What have you eaten today? (Low carb forum)

Skipped any breakfast
L: 2 slices cheese on hilo bread, 1 sour gherkin pickle. 2 sqs cherry choc.
That took me to just over 9, but from a start of 8. My baseline seems to be running high. Even overnight was 6
Mid afternoon 2 dates. From 7.8 to 8.7, should have been more I'd ve have thought.
D: 2 97% sausages with onion gravy, boiled kale and celeriac mash. Boys had potato mash. 1 piece h/m lc gingerbread with 1 small scoop icecream. 1 glass red.
Bg dropping slowly ever since
I do wish my body had read the diabetes manuals and would stop disobeying the rules :(
 
Not so much cheese snacking going on today, gradually getting a routine back. I’m going to start the new DietDoctor reset 2 meal plan on Monday to give me some focus.

B- h/b egg, ham cheddar 2 cherry toms. Lots of black coffee.

DIL is working all day today so Em is here all day. She arrived about 11.45 and promptly started looking for food! So she's just had an extra breakfast of bacon with ketchup followed by a Tuii mango ice cream. I daresay I shall have to sacrifice my new pack of smoked salmon for her lunch. She'll be happy with some kind of salad for her 3rd meal, especially if I let her make it herself. So her meals are sorted. I notice that she doesn't actually eat much in the way of carb heavy foods - other than sugar, of course. If we can break her of that habit it will be all to the good.

For my 2nd meal I'll have some more of the meatballs in tomato sauce - 2 more boxes of that in the freezer.

Having eaten only once (and fairly early on) yesterday, had a breakfast of 2 home made burgers (just 25% mince and salt), smoked streaky bacon, an egg and a few fried onions, with Hunter + Gather mayo on the side. Followed up with some Fage 0% and a few raspberries.

Dinner was bone-in sirloin - found a suitably fatty piece at Waitrose. More Fage and raspberries as dessert.

In between I completed a challenge I’d been set to try liver in the guise of pate, with some other strong flavours (garlic, thyme, rosemary, onion, smoked bacon) designed to ‘hide’ the liver taste. Used lambs liver and while I didn’t hate it, it’s not going to become a regular feature. Ate a few spoonfuls and left it at that!

Steak looks perfect. I like liver pâté but I prefer shop bought. I’m put off it by the making of it somehow. I have learned to love chicken liver fried quickly in butter though.

It was easier than I thought it would be to make. None of my dabblings with liver have persuaded me to like it!
 
Skipped breakfast
Working in a very cold room (we've been without heating since Xmas eve) but facing up to all the emails I didn't reply too over Christmas, a mix of righteousness and frustration led to 2 part lunch
L: part 1 home cooked cold ham and 1 sour pickles
L part 2 90 minutes later a vanilla mug cake, lc trying out a new recipe. Somehow a milk chocolate coin broke and fell into it... was warming and very tasty though. A hot chocolate drink to wash it down
D: hubby (learner cook) wanted to do a special meal from his new Portugese cook book so a casserole of chicken marinated 24 hours in:
Butter
Olive oil 100ml
White wine 100ml
Port 100ml
Brandy 100ml
Bacon
Onions and various spices and flavourings
Proved very rich and filling after a starter of prawn cocktail
2 large white wines so far... don't think I'm finished yet
All in all have eaten far too much Today.

Just as well its a New Year tomorrow. Wishing all the regulars on here a good and healthy one. You've helped me survive 2021 more than you know.

Try to catch up before the year end. I'm a bit hampered by healing fingers on my left hand (see parallel thread) and the App kicking me out every so often and losing anything I’ve typed up. Back on word to copy and paste.
Thursday 23 December – Bed 6.8 FBG 6 2
B. TAG out early to try to get last bits and bobs and visit SIL.
L. Nothing – still out
D. Ended up eating more of the lamb from yesterday?? Cold with a few tomatoes followed by DGF vegan brownie, raspberries and brandy cream
Friday 24 December – Bed 5.9 FBG 6
B. TAG – Early trip to butcher to collect meat order.
L. 2 slices of SLC toast with egg mayo.
Bit of DGF shortbread.
D. Reached the point of lots of food but nothing to eat! Ended up with a coronation chicken sandwich. Also a vodka and diet coke.
Dil tested +ve for covid. Son and grandsons OK.
Whole day was lots of cooking and prep.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: coffee shop coconut cappuccino and a gingerbread Carb Killa bar.
Skipped lunch.
Mid afternoon: black coffee and a DGF chocolate chip cookie.
Dinner: Low Carb Food Company sausage roll with coleslaw, leafy salad and some mixed nuts followed by a LC trifle made from DGF crimbo crumble, a chopped strawberry, SF strawberry jelly and extra thick double cream
 
Saturday 25 December – Bed 6.4 FBG 5.9
Been confused all week thinking Sunday is Christmas Day. Fortunately, realised in time it is today. Turkey was brining overnight and up early to get it out of its bath and into the oven. Son and grandsons still OK but DIL is going to. Bed.
B. TAG and a slice of SLC toast with egg mayo.
L. Nothing – cooking!
D. A very LC Christmas dinner. Usual campari and soda. To start I made vegetable tempura (there's a keto tempura batter on my CMT). I made chicken sesame toasts with SLC bread for me: crustless bread for the others. Ribs, minced up prawns with soy, chilli, rice wine cooked in a small piece of filo; full prawns done in my sesame crumb and I made my own dips. The sweet chilli was seriously hot! That’s on my CMT too. Main – turkey, 2 stuffings – GF Sage and onion & and pork sausage neat with onion, parsley, seasoning, egg and parmesan. Loads of GF chipolatas, celeriac dauphinois, roasts for others, sprouts stir fried with shallots, pancetta and pinenuts, wilted spinach. Made my own cranberry sauce and gravy too.
Made the boys a marshmallow cheesecake with bubble-gum ice cream (bought). We all had cheese and I had it with these M^S crackers that are LC. Coffee and home made LC Baileys.
Grandson wilted then he went down with covid.
Sunday 26 December – Bed 5.8 FBG 5.7. Told you it was LC!
B. TAG
L. 2 slices of SLC toast with egg mayo.
D. Prepared food to take to son’s but best laid plans. Story on the parallel thread. Ended up dealing with not very well grandson and calming DIL with bleeding fingers when my carving knife slipped! Ended up eating cold chipolatas and later a gin and lemonade plus a DGF Christmas pie with cream. Cleaned up fingers and redressed with gauze and tape.
Not the day I anticipated!
 
Two slices middle bacon, three egg and cheese omelette, small tin of naked beans for breakfast.
Chicken pie without the lid, lemon cordial and osomolax mix for smoko.
Corned flat brisket, green veggies, mustard sauce for lunch.
Cold leftover brisket and salad wrap for supper at six.

Hope you all have a better new year than the last two have been, I certainly need good news happening than all the doom n gloom happening in the world.

Yay! it's raining on NYD. :D
 
Monday 27 December – Bed 6.1 FBG 5 7
Out and about getting medication and throat sweets plus butterfly tape for my index finger. Banged it a couple of times while out which started it bleeding again! Glad to say DIL much better and grandsons fever broke and he's up and about again.
B. TAG and a slice of SLC toast with egg mayo.
L. Nothing
D. Finally got the repeat turkey dinner followed by a vodka and diet coke. Indulged in 1 Quality Street – coconut horribly sweet.
Did a repair job on index finger with savlon, butterfly tape and a breathable plaster.
Tuesday 28 December – Bed 6.9 FBG 6.8
B. TAG then out and about with son.
L. Coconut milk and a but of DGF shortbread.
D. Couple of toasties with SLC bread – one with cheese and tomato the other with chicken and avocado. LC Baileys.
Wednesday 29 December – Bed 6.8 FBG 6.7
B. TAG and 2 slices of SLC toast with Philly.
L. Cooked more chipolatas and continued to eat them cold!
D. Courgetti carbonara.

Thursday 30 December – Bed 6.7 FBG 6 5
Took son shopping. Covid lasted 3 days in DIL, 1 day in grandson.
B. TAG and a slice of SLC toast with pate.
L. Coconut milk
D. Had a lobster we got in M&S Halved it with Hubby then had 3 M&S crackers with port salou. wensleydale and cranberry, goats cheese. DGF Christmas pie with cream.
Friday 31 December – Bed 6 FBG 6.6
Got a lovely pot of lentil soup made. Hubby added more lentils and burnt it!! Will have to be made again tomorrow now as I had to go back out in search of another ham joint and more lentils.
B. TAG and 2 slices of SLC toast and Philly.
L. Nothing.
D slow cooked chicken leg with red wine, mushroom and ham sauce. DGF Christmas pie, raspberries, strawberry and cream.
Currently on a vodka and diet coke with a selection of normal nuts! Happy New Year everyone!
PS My finger has knitted together again too.

Today so far :-
B. Full fat yogurt with crushed nuts
Dinner. Minced meat stir fry with courgette, red cabbage and broccoli
Don't seem to get hungry afterwards if I have an early dinner. If I am hungry later on I will just have salad but I try not to eat after 7 pm as if I do I spike :shifty:
