel so depressed that I can't eat the foods that I love any longer. Also, I'm alone, so even more scared than ever for what's about to come.

Breakfast: More curried egg - left over from yesterday. Actually, not a proper curry, more a load of vegetables, sliced in the food processor and cooked with some chicken stock (made from shop bought stock pot) with some spices added and some hard boiled eggs added. Kind of like Anje kind of recipe. It's OK but nothing special. Lots left - it was one of those weekend fridge clearouts. Soup for tomorrow, maybe.

2nd meal: will be pork belly slices with our first crop of rhubarb - just a few stalks from this first crop.
